    Meat Loaf #3 (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    1 lb. Lean ground beef
    1 medium onion, diced
    1 cup gluten free bread crumbs
    1 egg
    ½ cups Heinz catsup
    1 tablespoon Worcestershire Sauce
    1 teaspoons salt

    Mix all ingredients together. Put in loaf pan. Ketchup may be drizzled over the top. Bake at 350º 45 minutes to 1 hour.

In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014.     Gluten-free and low-fat chicken pot pie filling
    1 cup diced carrots
    1 cup frozen peas
    2 cans (14.5 oz) chicken broth
    2 cans (10 oz) valley fresh white meat chicken
    1 cup fat free milk
    6 tbsp corn starch

    Rice Pie Crust:
    1 ¼ cup rice flour
    1 teaspoons xanthan gum
    ¼ cup Crisco
    ¼ cup white karo syrup
    4 tbsp cold water topping
    3 medium potatoes
    1 egg white
    Preheat oven to 450 degrees. Peel cube and boil potatoes until consistency to mash. Cool in freezer, mash using egg white instead of liquid.     Ingredients:
    ½ pound softened butter
    8 ounce softened cream cheese
    2 tablespoons vanilla extract
    5 tablespoons sweetened condensed milk
    3.5 ounce can Baker’s coconut
    2 pounds 10x sugar
    Cinnamon
    Directions (By Hand):
    Mix butter and cream cheese
    Gradually add in vanilla - mix well
    Gradually add in condensed milk - mix well
    Gradually add in sifted 10x sugar - mix well
    Mix in the coconut
    Scoop out by teaspoonfuls and plop on a cookie sheet
    Cover with waxed paper and
    Chill in the refrigerator for 15 minutes
    Roll into balls
    Roll in cinnamon
    Store in the refrigerator

    Brussels Sprout Salad with Pine Nuts (Gluten-Free)
    I love Brussels sprouts! I may be the minority....but if you love Brussels sprouts as much as I do, then you will likely love this recipe too. This is a very easy recipe and it can be eaten as a meal or served as a side dish, served warm or cold.
    Serving Size:  4  (as a side) or 2 (as an entree)
    Ingredients:

    1 lb. Brussels sprouts, halved or quartered, depending on size 1 cup chopped kale (optional) ½ - ¾ Cup Pine nuts (raw or lightly roasted) 2 gloves garlic, crushed 1 tbs. olive oil or grapeseed oil

    Celiac.com 09/30/2014 - Pork tenderloin is a versatile favorite. This recipe for marinated pork tenderloin makes a tasty, grilled version that is gluten-free and ready to please.
    Ingredients:
    2 (¾ pound) pork tenderloins ¼ cup balsamic vinegar ¼ cup gluten-free soy sauce ¼ cup packed brown sugar 1½ teaspoons onion powder 1 teaspoon ground cinnamon ½ teaspoon garlic powder ¼ teaspoon black pepper 2 tablespoons olive oil Place soy sauce, brown sugar, sherry, dried onion, cinnamon, garlic powder, black pepper and olive oil in a large resealable plastic bag. Seal, and shake to mix.
