    Savory Quinoa Muffins (Gluten-Free)

    These savory muffins make the perfect dessert, or just have them for a snack!

    Gluten-Free, Dairy-Free and Vegetarian

    Ingredients:

    • 1 cup uncooked quinoa
    • 2 large eggs
    • 1 cup Vidalia onions, finely chopped
    • 1 cup dairy-free shredded mozzarella cheese
    • 3 garlic cloves, minced
    • 1/2 cup fresh cilantro, finely chopped
    • 1/3 cup grape tomatoes, diced
    • 1/2 tsp. sea salt
    • 1/2 tsp. freshly ground pepper
    • 1 tsp. chili powder
    • 2 chives, finely chopped, for garnish
    • 2 cups salsa, for serving

    Instructions:
    Cook quinoa according to package directions. Prepare muffin pan with nonstick baking spray.

    Preheat oven to 350 degrees F.

    In a large bowl, combine cooked quinoa with remaining ingredients, except chives and salsa; mix well to combine.

    Transfer quinoa mixture to prepared muffin pan. Using a tablespoon, fill each muffin cup to the top, then using a spatula, press down on the mixture to create a flat surface.

    Bake for 20 minutes or until golden brown. Remove from oven; set aside to cool for 15 minutes. Using a teaspoon, gently remove quinoa muffins from the muffin cups.

    Transfer to a serving platter; serve with a sprinkle of fresh chives and a side of salsa for dipping.

    I have a question:

     

    The directions state the following: "Transfer quinoa and rice mixture to prepared muffin pan".

     

    What rice? There is no rice listed in the ingredients.

    These quinoa muffins contain cheese, yet it is stated that they are 'Dairy-Free'. Am I missing something? I thought that cheese was a dairy product.

    No, they do make a soy cheese. I found it at Wal-Mart with the egg roll wrappers.

    These look good and I'm anxious to try them. Is this recipe for large muffins? (Just wondering what type of muffin pan I should use.)

    I've made these at least three times. They are great with chili, and we also have them as a grain with steamed vegetables and a soup. I usually add more diced tomatoes and also put a piece of sweet pepper on top.

    No, they do make a soy cheese. I found it at Wal-Mart with the egg roll wrappers.

    Soy products are extremely dangerous because of the estrogen effects, etc. The only way to eat soy safely is to ferment it: soy sauce. Dr. Weston Price was a leading authority on soy and other foods. Soy is especially dangerous to infants yet it is in all formulas.

    Sorry, but "mozzarella" means mozzarella. You cannot have dairy free "mozzarella". If it tastes like mozzarella and is not mozzarella, you are probably getting fake food. Read ingredients on packages.

    Daiya and other companies make dairy free mozzarella or you can make your own. Let your index finger do the Googling for you!

    2 teaspoon xanthan gum
    2 ½ teaspoon Baking powder

    Directions:
    Blend dry ingredients and nuts. Puree carrots and apricots and juice in blender or food processor (with orange peel). In small bowl, beat the eggs slightly.     Ingredients:
    3 medium ripe Banana's smashed or 9 ounces of pumpkin
    1/3 maple syrup
    1 teaspoon gluten-free vanilla (I use Frontier Alcohol-Free from Fair trade)
