It is our pleasure to invite colleagues from academia, industry and regulatory authorities to the Second International Symposium on Gluten-free Cereal Products and Beverages, or GF10, to be held on June 8-11, in Tampere, Finland.
The prevalence of coeliac disease is increasing, with up to two percent of western populations being potential sufferers. The disease is triggered by gluten, but it is still not fully clear which cereal proteins are the harmful ones. It is a major technological challenge for food scientists to design alternative gluten-free products of high quality. Another challenge is the rapid and reliable analysis of gluten so that the safety of gluten-free products can be ensured. - These are some of the topics to be discussed in the symposium.
The Symposium follows the inaugural event held in Cork, Ireland, in 2007. The symposium is arranged in cooperation with the local Finnish Coeliac Society. An international fair on gluten-free products and services will be organised partly in parallel with the Symposium.
