Ancient grain gluten free pizza reaction

Yesterday I purchased a different brand of gluten free pizza.  A few hours later, I felt like I do when I’ve eaten gluten. Several of the ingredients are things I don’t usually eat.  Any suggestions of which ingredient might act similar to gluten would be appreciated.

INGREDIENTS: CRUST: SMART FLOUR (TAPIOCA

FLOUR, SORGHUM FLOUR, TEFF FLOUR, AMARANTH FLOUR), POTATO STARCH, MODIFIED TAPIOCA

STARCH, SORGHUM FLOUR, WATER, OLIVE OIL, SUGAR, AGAVE, FLAX SEED, YEAST, SALT, XANTHAN GUM, BAKING POWDER (SODIUM ACID ‘

PYROPHOSPHATE, SODIUM BICARBONATE,

CORNSTARCH, MONOCALCIUM PHOSPHATE), GUAR GUM, BAKING SODA, NON-GMO CANOLA OIL

(EXPELLER PRESSED FROM NON-GENETICALLY

Xantham Gum, bothers many, dairy bothers many celiacs also especially newly diagnosed ones, yeast can cause issues in combination with sugars and carbs.....of course any of the seasons or other grains could always have CC.....but very unlikely. -_- I personally just get grain free pizza crust like Califlour Foods plant crust to also avoid the dairy, Toast it on a stone to desired crispness, then add my own sauce and vegan cheese and toppings then back in the oven to melt them. Agreed. Dairy and xanthum gum can be irritating. This ingredient list is overall safe.

I really miss Pizza. I've tried many different brands but never that good. I stick with the Freshetta gluten-free pizza. It has the CSA symbol on it meaning that it has gone through some of the strictest tests there are and can test down to 5ppm I think. It's about as close to the real deal that I've come across.

I’m new to this page and found it by typing “Teff flour reaction” into google.

I have been gluten-free for three years after doing the Whole30 food elimination/reintroduction plan.

I have never been as sick as I was yesterday since my first introduction of wheat three years ago - I had purchased Udis “New” gluten-free whole grain bread and didn’t think twice about eating it - I typically get the Millet and Chia, but they were out.  Anyway, after finishing my sandwich I was so, so, sick - like within minutes.  After recovering, I decided to compare ingredients in the bread with other things that I’ve eaten and been fine (X-gum being one).  The only thing I thought it may be was Teff flour - that’s the only thing I don’t think I’ve had before.  I have emailed Udi’s to see if they will tell me what the “New” in their new recipe is - until then, no more Udi’s for me and that is a bummer!

I used to buy the Udis' millet chia bread also.  I don't like the new Udi's bread recipe though.  So I tried Sam's Choice gluten-free bread from Walmart.  It's cheaper and better IMHO.  Not sure if I'll ever try Udi's again.  The first loaf I got of their new recipe the slices were not baked all the way through and were wet in the center.  So not a great deal at all for $8.

I never buy Udi's. It's way too expensive. I like Three Bakers breads. Cheaper, never had any issues, and the company was started by a family with celiac disease. I too don't feel good after eating Udi's hamburger buns for some reason. One bread I've read about to avoid is the LiveGFree brand. It's the Aldie store brand.  LiveGFree makes all sorts of "gluten free" products that were certified by the GFCIO but then had a voluntary statement on the back that said "may contain wheat". That was a few years ago but when I looked it up recently, it looks as if they dropped the product line and are trying to bring it back as new. Be careful. I'm going to Aldie today and will check it out. Maybe the problems were corrected?

      I also have experienced this from time to time.  It seems to tie in with episodes of IBS, eating too much fibre but also because I have issues with my pudendal nerve - perhaps some sort of inflammation.  Not fun at all when it strikes.

      Do the skin care products that give you a rash list wheat as an ingredient or are you assuming from your reaction that they contain gluten? It is possible that not only do you have celiac disease, which is not an allergy but an autoimmune disorder, but that you also have a wheat allergy.

      Thank you, I’m very happy to be here!! Yes, lately I get rashes and itching when I accidentally use topical skin products with gluten in them. I got a bad rash around my hairline after unknowingly using glutenous hairspray, and a near-full-body rash with a sea salt spray that I guess I rinsed off insufficiently in the shower. Neither looked like typical dermatitis herpetiformis to me based on the posts I’ve read here—both were just large patches, red and slightly raised, with no blisters to speak of. At least yet. The sea salt spray was used yesterday and I noticed the itching this morning, with the rash forming obviously by this afternoon and evening.

      Thanks so much for your thorough reply! I was able to schedule with the local pediatric gastroenterologist who specializes in celiac but we have to wait 3 months to see her.

      Sorry, meant to type "or dermatitis herpetiformis for short". What? Every time I try it, the abbreviation for this skin condition is converted to the full length term. I'm trying to type "D" followed by "H".
