    Springtime Sugar Snap Pea Salad (Gluten-Free)

    This easy sugar snap pea salad is a like a breath of fresh spring air.

    Celiac.com 04/13/2021 - If you're looking for a nutritious delicious salad that's perfect perfect for early spring, this sugar snap pea salad is the perfect way to celebrate spring. Serve it with your favorite grilled fish and lime wedges for a deliciously light, and nutritious spring meal. 

    Ingredients:

    • 12 ounces sugar snap peas (4 cups), washed, w/ strings removed
    • 1 tablespoon fresh lime juice
    • 1 teaspoon grated fresh ginger
    • 2 tablespoons olive oil
    • 1 tablespoon minced spearmint
    • kosher salt and black pepper
    • 1 small red onion, thinly sliced
    • 1 tablespoon sesame seeds, toasted (optional)

    Directions:

    This salad is delicious raw. To make it that way, skip the blanching.

    Sauté the snap peas and onion in a pan with a tablespoon of olive oil at medium-high heat for about 1 minute or so, until lightly blanched. Remove the pan from the heat, and pour peas and oil into a glass bowl, and chill in the refrigerator until cool. 

    When the peas and onions are cool, add lime juice, ginger, spearmint, and ¼ teaspoon each salt and pepper, along with sesame seeds, as desired, and toss lightly, until coated.

    Ingredients:
    4 boneless pork chops 1 pound medium Yukon Gold Potatoes 1 cup frozen peas 2 scallions 2 tablespoons butter 2 tablespoons gluten-free brown or Dijon mustard 1 tablespoon olive oil ¾ cup dry white wine kosher salt and pepper Directions:
    Place the potatoes in a medium saucepan with enough water to cover and bring to a boil.

    Asian-style Tuna Salad (Gluten-Free)
    I've been eating more protein and less carbs lately, so this was a perfect addition to my lunch routine. It also happens to be deliciously gluten-free.
    Ingredients:

    Are McDonald's Salads Gluten-Free?
    Celiac.com 10/30/2020 - We get more than a few questions about McDonald's, and one question we get a lot is about salads. That is, are McDonald's salads gluten-free and safe for people with celiac disease?
    Lettuce and vegetables are gluten-free, and most basic salad ingredients are gluten-free. However, as with so many food that start out gluten-free, the answer lies in the extras, including the dressings. Unless you add wheat or gluten ingredients like croutons, most salads are gluten-free. However, McDonald's salads can include numerous extra ingredients, so are they gluten-free and safe for people with celiac disease?
