    Meat Loaf #4 (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    This recipe comes to us from Jerry Nagy.

    1 lb. meatloaf mix (or, 1/3 lb ground pork, 1/3 lb ground veal, 1/3 pound ground beef - you can also use all ground beef)
    ½ cup prepared horseradish
    ½ - ¾ cup gluten free fresh breadcrumbs (not dried)
    1 egg, beaten
    1 medium onion, diced
    ¼ cup water
    1/3 cup chopped Italian parsley

    Mix all ingredients; shape into a loaf form, put on cookie sheet with sides

    Top with the following:
    ½ cup gluten-free chili sauce (Heinz)
    3 tablespoons Heinz ketchup
    2 tablespoons Worcestershire Sauce
    10 drops gluten-free Hot sauce (optional)

    Bake at 350 for 45 minutes. Serve with twice baked potatoes with cheese and sour cream and baby glazed carrots.

    This recipes comes to us from Amber Lee.
    2 cups water
    2 tablespoons butter or margarine
    1 tablespoon chicken bouillon (or 3 cubes)
    ½ teaspoon onion powder
    ½ teaspoon salt
    dash of sage
    dash of thyme
    dash of pepper
    Heat ingredients in a saucepan. Whisk together 2T cornstarch + ¼ C cold water in a small bowl Add to cornstarch/water to saucepan. Boil 1 minute to thicken. Makes 2 cups.

    2 pounds ground chuck
    1 large egg
    1 package Lipton onion soup mix
    2/3 cup gluten-free ketchup
    ½ cup grated Parmesan cheese
    ½ teaspoon pepper
    ½ teaspoon garlic powder
    Mix everything in a large bowl, shape into a loaf. Place on greased baking foil inside a 9 x13 pan. Spread about 2 T. more ketchup on top, if desired, as well as another little sprinkle of garlic powder. Tent more foil loosely over top. Bake at 350 for 40 minutes. Remove foil tent and bake another 15 minutes. Remove from oven and allow to sit for 10 minutes before slicing.
    I am able to find gluten-free ketchup at my local health food store. I have also used crushed gluten-free corn flakes in place of the parmesan, but I think the loaf holds together better with the cheese.

    Veal Sauce with Rice Pasta (Gluten-Free)
    Veal Sauce with Rice Pasta is a fast easy meal for those nightswhen you have no idea what to make and don't have much time.
    Ingredients
    One pound of ground Veal
    One pound of rice pasta  I prefer Penne for this dish
    One Elephant Garlic
    One Sweet Onion
    One can of Crushed diced tomatoes
    One tablespoon of Olive Oil
    Directions
    While the water is beginning to boil for pasta. In a large pan with lid put the one tablespoon of olive oil on a medium flame.  Begin to dice the elephant garlic and sweet onion and then put in the pan to saute, within several minutes  you should begin to smell the garlic and onion cooking, then put all the ground veal in the pan to cook.  After a few minutes check on the veal, you want it brown not burnt, once you have turned it over  begin mixi...
