Malterre and Ali Segerstern of Whole Life Nutrition fame will be on hand to

answer questions and provide information about gluten related health issues.

Hempler Foods, Alternative Grains and Bavarian Mills will provide gluten

free food samples of products that are available for sale at Terra Organica.

Bellingham Public Market food vendors Panini Grill and Juice will

provide samples of their gluten free offerings.

Background Information: Gluten free food seems to be the hottest topic going in the food industry.

Why this is so, has as many answers as there are individuals experimenting

with a gluten free diet. Popular media credits gluten free as being "the

answer" to a wide range of illnesses - medical research will take years to

catch up to either verifying or disproving these claims.

What is true is that 1 in 133 individuals are suffering from celiac

disease, and 97% of them are undiagnosed. It takes an average of 11 years for

most patients to have their condition "labeled" and to be referred to a gluten

free diet. The only effective treatment for any type of reaction to gluten is to eat a gluten free diet.

In the past, it has been nearly impossible to find gluten free food and

even more impossible to have it taste good! Food manufacturers are busily

trying to correct that with new products being introduced almost daily to store shelves.
