Are there any particular cocoa powders or dutch cocoa powders you have used that are gluten-free and you have not had any issues with?  I saw this recipe that looks yummy maybe for Valentine's Day but was not sure if all cocoa powders are created equal when it comes to gluten issues or cross contamination?  Same with chocolate chips?

never seen one with gluten.  gluten free bakeries around here use Hersheys

Thanks. I do have some Hershey's at home, and just was checking to see what others have been happy with.

Yeah Hershey in my bakery, the Dark says gluten free in small letters on it, the plain I was cautious about myself but on their website it is listed under the gluten free products and I have been using it in my bakery for the past 2 years. Before that I used a raw expensive one from Big Tree. Only a few brands you need to be concerned about gluten....fact is your more likely to get heavy metals and toxins in your cocoa powder then gluten....they did some extensive testing.  Still Hershey came back among the safest even with those, so safe bet. Chocolate Chips you can look at Enjoy Life, and MyGerbs, Sugar Free chips you have Lilly's, phikind, and a few others. I started playing with Lakanto cocoa bars which are dairy and sugar free.....melting them and using for coatings.

I had just tried Nestle chocolate chips in a cloud bread cookie, and I am not sure if they bothered me.  I think they are gluten free but I am wondering if anything else in them bothered me. I am having a rough few weeks. I am about to go back to basics soon and start over.  When I first stopped eating gluten it took a few weeks, maybe even a month or so, but I started having relief. Now for months I've been having bad bloating again (and on three blood pressure meds and still my blood pressure is high and I get racing pulse at times).  I am so lost.  Not sure if the blood pressure has anything to do with the stomach issues or what.  But I eat the cookie with the chocolate chips and my heart started racing for hours and I felt awful.

I used eggs, plain Greek yogurt,  cream of tartar, and a little sugar and vanilla, along with the chocolate chips.  I am starting to wonder if I have issues with vanilla (I used McCormicks though) or anything else in the chocolate chips, like maybe corn syrup or something.  Or maybe it was not the cookies.  I'm having a bad week.  I feel like I am grasping at straws.

What about majestic Guaradelli cocoa powder? I bought enjoylife chips and they are allergy free but I still have to make sure there are no chemicals in them. But I can normally smell and taste them. IF i smell something I won't eat it. Since i a became allergic to so many foods plus all chemicals i am afraid to try any cocoa powder.  Supposedly I am not alergic to milk or cocoa unless i became allergic to it in the past 7 months. Thanks

Ghirardelli is very good about putting “may contain wheat” statements on their products if made on shared equipment.  The statement would be under the list of ingredients. A lot of their hot cocoa powders say may contain wheat.  I found a picture of the label of their Majestic cocoa powder online and it only said that it may contain soy and milk.  

I’d check the actual label, but if it doesn’t say that it may contain wheat it should be gluten free.

I use Hershey‘s cocoa; it is gluten free.

This cocoa powder sounds good!  I wrote to Ghirardelli to ask if it is gluten free. I’ll try to remember to post their response here.

Is Majestic Guaradelli Cocoa Powder gluten-free? It isn't labelled "gluten-free" but is 100% cocoa so naturally gluten-free, and does not disclose wheat as an allergen:

There are no gluten-containing ingredients in Ghirardelli Majestic Premium Cocoa Powder and it does not say that it may contain wheat.  Their other cocoa powders do say they may contain wheat.  So I asked the following questions. Based on their answers (below questions) I’d say it is very safe.  I’m looking forward to trying it!

“Is Majestic Premium Cocoa Powder made in a different facility than the other cocoa powders?”

Yes

“Is Majestic Premium Cocoa Powder made on equipment that also processes products containing wheat?”

No

Hey RMJ, thanks.  Did you know you can buy those  Ez gluten kits that test down to  10PPM.   If i do get brave and try  cocoa,  the Hershys or majestic G,  I will test it first for sure.  I also wanna try the  Valhrona cocoa powder.  Well  first i need to see if i became allergic to cocoa or milk. Once i find that out then i will buy the kit and some cocoa. 

There is a good milk at the store that says NO additives. That is what i need to buy if i find out i haven't became allergic to milk. As my body can't take chemicals either. I didn't realize milk like Hilands etc etc could have some additives in it.

I have been using lots of Hershey 100% cacao powder with no problems whatsoever.

I’ve used Hershey cocoa for several years, ever since Ghirardelli added the “may contain wheat” statement to theirs. But I really liked the Ghirardelli I used to use and am very happy to be able to try a Ghirardelli cocoa product again.

      I haven't seen any information there are other genes which trents wrote but what if I spend money to do this test and the results show I have these genes. It will mean nothing. I can have these genes and not have celiac disease if I know it right. Because biopsy is not available, unfortunately, the most reliable methods are blood tests, in my opinion. So I'm gonna eat gluten for another two months and then do the test again. It will be 12 weeks eating food with gluten so some symptoms might appear. Now, I don't have any except fogginess but I'm a software developer so it could be normal for me. Talking about how much food containing gluten to eat, I'm eating 6 slices of wheat bread per day (each slice weighs around 35 grams). I think it's much more than other people eat doing a gluten challenge. Before a gluten free diet I had symptoms like some food intolerance, diarrhea, bloating, belching. However, I also had giardiasis and after treating it I started a gluten free diet so it's unclear whether I had this symptoms because of eliminating gluten or this parasite. The symptoms for both are very similar. So I think it was this parasite because two years ago and before I didn't have these symptoms and I always ate gluten freely. Am I thinking okay or should I consider/do something else? I appreciate any suggestions.

      Welcome to the forum, @Debado, Migraines at night can be caused by high levels of histamine.  Histamine Intolerance can cause physical symptoms like migraines. Foods contain histamine.  Our bodies make histamine, an important neurotransmitter.  Our bodies naturally produce more histamine at night as part of our circadian rhythm, our sleep-wake cycles.   Some foods like gluten and nuts contain high histamine themselves or trigger our bodies to produce more histamine.  A low histamine diet is helpful, cutting out high histamine foods and histamine-release triggering foods.   Our bodies can breakdown a certain amount of histamine, but sometimes our bodies cannot keep up with the amount of histamine needing to be broken down, and can be overwhelmed by the amount of histamine resulting in Histamine Intolerance and health problems like migraines.   Vitamins C, B12, Pyridoxine B6 and thiamin B1 help lower histamine levels.  Our bodies use these vitamins to make an enzyme DOA (diamond oxidase) that breaks down histamine.  DAO from beef or pork kidney is an over-the-counter supplement that can be taken.   Riboflavin B2 is very helpful for relieving migraines.   Have you been diagnosed with Celiac Disease or suspect you have it?   Happy Holidays!

      @ABP2025, Have you thought about having a DNA test to check for known Celiac genes?    I do hope you will make sure that you are getting sufficient gluten to provoke an autoimmune response strong enough that the antibodies can be measured in the blood.  See article below. Celiac disease affects the absorption of nutrients,  including vitamins and minerals.  Your symptoms may be associated with thiamine deficiency.   Migraines and peripheral neuropathy, phimosis (yes, even this), and white spots on the brain are seen in thiamine deficiency.  Celiac disease disrupts the absorption of all the essential nutrients, but thiamine can be quickly depleted, in as little as three days.  Thiamine deficiency can occur even if blood tests show normal levels.  Thiamine deficiency can affect antibody production.

      Anybody ever heard of getting a migrane from gluten and coconut oil ONLY at night?   If I consume gluten or coconut oil, even in the morning,  I will get a migrane. But not until half way thru the night. I don't get this. Why at night? Why not right after I eat?
