    A woman in the UK has launched a popular mobile gluten-free fish and chips eatery in response to her celiac disease diagnosis and gluten-free diet.

    Celiac.com 09/28/2019 - A woman in the UK has launched a popular mobile gluten-free fish and chips eatery in response to her celiac disease diagnosis and gluten-free diet.

    After surviving a bout with cancer, Adele Radford wanted nothing more than to return to her normal life and enjoy her favorite foods. Alas, that was not to be, as she found that her fight with cancer had left her with celiac disease, which meant a major change in her diet.

    “It’s a little known fact that if you have cancer, it can kick off an an intolerance to gluten,” said Adele who was diagnosed with thyroid cancer eight years ago.

    But Adele's set-back could be a big plus for people who love good food, since Adele's solution to the challenge was to buy a pink mobile food van, affectionately named Pinky, and start serving what she believes to be Britain’s first mobile, gluten-free fish and chips.

    Tired of avoiding places she wanted to eat, but couldn't, Adele started "Made Without Gluten" with her partner Paul, who also survived a cancer scare a few years ago.

    “I think we are the only fully gluten-free fish and chip van in the country and it’s really popular," says Paul. “People queue for up to three quarters of an hour. A handful of people will be celiacs but the rest just seem to like the food," he adds.

    So far, reviews have been positive, and Adele and Paul are attracting plenty of regular customers, both celiac and non-celiac alike, for their tasty, crunchy fish and chips. One reviewer wrote that the gluten-free "batter is not just crispier, it’s positively crunchy. You can actually hear the crunch as you bite into it and see the flakiness of the batter."

    Just had gluten free fish and chips with mashed peas in Belfast Ireland with a gluten free beer at Acton and Sons.  Fantastic gluten free menu.  Make reservations.

    English-style fish and chips are one of my all-time favorites. One of the dishes I've missed the most ever since going gluten-free. I've been discovering new uses for Rice Chex as a gluten-free breading, and this recipe for gluten-free fish and chips is one of the results. I hope you enjoy them as much as I do.
    Ingredients:
    1½ quarts vegetable oil, for frying
    2 pounds halibut or firm white fish, cut in  portions
    Salt and freshly ground black pepper
    ½ cup potato starch
    ½ cup tapioca flour
    1 cup rice flour
    2 cups crushed Rice Chex
    1 quart egg wash (equal parts whole eggs and milk, mixed well)
    6 lemons halves, for serving
    Directions:
    Heat the oil in to 375 degrees F. in a Dutch oven or deep frying pot.

    Gluten-free Fish Sticks Keep Britain's Oldest Dog Happy and Healthy
    Celiac.com 12/11/2014 - A pampered a Jack Russell terrier is being hailed as Britain’s oldest dog after reaching the ripe old age of 25 years, and gluten-free fish fingers are among the foods that keep her happy and healthy.
    The dog, called Meg, eats whatever she likes theses days, says owner David Abrahams, of Stoke St Michael, Somerset, and that includes roast dinners, gluten-free fish fingers and Peppa Pig-shaped spaghetti in tomato sauce.
    Of course, the pasta includes gluten, so Meg’s diet is not gluten-free, but Abrahams says, the “fish fingers and the Peppa Pig pasta have helped her along the way.”

    Celiac.com 02/16/2016 - Whether for a special treat for kids or as a special snack for grown-ups, these DIY fish sticks are baked for a more nutritious alternative to frying, and sure to please.
    Ingredients:
    1½ pounds fresh tilapia, or other firm white fish fillets 1 cup Rice Chex cereal, finely crushed 1 fresh egg 1 tablespoon olive oil 1 teaspoon paprika ¼ cup finely chopped fresh flat-leaf parsley ½ cup light mayonnaise 2 small dill pickles 2 teaspoon whole-grain mustard Lemon wedges Kosher salt and black pepper Directions:
    Heat the oven to 425 degrees F.
    Line a baking sheet with nonstick foil.
    In a shallow bowl, combine the crushed Rice Chex, oil, paprika, half the parsley, ½ teaspoon salt, and ¼ teaspoon black pepper.

    So, many people were likely surprised to see Lucy's suddenly double in size. And likely even more were surprised to see Lucy's offer a gluten-free version of their popular fish and chips, each prepared in separate areas.
    But Lucy's Chips stall is now under new management, which has driven both the expansion, and the introduction of a new menu to to broaden the appeal of their already popular staples.
