Is this proof? Ate gluten by accident

So my dr thinks I have celiacs or a gluten intolerance. Without insurance he can't test for it so he said to cut it out and see if my symptoms went away and I felt better. Well I cut it out for a week and last night on day 7 I went out to eat and I accidentally ate like 2  nibbles of breading that had gluten in it. I caught myself after that and sent the plate back so the kitchen gave me a new plate and assured it to be gluten free.

About 30 minutes later I began having really bad stomach pain and naseua. It progressed to backpain and weakness hours later. This morning i woke up and my stomach still hurts and I'm naseaus. My husband ate the same thing I did so I know it's not food posioning. Is it possible that after a week without it this is my first episode of being glutened? Could this be my confirmation that I have it? How long until this goes away?

I say that's proof enough that gluten or at least wheat hurts your body, and that you shouldn't eat it anymore. If you want, you can do what I did when I first thought I might be gluten intolerant or Celiac, go another 3 weeks without eating any of it, being really careful, and then try a piece of bread or even just two bites like you accidentally had at that dinner. If you feel sick again, you know that's what it is. I'm like you and don't have the means to get an actual biopsy of my intestine. I was able to get blood test, but I took them while I was eating gluten-free, because the doctor didn't tell me I should be eating gluten. So that was pretty much useless. But I know my body, and I know that I feel horrible even when I have a tiny bit of gluten. So I just never eat it. I told restaurants that I either have Celiac or at least an allergy, they seem to react to the word allergy, and usually treat me well and treat it like it's serious. While I won't go into anaphylactic shock if I eat it, I will be sick for days, even if that doesn't mean actually throwing up or anything, it will just generally mess up a lot of systems in my body. I used to be just generally gluten-free, never eating bread or noodles, but always being okay with french fries and sauces and Seasonings, I mean just eating that without checking ingredients. Ever since I learned more about celiac, I started to avoid sauces, seasonings, and french fries and the like unless I knew for sure 100% that they were gluten free. I've been asking restaurants if they use shared fryers or not. Anyway, since I started being even more careful, like someone with celiac, I felt even better. I have way less bloating, I'm more regular, and generally I have more energy. It does take time and some trial-and-error, but I think you can definitely take care of yourself without having to go to a doctor. Maybe don't go around flaunting that you have celiac, but still definitely take care of yourself and tell servers, managers, cooks, even your grandma if she cooks dinner for you, that you have a gluten or wheat allergy, you're not lying. It really does negatively affect your body. So be true to yourself and don't worry about what other people say. I hope this helps.

This is the typical bloodwork most people would have done routinely with an annual wellness checkup. I would include things like iron levels, various blood cell counts including reds and whites and other infection fighters. CMP = Complete Metabolic Panel. This would measure things like blood sugar, kidney...

This is what makes me believe it's food related.  I do check all of my food products and supplements and I am very careful about them being gluten free and trying to stay away from corn starch etc. However, I am eating gluten free breads that sometimes have rice flour, yeast, etc. - I seem to do fine with these breads/bread products some days, but then am sick other days.  I have never really had any GI symptoms outside of bloating.       Did the symptoms commence after you discontinued the AIP diet? Have you checked all nutritional supplements and oral hygiene products for possible gluten content? Have you recently checked all the labels of purchased processed foods in your pantry to check for formulation changes that might have introduced gluten? Historically, when "glutened" did you have GI symptoms or were you a "silent" celiac whose symptoms were non GI. Is what you are experiencing now like what you were experiencing at the time of diagnosis? Have you had recent blood work done (CBC and CMP) and if so, were there any parameters out of norm? I know you have Hashimoto's but you say that is...

      Hi Trent! Thanks so much for your warm welcome and questions! They do, but these symptoms have been ongoing for a long time before the pregnancy. However, it's hard for me to know what's a celiac response vs. a Hashimotos one. I haven't, maybe it's worth getting those checked again?

      Welcome to the forum, @Maura Gissen! Don't those same symptoms often come along with the territory when pregnant? And then throw in Hashimoto's.  Have you had your celiac antibody levels checked recently?
