    Tender Leeks with Basalmic Vinaigrette (Gluten-Free)

    Celiac.com 01/14/2016 - What to do with leeks besides make soup? This quick, easy recipe delivers tender, tasty leeks with a dash of oil and vinaigrette. It will turn heads and please hungry eaters at your next dinner.

    • 12 leeks, trimmed
    • ½ cup walnuts, toasted
    • ½ cup italian parsley, chopped
    • 1 tablespoon dijon mustard
    • 2 tablespoons balsamic vinegar
    • ¼ cup of walnut oil
    • ½ teaspoon salt
    • pepper to taste

    Directions:
    Cut the dark green tops and stem ends off the leeks, keeping the bases whole.

    Cut leeks in half lengthwise and rinse well.

    Boil leeks in salted water until tender, about 10 minutes.

    Drain and cool in a bowl of salted ice water, then drain and pat dry.

    Whisk dijon mustard, balsamic vinegar, salt, and pepper in a bowl.

    Whisk in walnut oil and drizzle over the leeks.

    Top with chopped toasted walnuts and chopped Italian parsley.

    1 can of artichoke hearts (9 oz.)
    2 tablespoons butter
    1 large Spanish onion (diced)
    1 10oz. bag fresh spinach- bite size pieces ( I use frozen, then thawed out chopped spinach, 2 boxes, we like spinach)
    1 cup dry white wine
    1 4.4 oz. boursin cheese
    4 oz. softened gluten-free cream cheese

    This is my absolute favorite way to prepare asparagus, and one that is sure to put a smile on the faces of your family or guests. The process is simple, and the result is totally delicious. Simply coat asparagus in olive oil, lemon juice, garlic, and salt and toss them, on a hot grill for a few minutes, and, violá, a side dish fit for a king!
    Ingredients:
    1 pound fresh asparagus spears, trimmed
    1 tablespoon olive oil
    1 clove garlic, minced
    1 teaspoon coarse kosher salt
    juice from 1/2 lemon
    Directions:
    Preheat grill to high heat.
    Wash and trim asparagus spears.
    Lightly coat asparagus spears with olive oil, lemon juice, garlic and salt. I do this in a compostable plastic bag that I can then discard, but a bowl or plate works okay, too.

    I find baby artichokes a little underrated; they’re easier to handle and usually cheaper. I tried these for the first time on the grill, but it’s just as easy to toss together and roast. I happened to have pistachios on hand the second time around and they turned out to be the secret star of this dish.
    Ingredients:
    9-10 baby artichokes, about 2 pounds
    1 broccoli head, cut into florets
    1 lemon, cut in half, plus 1 teaspoon zest
    ¼ cup shelled pistachio nuts
    2 cloves garlic, minced
    ¼ cup olive oil plus 1 teaspoon
    2 tablespoons balsamic vinegar
    ¼ cup parmesan cheese, freshly grated
    ½ teaspoon each salt and pepper

    Gorgonzola is a veined Italian blue cheese, made from unskimmed cow's and/or goat's milk.
    Contrary to popular belief, Gorgonzola, or blue cheese does NOT contain gluten. These days, blue cheese is no longer made with mold from stale bread as a starter, as it was once upon a time. The molds used to make commercial Gorgonzola and blue cheese are isolated for purity, and cultured in sterile conditions. They are gluten-free. That means that most people with celiac disease and gluten intolerance are free to eat most all blue cheeses.
    To celebrate that fact, I recently prepared a delicious beet salad with Gorgonzola, pear and arugula, which is one of my summer favorites. I just couldn't wait for summer to get started.
