Can Beef Brisket Get Cross Contaminated?

I am really puzzled why twice now I made one beef brisket (same one cut into two pieced and frozen) in a clean Dutch Oven with just salt, brown sugar, pepper and onion powder and the next day I got a little sick.

I don't understand why. I can get burgers and steak and have no issues. I bought the beef brisket from Costco. It was not organic or grass fed. Not sure if that makes a difference.

Could it be how the meat was handled by the butcher or is it more likely something else? I had potato and spinach with the meal. Anyone experienced this?

In some cases it can be the butcher, they sometimes do seasoned, battered, and rubbed meats and package them also. Was it injected with flavoring? If they were prepping and cutting your meat on the same board then perhaps. Many cases they take precautions but there could have been a slip-up. But it could have also been the produce or seasonings. I take it the whole house is gluten-free?
Guess take extra precautions with that dutch oven, perhaps run it in the oven self-clean cycle and a good scrub, then perhaps use crockpot liners with it from now on if it is not enameled.

It was not injected - at least the package did not indicate that. My house is not gluten free. My wife is not ready for that since she does not have celiac disease. I tried to make sure everything was clean. Just seems odd that this has happened twice to me with the same Beef Brisket. Maybe I should try a brisket from a different store.  I used very basic seasoning. No problems with other meats. A real mystery. Thank you Ennis_TX for your feedback.

Does your wife bake with gluten?  sometimes people use the same measuring cups from flour to sugar.

This was my thoughts, flour goes airborne for hours and can settle anywhere. You said brown sugar and I thought the whole measuring cup CC thing with the brown sugar. The dutch oven could have been used some time, the prep surface you put the meat on could be CCed, the knives, cutting board, etc. -_-  Shared houses can be a minefield.

Good question. My wife does bake but not lately. I have my own supply of sugar and I used a measuring spoon. It might be something else. In researching I have not found many folks with this experience. Probably something unrelated.

I purchase plain brisket at Costco.  No issues for me.  All added seasonings are done in a separate room at Costco and never where they cut the meat per the butchers (I grill them all the time!)

Ennis could be on to something.  Was that a enameled Dutch oven or cast iron (which can retain gluten).  

Take it from me (been there and done that), not everything is due to celiac disease.  ?

That is good to know that I am not the only one who loves brisket from Costco. I agree, more than likely it is not the meat but probably the prep or some other factor. Can't blame everything on celiac disease..lol. I really didn't want to give up the brisket - so good! Thank you all again.

      Thank you Knitty kitty, no I haven't thought about that. I just assumed that because my biopsy showed no lymphocytosis, celiacs was off the table.  Is it possible to have no lymphocytosis and still have celiacs?

      @jamiet06, Have you thought about getting a genetic test done?  You have to have genes for Celiac Disease to develop.  If you don't have any of the commonly known Celiac genes, you can look for another diagnosis.  Genes don't change.  You don't have to do a gluten challenge to test for genetic markers of Celiac Disease.

      Yes, @Ginger38,  there are other genes for Celiac besides the two most common HLA DQ 2 and HLA DQ 8.  There are DQ 7 and DQ 9 to name a couple.  There are others.   I understand how frustrating the diagnosis journey can be.  I had a difficult time getting diagnosed, too.  But you're through that now!  Focus on your recovery and healing.  Try the AIP diet to help calm your system down.  Try supplementing with a B Complex to boost your absorption and to help heal and repair.  Benfotiamine has been shown to promote intestinal healing.  Benfotiamine helps keep SIBO in check and so reduce bloating.   Keep us posted on your progress!  Best wishes!

      Thank you! This is helpful and validating, which is nice.  I am so tired of gastrointestinal issues and feeling poorly. Obviously my immune system is freaking out and seeing gluten as a foreign invader… and I feel like I’m just trying to doctor myself all the time but I did wonder if it was all indicative of pre celiac or something like that.  I haven’t gotten straightened out mentally or physically since the 8 week gluten challenge. My stomach is a mess and I’m over it

      Hi! Thank you, this is the most validating information I have had shared with me. I wondered if all this was indicative of pre-celiac or just celiac that hasn’t caused damage. It’s been a long road with all this and I am burnt out on dealing with it all. And I am beyond tired of gastrointestinal issues and feeling poorly. I have had major improvements on a gluten free diet in the past and the antibodies decrease as well. Around the area where I live they don’t diagnose celiac without a positive biopsy. I asked my doc why I would have antibodies if it’s not celiac and he didn’t really have an Answer for that, which was frustrating. They only test for 2 genes, the most common I think. Aren’t there more than just 2?
