I need help, I went to my GI dr wed. He thinks I have celiac disease and/or ulcerative Colitis. I have a endoscopy scheduled for monday morning. He already started me on a gluten free diet (as of wed night). And the only tolerable thing i have been able to stomach is the gluten free bagels ? i'm hungry and everything has a very ricey taste. I like rice, but the bread doesn't taste like bread or even an attempt at bread or breading it tastes like im eating handfuls of rice. I'm by no means picky! I'll eat anything peppers, onions, garlic... I dont want to just eat salads and bagels the rest of my life! Please help offer any suggestions to mask that flavor!

If  the doctor actually thinks  you have Celiac, they would tell you to continue to eat gluten until all testing is complete.  The doctor would have you blood tested and it positive, would have you continue to eat gluten.  Then they would do a biopsy.  

Let's get you on the path to an actual legitimate diagnosis before you try to be gluten free.

Did they do a blood test?  What were the results?  Your doctor is either not very knowledgeable about celiac testing or your symptoms are very severe and he wanted to give you relief as soon as possible. It is possible that you could have a positive endo as you will not have been gluten free for even a week at the time of the endo but it is also possible you will have a false negative.

As to food it is best to avoid gluten free baked goods for a little bit and go with naturally gluten free foods like veggies, fruits, meats, chicken and fish, rice, beans etc. Simple whole foods are the best until we heal.  Once you have healed a bit then add in the baked goods.

You should keep eating gluten until all testing is done. If you haven't had the full celiac blood test panel then I would do so if I were you.

If you want to test some gluten free things while you are still eating gluten then I'd recommend Canyon Bakehouse mountain white bread, fake rye bread, multigrain and definitely their bagels. Quite good. For pasta I'd recommend Barilla gluten free pasta. The only one I like.

After you've realized gluten free isn't too bad you should stick with soups, stews and veggies for a bit till you feel better. Homemade.

Keep eating gluten til they are done with that scope, and try a whole foods only diet for a bit and drop the breads for a few months til you no longer recall the taste. btw if you have UC ....those might become even off limits.....everyone is different. But my UC will flare up with carbs, I did a post a few days ago. My is a bit odd but I found eating anything with sugars or carbs caused my UC to flare and cause bloody stools, bloat, gas, slight distention etc. I had to go keto to keep mine under control and only 1 bread brand initially catered to my diet and it was from Julian Bakery, they do not use rice in but use seeds and nuts the seed melody one was the closest to a gluten bread, the coconut and almond ones toasted each fill a niche.....I would make french toast out of the coconut ones, almond was good for avocado toast or a bit of tuna on it toasted. I make my own in my bakery now days.

Keto/paloe diet with high fats and low carb is easy to go with and great starting off with whole foods, eggs, omelettes, steamed veggies, fish, meats if you can eat them. Like literally you do not even need carbs after a few weeks cause you body changes gears to burning fat for energy and is great for managing UC just watch the spices lol.

      @CeliacPsycho246, You might try cutting out dairy.  Some of us react to Casein, the protein in dairy, the same as to gluten.
