Ok, I tried to do a search for "soy sauce" but the search function wouldn't search soy because it's less than four letters. I apologize if this was posted before but I couldn't find anything with what I was specifically looking for.

I know soy sauce is off-limits.

However, someone told me La Choy was safe soy sauce because it doesn't ferment with wheat or whatever. Is this true? Because if it is, then I'll just carry around soy sauce in my purse, haha.

Anyway, which companies are safe and which aren't?

La Choy is gluten-free, but it also tastes pretty bad. San-J makes a wheat-free tamari that can be tough to find, but is very good.

Yup. just get one that says 'Wheat Free' on the label. The San-J brand is good. Tastes no different to the regular version, which makes me wonder why they can't just make that wheat free... <_<

I think there should be a law that says grains are only allowed in foods if they are COMPLETELY necessary to the consistency or taste! :lol: It would make the world a safer place for a lot of us and it wouldn't even effect the gluten-eaters. :D

I also recommend the San-J, it tastes just like regular.

Another good brand is Eden Soy. They also have a tamari soy sauce.

The reason commencial soy sauce contains wheat is that they can make it cheaper.

I always buy VH here in Canada. I bought it even before I had celiac disease, I didn't know there was a difference. I also have some Tamari on hand that I use when my sis is here because it is gluten-free and also she needs organic.

VH has a lot of gluten-free stuff, which is great for me because it's similar in price to "regular" soy sauces and stuff.

VH is great, and it is available everywhere in Canada. It is not available in the US, even though VH's parent company, ConAgra, is American.

      The only vegetable sources of B12 are some fermented bean products using a certain microbiotic culture. It is next to impossible to get adequate B12 from vegetable sources without supplementation. Same with D3. Some mushrooms can make D3 when exposed to UV light. Are you vegetarian or vegan? Do you do dairy and eggs or no animal products at all? Low B12 and D3 could definitely cause or contribute to many of the symptoms you have been experiencing but would not cause celiac disease. It is more likely the other way around, especially if you are a vegetarian eating no animal products. Many of your symptoms seem neurological in nature.       Russ, can you link an article supporting your assertion that small amounts of gliadin are detectable in human breast milk? Not doubting you but it would be nice to have the whole text for reference.

      Got it. Thanks Scott. I'll set up an appointment with a GI after the holidays and get all the celiac disease screening done. Thanks to this amazing forum and to all who have answered my question, I now know what my next steps are.

      Aah it sucks that there's no definitive way to confirm NCGS or celiac. I've found a GI clinic that is covered by my insurance and I'll contact them after the holidays to setup an appointment. I hope to get some sort of clarity with further tests.
