I missed this article when it was first put up. It is interesting to read, as my old neighbour who sadly passed away a few years ago was a trainee midwife during WWII. I am celiac also. Dr Elaine Gotschall once stated celiac is a carbohydrate problem as well. So that was important info for me. Even fruit makes intestines upset. I was excited to go to Chipotle for dinner. I was sick before I left the table. Cross contamination is rife there because they touch the flour tortilla bowls then every other ingredient as they are serving customers. It doesn't matter if they change their gloves, the cross contamination has already happened.- dining
