My better-half and I were talking yesterday, and she asked; what do I crave right now, if it didn't matter about ingredients. I said; a chili-cheeseburger and fries. So today, when she came in from being out, she had HQ ground beef, Borden cheddar cheese, and a nice store brand chili we found. So, we had one of our favorite "junk food treats" without the "junk"; the bread that is.

This was the first time I'd had something like this without the bread... which made me start thinking 'n' wondering about what other people have done to change/improve some of their favorite non-essential food treats.

Come-on everyone, let's share some ideas..... thanks, GC

When I REALLY want a Wendy's cheeseburger, I will go to Wendy's and buy the burger patties without anything on them (of course I get really strange looks when I tell them to just put the patties into a "boat") then I bring them home,put my own lettuce, tomato, ketchup, mayo and mustard and cheese on the patties and either put it on some gluten-free sandwich bread or eat it without the bread! Sure satisfies a craving!

We made ice cream sandwiches with pamela's gluten free cookies. Lots of them. With different flavors of ice cream. :P We've been dairy free ish for some time now. I may just have to go get some breyers this weekend...

Great idea for a post!

I found a recipe for a chocolate polenta cake and made it friendly to celiac AND my allergies and it tasted just like chocolate cake! I topped it with fresh berries and it was so yummy!

Another thing I do is make cheese sauce out of nutritional yeast and put it on EVERYTHING>...............!

When I'm craving something really good, I make brownies, put vanilla ice dream on them, and some Hershey's syrup heated up poured over it all. It's really good and reminds me of Chocolate Thunder from Down Under at Outback, which is a good gluten free but not dairy free dessert.

Great idea for a post!

we'll do like nogluten and make a brownie sundae with a namaste brownie and edy's icecream and hershey's.

we'll take kinnikinnick english muffins and either toast or grill them and add scrambled eggs, cheese, for a breakfast sandwich. you could add bacon too or ham.

i made my dh and i our own gluten-free blizzards over weekend. edy's vanilla with crushed up wild oats gluten-free chocoate chip cookies and some hershey's chocolate. they tasted great :) and risk-free !

My "better half" refers to a husband/wife or boyfriend/girlfriend. My husband will introduce me to someone new by saying, "I don't think you have met my better half Kimberly..." ;)

The chocolate polenta cake sounds great. I have alot of other allergies as well: egg whites,peanut, rice, and pinnapple. I have been looking for a cake for a while. Would this recipe be ok with my allergies?

nini, That is a great idea regarding the Wendy's burger! I'm going to do that this weekend--I've had such a craving for Wendy's. Maybe I'll bring my bread, order a baked potato and a drink and eat there like a normal person--I'm really excited now :D Thanks SO much!!!

Yes, it is an American English expression. Each person in the couple is considered "half' of the whole, so it is a joke in our country to call the other person the "better" half.

I was craving a Dairy Queen blizzard so I made one myself! I used my gluten-free ice cream and chopped up reses peanut butter cups. It was so good!!

Use Caution at Wendys.

You will need to watch them make the food (just peer around - the kitchen is behind the cash register normally).

I went to a Wendy's last week and ordered my usual "Double With Cheese, No Bun, Lettuce Tomato Onion Only, Extra Cheese. Anyway, I always watched them make it. This time, the cook made my burger and put it on a bun!!!!

I quickly grabbed a manager, told him about my "allergy" and you know what his response was?? he said, "Hey guys, that burger is no bun, take the bottomburger off with the bun and give this guy a new bottom burger and out it in a new wrapper.....

I looked at him and said, "Hey man, one crumb and I get sick, can you get me a new burger please?"

He paused and then looked back to see what they were doing......at that same time, the cook took a new patty and put the whole thing down........ON ANOTHER BUN!!!!!!!!!!!!!!

Unbelievable!!!!!!

The manager then stepped in and made a new burger according to my instructions.

I normally do not have a bad time at Wendys, but this just shows you that we, as Celiacs, have to be there watching (no drive through -- sorry -- its unsafe to take that chance) ---

You can eat there, but make sure you either watch what they are doing or GRAB A MANAGER and have them make it....

Also, watch if they use the same "shovel" for the fries and the chicken nuggets -- cross-contamination galore!!!!

For the cake (which I made with carob), there are two eggs and four egg whites. I can still post the recipe, but can you work around that?

Just remembered today; we normally make for eiter Thanksgiving or Christmas, what's called a "Mystery Pie"... similar to a Pecan Pie, but with roughly half the corn syrup replaced with cream cheese... after it bakes, it has formed two unigue [and tastey] layers! This year it's got to be gluten-free, so we talked about making the pie shell from ground pecans and butter/margarine.

If anyone is interested, I'll get the 'better-half' to relay through me the fixings...

Yeah, I think I can use egg substitute. The one I have works great with a variety of recipes.

I'm thinking about going to the store later to grab the ingredients for some gluten-free "Rice Krispie" Treats. I've decided to make what I'm calling "Sugar-Death Bombs" and substitute Cocoa Pebbles for the [unsafe] Rice Krispies.

Am licking my fingers this minute - used some meringues out of a box (the hard long life ones - but they are meringues) - dollopped soured cream in the middle - put a couple of strawberries from tin on top - :P

      Do the skin care products that give you a rash list wheat as an ingredient or are you assuming from your reaction that they contain gluten? It is possible that not only do you have celiac disease, which is not an allergy but an autoimmune disorder, but that you also have a wheat allergy.

      Thank you, I’m very happy to be here!! Yes, lately I get rashes and itching when I accidentally use topical skin products with gluten in them. I got a bad rash around my hairline after unknowingly using glutenous hairspray, and a near-full-body rash with a sea salt spray that I guess I rinsed off insufficiently in the shower. Neither looked like typical dermatitis herpetiformis to me based on the posts I’ve read here—both were just large patches, red and slightly raised, with no blisters to speak of. At least yet. The sea salt spray was used yesterday and I noticed the itching this morning, with the rash forming obviously by this afternoon and evening.

      Thanks so much for your thorough reply! I was able to schedule with the local pediatric gastroenterologist who specializes in celiac but we have to wait 3 months to see her.

      Welcome to the forum, allis! By "skin response to gluten products" are you saying you develop a rash when you use lotions, creams, shampoos, etc. that contain gluten? One of the classical symptoms of celiac disease is a skin rash known as dermatitis herpetiformis or "dermatitis herpetiformis" for short. Celiac disease is the only known cause for dermatitis herpetiformis. It has a distinct appearance. It has little blisters or pustules in the bumps. Does this sound like what you experience? Is so, it might be possible to get a punch biopsy done when you are having an outbreak. This would be an alternative to eating gluten. If your skin biopsy was positive for dermatitis herpetiformis you could be diagnosed with celiac disease on that basis alone. Apart from that, I know of no other way to get a diagnosis apart from returning to eating gluten for a period of weeks.
