Valentine's Day...dinner And Dessert Ideas

Hey all...

I've always made a special Valentine's dinner for my family. I just love celebrating the day with not just my husband but my little loves as well. Last year I had my gallbladder out on February 12th so no special dinner. The year before I made chicken Alfredo with chocolate mousse for dessert. This will be my first gluten free Valentine's dinner and I'm looking for ideas.

So...what are you planning to make for a special Valentine's dinner/dessert?

 OOHH  I had my gall bladder out last year ON Valentines day.  Unfortunately they started it laproscopically but then had to slice me wide open. :(  Apparently the stones had worked their way down into the bile ducts of my liver or some such.  It was a hard and long recovery. Infection, slow healing, horrible pain... It took 3 months to even be able to sit up from a laying position while not on medication.

 

Whoa.. it was just so bad :(  I am so thankful for my family and their support.

 

THIS YEAR... hah aI was just at Barnes & Noble.  I got the man a copy of Newton's Principia and a few other books he will love, and some crazy pink I love you boxers :wub: and chocolate.. bahahahhaha He has requested Hunan Chicken and Cream Cheese wontons, and fried rice.  Ive never made the grain free wonton wrappers but it seems it will be quite easy. I have the chop sticks out and ready to go. I am also going to make some fudge. Chocolate on the bottom layer and Strawberry on the top. Weeeeeeeeeeeeeeeeeeeeeeee  I AM SO MUCH HAPPIER THIS YEAR!!!

 

Seriously...  PICK ANYTHING YOU LIKE even if it is full of gluten.  Send me the wish and I will de-gluten it for you!  Anything a regular person can cook, a gluten free one can too. Easy Tweaking!

Hi mycasmom...that sounds like a bad way to spend Valentines!!!

I do convert recipes to gluten free all the time...my struggle this year is in just finding inspiration, period. Part of the trouble is that I'm also soy and dairy free... well, dairy super light. So...yeah...ideas, inspiration. I'm hoping something will pop up and make me say, yes, that's it!

Last year I made cornish game hens on valentines day, since my husband had to work late.  They are just a tiny chicken... but fancy and cute.  

 

Lemon Pepper Roasted Cornish Hens:
Roasted just like a chicken. Get the number of birds you want to cook, pat dry, and sprinkle each with the juice of a lemon. Rub the inside, outside, and under the breast skin with minced garlic, salt, pepper, rosemary, and the zest of one lemon. Spray with canola oil to get that golden brown color- can be skipped. Tie up legs if needed. Bake at 375 F until a thermometer reading shows done (I do 180 F on whole birds). About 1 hour.
Serve 1 per person or 1/2 a bird per person if there are a lot of sides.

 

I made lundberg risotto on the side, and green beans steamed and sauteed in butter and garlic.

 

I avoid going out to eat when restaurants are very busy, so I wasn't going to make dinner plans out on the day of this year, but my husband made reservations for us at 5PM at a place I like.  It kind of scares me that I may walk in and it be busy and they screw up my meal, but I am going to try to push it out of my mind and enjoy the meal.  Funny, last year I was supposed to get my gallbladder out right before V-day, but had to delay the surgery because I was sick.

I really like the Cornish hen idea. Thanks for the recipe. I'm leaning towards a flour less chocolate cake for dessert because chocolate is my favorite food group. Ha!

I hear you on going out to eat. The only place I feel comfortable going is the one gluten free place we have. I hope your Valentine's date is wonderful!

OK hmmm...  Is there a vegan version of cream cheese or something in similar consistency?  Because cream cheese stuffed strawberries seem very very valentiny to me! :D

 

I've seen it in stores, so it does exist.  Or you could do some kind of dark chocolate dairy free mousse... and stuff them with that.  (Leave it to me to add chocolate, lol)

 Nothing wrong with adding chocolate to ANYTHING!  MOUHAHAHA

 

How about these stuffed with chocolate instead? With a paring knife, cut off the strawberry stems. Cut around the inside of the strawberry, hollowing out slightly and creating a well for the cheesecake or chocolate (mousse?). Cut off a small portion of the pointy strawberry tip, so that each strawberry can stand. Place each on a large baking sheet or whatever you're using and fill them with your choice of yum! I sprinkle mine with crushed almonds for a finishing touch. The boyfriend eats them...almost all of them..and the rest of us get sad. LOL

      I don’t think it matters much, there’s another type of cordyceps but I’m not sure if there’s a lot of difference, the one I’m using is cordyceps sinensis from maesyffin in wales, sinensis is the one with a long history of medicinal use in china. I think the alcohol (vodka) in the tincture helps with uptake vs taking capsules. And yes, changing my diet helped but it’s almost impossible to maintain as I can’t eat any lectins or sugar which is almost everything. Low lectin is about the best to hope for, they’re in everything. I can eat teff, millet, hemp seeds, blueberries, strawberries, blackcurrants, yogurt, cheese, walnuts, pistachios, macadamia, Brazil nuts, broccoli, sweet potato, carrots, beetroot, olives, rocket, onions, garlic, avocado, kale, mushrooms, chlorella/spirulina, and fish. That’s about it. I keep quail and make their food myself because lectins get into the commercial pellet fed chickens eggs. It took me years of adding one thing at a time with three weeks of pain every time I got it wrong to figure this out but there’s a finger prick blood test available now that will tell you which foods are triggering your autoimmune system, they test for 200+ different proteins and measure igg and ige antibodies. Good luck, I hope the mushrooms help but best to address the cause of the problem I think and have the igg and ige antibody test. The test won’t work if you’re already taking the mushrooms.
