    Scott Adams

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

Celiac Shoppers Fight Against ’Poisonous' Store Placement of Gluten-free Flours
Celiac.com 12/25/2018 - Recently, a bit of a dustup kicked off in New Zealand, literally, over what celiac shoppers see as the placement of gluten-free flours beside or beneath standard wheat flours that are not gluten-free. The news website Newshub recently ran a photo of shelves at Ponsonby Countdown that showed gluten-free flour beside the regular flour.
"That's bad, because flour puffs everywhere, contaminating everything near it," one shopper told Newshub, asking to remain anonymous. A Countdown spokesperson told Newshub on Tuesday the store will be reviewing the placement of gluten-free flour.
In all fairness, with store shelf space a scarce commodity, stores have a tough job. In general, customers overwhelmingly like similar products placed close together. So, the ...

Exploring the Impact of Herbs and Spices on Gut Health
Celiac.com 04/08/2024 - Recent research suggests that the addition of herbs and spices to one's diet may influence gut health positively. Scientists at the National University of Natural Medicine in Portland, Oregon, conducted a study to investigate the potential benefits of polyphenols, compounds found in certain plant-based foods, on gut microbiota.
Polyphenols act as antioxidants in the body and help protect against various diseases. These compounds are abundant in foods, herbs, and spices and have garnered attention for their potential to improve gut health.
The study, published in the journal Nutrients, analyzed data from the International Cohort on Lifestyle Determinants of Health (INCLD Health) to explore the relationship between polyphenol intake and gut microbiota ...

    Moroccan Spiced Fish (Gluten-Free Hout)
Celiac.com 12/06/2024 - Moroccan spiced fish, or hout in Moroccan Arabic, has a rich history shaped by Morocco’s geographic proximity to both the Atlantic Ocean and the Mediterranean Sea. This popular dish reflects the country's deep culinary tradition, with influences from Berber, Arab, and Andalusian cultures. Often prepared with whole fish or fillets, hout is marinated in a vibrant blend of spices like cumin, paprika, coriander, and turmeric, which enhance the fresh flavor of the fish. Traditionally, this dish is served with flatbread or over couscous, but for a gluten-free twist, it pairs beautifully with rice, quinoa, or roasted vegetables.
This gluten-free Moroccan spiced fish recipe combines traditional spices with a refreshing touch of lemon and herbs, making it a wonderful c...

Japanese Curry: A Comforting Gluten-Free Twist
Celiac.com 01/11/2025 - Japanese curry, or "kare," is a beloved dish that has become a staple in Japanese households and restaurants. Its origins trace back to the late 19th century when the British Navy introduced curry powder to Japan. Over time, the dish evolved, blending Indian-inspired spices with a uniquely Japanese taste profile. Unlike its spicier Indian counterpart, Japanese curry is milder, slightly sweet, and has a thick, stew-like consistency. It’s often served with rice and a variety of proteins and vegetables, making it a hearty and versatile comfort food.
For those who follow a gluten-free diet, enjoying Japanese curry can be a challenge due to the traditional roux, which contains wheat flour. This recipe recreates the iconic flavors of Japanese curry with a homemade g...
