Registered Dietitian to Address Gluten Free Discussion Group in Walnut Creek, CA
The Gluten Free Discussion Group (Walnut Creek, CA) focuses on topics of interest to people that are gluten intolerant, have been diagnoses with Celiac Disease or those interested in healthier eating alternatives.
Ms. Kathi Nicholswill be our speaker for the March 11th Gluten Free Discussion Group meeting.
Ms. Nicholshas a bachelor of science degree in Food, Nutrition and Dietetics from University of California (UCLA), a Masters of Sciences degree in Community Nutrition from the University of Manitoba , Canada and is a Registered Dietitian.
Please join us in multipurpose room number 1 at Gateway Complex in Rossmoor ( 1001 Golden Rain Road ) from 9:30 AM to 11:30 AM to hear Ms. Nicholsdiscuss issues and ideas about the use of vitamins (yes, no and maybe!), use of selected mineral supplements (sources do matter), personal energy levels (alternative carbohydrate strategies). She will also discuss special concerns for those with Celiac and gluten sensitivities (concomitant diseases that add challenges to diet and nutritional choices).
Ms. Nichols practice experience includes multiple settings, including, acute care, rehabilitation, skilled nursing, food service and youth services. Within all of these settings, she has had to use her training in medical nutrition therapy to accommodate for food allergies, sensitivities and other custom needs as they arise.
Ms. Nichols experience with Celiac. She was trained in therapies for celiac disease, gluten sensitivity and wheat allergies as part of her clinical education. However, she did not have to turn this information towards herself until being diagnosed with celiac disease in 2006. In retrospect, she believes that she has had the disease, undiagnosed, for over thirty years, based on symptoms. She strives to stay current in her education by taking all available continuing professional education courses relating to the celiac spectrum.
It is important to understand that a registered dietitian is a level of education far above the folks that are nutritionists. Ms. Nichols will discuss some of the key differences. Where are you getting your dietary information?
