The main difference is that it uses rice flour instead of wheat flour, making it safe for a gluten-free diet.
    • Flourless Chocolate Kahlua Cake
    • Gluten-Free Traditional Carrot Cake - This is a gluten-free carrot cake recipe based on the classic, so contains common allergens like dairy, eggs, and nuts. People with dietary restrictions may substituting ingredients, as needed. For instance, you can replace eggs with applesauce, omit nuts if you're allergic, and use dairy-free cream cheese instead of regular cream cheese. When making these substitutions, it's important to adjust the ratios accordingly.  For example, know the equivalent amount of applesauce needed to replace four eggs. The exact quantities might vary based on your taste preferences. If this recipe suits your diet, go ahead and enjoy!

    • Twinkie Cake/Strawberry Twinkie Torte - One yellow cake mix (or use 2 cake mixes to make a 15 x 10 pan full). Mix and bake according to directions. Remove from oven and cool. Split cake horizontally with cake cutter or use a piece of thread wrapped around your fingers and pulled down the middle of the cake horizontally. Remove top half of cake and spread filling on bottom half of cake. Replace top half of cake and sprinkle with powdered sugar.

    Celiac.com 12/28/2020 - This cake started with a boxed gluten-free carrot cake, no dairy and non-GMO.  There are several gluten-free carrot cake mixes on the market, and this was made using a 20 oz. box of XO Baking Co. Gluten Free Carrot Gourmet Cake Mix (the entire box in other words).
    The larger of the two cakes is almost too much for the two of us and our adult children (our grand-children hate Christmas Cake). Being from a British background I was raised on Christmas cake!
