    Tri-Tip Steak with Red Wine Sauce (Gluten-Free)

    Celiac.com 08/08/2017 - A simple red wine sauce helps cheaper cuts of beef go the distance and deliver the win. This recipe dresses up a tri-tip steak into a tasty, easy to make meal that you won’t soon forget.

    Ingredients:

    • 2 (1-pound) tri-tip steaks
    • Salt and freshly ground black pepper
    • 3 tablespoons extra-virgin olive oil, plus extra for garnish
    • 6 tablespoons cold unsalted butter
    • 1 onion, thinly sliced
    • 1 tablespoon minced garlic
    • 1 teaspoon dried oregano
    • ⅓ cup tomato paste
    • 2½ cups red wine

    Directions:
    Heat grill or barbecue to medium-high.

    Sprinkle the steaks with salt and pepper and drizzle with the 3 tablespoons of olive oil.

    Grill about 3-4 minutes per side for medium-rare.

    Transfer the steaks to a cutting board.

    Tent with foil and let rest 10 minutes.

    Meanwhile, melt 2 tablespoons of butter in a heavy large saucepan over medium-high heat.

    Add the onions and sauté until tender, about 5 minutes.

    Season with salt.

    Add the garlic and oregano and sauté until fragrant, about 30 seconds.

    Stir in the tomato paste and cook for 2 minutes, stirring constantly.

    Whisk in the wine.

    Simmer until the sauce reduces by half, stirring occasionally, about 10 minutes.

    Remove the skillet from the heat.

    Strain the sauce into a small bowl, pressing on the solids to extract as much liquid as possible.

    Discard the solids in the strainer and return the sauce to the saucepan and bring back to a slow simmer.

    Cut the remaining 4 tablespoons of butter into small chunks and whisk into the sauce little by little.

    Season the sauce with salt and pepper.

    Thinly slice the steaks across the grain.

    Divide the steak slices among 6 plates.

    Drizzle the sauce over the steak, drizzle a little more extra-virgin olive oil and serve.

    2 large Idaho potatoes, peeled and sliced 1/8-inch thick
    2 large sweet potatoes, peeled and sliced 1/8-inch thick
    1 ½ cup coconut or Darifree milk
    2 tablespoon arrowroot
    1 tablespoon salt
    1 tablespoon roast garlic puree (blend minced garlic with the milk)

    1 pinch nutmeg

    2 (or more) pounds lean stew meat
    1 roasted soup bone* for flavor
    1 can S & W Ready Cut diced tomatoes (or 4 diced fresh)
    4 large potatoes peeled and cubed
    4 carrots, peeled & sliced
    1 onion peeled & cubed
    2 ribs celery, sliced
    1 cup water
    Salt & pepper to taste
    2 cups frozen peas (or green beans), thawed
    Put all ingredients in crock pot except frozen peas. Cook on high (325F degrees) one hour, and then stir. Cook on low (225F) for 7 hours. You may want to stir it again half way through the cooking time. Add frozen peas & allow just enough time to heat through (5 or 10 minutes). Serve with gluten-free crackers or rolls. How easy is that?

    Load the following into a slow cooker in the following order:
    1 pound beef cut in strips (or beef for stir fry)
    1 tablespoon tapioca pearls (Bascoms small pearl is what I use)
    ½ cup water
    2 to 3 tablespoons Tamari gluten-free soy sauce [i use San J Wheat-Free brand]
    1 large white onion sliced
    1 green bell pepper sliced
    1 red bell pepper sliced
    1 yellow or orange bell pepper sliced
    Cook on low 8 hours or high for 4 hours. Serve over hot rice or brown rice pasta. [My mom used to make something similar to this. She added whole mushrooms. It was wonderful!]
