gluten-free Dominica diving

I've had two successful years in a row scuba diving at Castle Comfort hotel in Dominica (West Indies) and being served safe gluten free food. The chef there, Floyd, is wonderful and will prepare anything you want. He strives to please you. It's not gourmet, but for serious divers, Dominica far beats most of the Caribbean and safe gluten-free food seals the deal. Everyone at the resort is focused on customer service and you can ask for a refridgerator in your room. The dive boat is right there and the crew is great. There is also a big grocery store downtown and a health food store.
