    Ricotta & Pesto Meat Loaf (Gluten-Free)

    Preheat oven 375F.

    Ingredients:
    1 package ground turkey
    1 cup ricotta (part skim or whole ricotta works best)
    ½ - ¾ cup Basil Pesto
    1 Egg (beaten)
    1-2 cups of your favorite tomato pasta sauce (unused sauce to put on sliced meatloaf)

    Directions:
    Knead first 3 ingredients together and then mix in egg. Press into greased loaf pan. Spoon on several tablespoons of tomato sauce on top of meatloaf and bake uncovered for 1 hour 10 minutes.

    This recipe comes to us from Valerie Wells. I dont define exact amounts of the ingredient because it will vary with the size of your crock pot how much you want to prepare. I made this in two crock pots last evening for a crowd. Everyone liked it and went for seconds. It makes a nice presentation with the colorful spices on the chicken. The gravy that forms is nice and light. If youre one who cant tolerate tapioca, then you will need to mix corn starch or another thickener with the broth before pouring it over the potatoes.

    2 tablespoons tapioca pearls (or other thickener of you choice)
    ½ to 1 cup chicken broth

    Tuna Noodle Casserole (Gluten-Free)
    Like any casserole, this one is flexible. I've given you a good guideline for correct proportions, but add more or less salmon or tuna; more or less pasta; more or less peas – you get the picture. It will work and be delicious, regardless.
    Lately I've been using canned salmon instead of tuna in this traditional recipe – Costco even carries wild Alaskan Sockeye Salmon (boneless) in the can, which boasts 410mg Omega 3s per serving! So this casserole is not only delicious, but it's a deliciously healthy one-dish meal the whole family will enjoy! Obviously, if you have leftover grilled salmon from the night before, it goes without saying (though I'll say it anyway, just in case!) that re-purposing those leftovers in this casserole would be the very best option!

    Celiac.com 09/26/2013 - London broil is a great way to enjoy a low-calorie, low-fat, high-protein dinner. This version employs a dry rub and delivers a London broil cooked to perfection and ready for slicing and dining.
    Ingredients:
    1 London broil (about 2 pounds) 2 tablespoons olive oil 2 tablespoons chili powder 1 tablespoon dried oregano 1 tablespoon dried thyme 1 tablespoon paprika 2 teaspoons garlic powder 2 teaspoons onion powder 2 teaspoons salt 2 teaspoons black pepper Directions:
