    Spinach Pistachio Pesto (Gluten-Free) -

    This recipe can be served on top gluten-free crackers, or with crudites or as a spread atop toast.

    Serves 6

    Spinach Pistachio Pesto (Gluten-Free)Ingredients:

    • 2 Tbsp. olive oil
    • 1/4 cup white onion, sliced
    • 2 cloves garlic, sliced
    • 5 cups fresh spinach
    • 2 Tbsp. nutritional yeast
    • 3/4 cup pistachio nuts
    • 1/6 tsp. sea salt

    Directions

    1. In a large skillet, heat oil, onions and garlic, cook for 2-3 minutes or until onions caramelize.
    2. Add spinach; cook for another 3 minutes or until spinach is wilted.
    3. Transfer spinach mixture to a food processor; add remaining ingredients.
    4. Pulse until smooth.
    5. Transfer to a serving bowl.
    6. Serve atop gluten-free crackers, with crudites or as a spread atop toast.
    7. Enjoy.

    This excellent recipe comes to us from Jane B.
    Meatballs:
    4 lbs. lean ground beef
    1 cup water
    ½ cup gluten-free soy sauce
    Dash of garlic salt
    Mix together, shape into 1 inch balls and put in baking pan with balls touching. Bake approximately 30 minutes at 350F.
    Sauce:
    Brown a finely diced onion in a little olive oil and add:
    4 large cans of tomato sauce
    2-3 large cans of tomato paste (until thick)
    1 teaspoon Italian seasoning
    ½ teaspoon oregano
    ¼ teaspoon garlic powder (more if you like)
    5-6 shakes of garlic salt
    Simmer with meatballs for at least 3-4 hours. Serve on hot gluten-free submarine rolls with mozzarella cheese.

    Spaghetti with clams has long been a favorite, and during a summer trip to Italy's sunny Amalfi coast a few years back, I was lucky enough to enjoy a gluten-free version of this quick, cheap, easy Italian classic. I find the recipe works best with Schar brand gluten-free spaghetti, but feel free to substitute your favorite.
    Ingredients:
    1 pound dried Schar or other gluten-free spaghetti
    ½ cup extra-virgin olive oil
    2 shallots, thinly sliced
    5 or 6 cloves garlic, finely chopped
    2 pounds Manila clams, scrubbed clean
    ½ cup fresh Italian parsley, chopped
    10 to12 sweet cherry tomatoes
    ½ cup dry white wine
    2 tablespoons unsalted butter, diced into small cubes
    Sea salt and freshly ground black pepper
    ½ cup Parmesan or Romano cheese, grated
    Lemon, as garnish

Give me my favorite Schar pasta and whatever fresh veggies might be on hand, grab a splash of wine and throw in a dash of simple preparation and, violá, a smashing meal.
