hi guys, I'm still fairly new to this, and eating a lot of chicken, I was wondering if anyone would be willing to share some of their gluten-free chicken recipes with me.

I also have gerd and wicked heartburn so they would need to be low fat and no tomato's or mayo

You could replace beef, turkey, and other meats with chicken. For example, maybe try ground chicken in chili or chicken strips in a stir fry. If you like salmon, I highly recommend the Steamed Salmon with Thai Herbs from the Thai Kitchen site.

Baked Chicken Wings:

Frozen Chicken wings thawed

A little corn oil to brown

Mrs. Dash Mesquite seasonings

Emeril's Original

When browned - A little Texas Pete (if you wish)

Mix it all up in a stick free pan and bake until browned

When browned on both sides - take out and put on paper towel

Serve with a bowl of rice, black beans, and caned corn warmed with butter

(I season my rice with Herb-ox Chic. Boul.)

nope, I don't tend to post on delphi... one forum is enough for me to keep track of. :-)

I'm not, however, the pro-baker. Ah well. I'm working on a spring roll recipe I hope to add to the list soon. (my post with the recipes is in the recipes section, titled "As Promised, A Few Recipes." there's a lot of other really good posts in that forum too - particularly if you want more "standard american" fair. I never did get the hang of (or taste for) anything fried...)

      Welcome to the forum, @BeeBarnard! I really can't imagine how either skin or skinless chicken thighs could not be gluten free unless one or the other were treated with some seasoning ingredient that was not gluten free. Do the product labels indicate any additional ingredients added to the meat? Is your daughter a super sensitive celiac? If not, the amount of gluten cross contamination found in seasonings is usually inconsequential.

      HI, My daughter was recently diagnosed with Celiac and I would like to make her some chicken soup (she's got he flu). I found all gluten free ingredients but I'm having trouble with the chicken. I purchased Purdue bone-in chicken thighs from BJ's Wholesale Club. Purdue says that they are gluten free but the BJ's website says no. It seems like skin-on chicken is not, but skinless is. Does this seem accurate? Thank you

      Hello there, it's been ages since I signed into this account. Wanted to see if there were other celiac patients that have gone through perimenopause/menopause and chose to take estrogen or wear an estrogen patch? I know all of our bodies are different but curious how it went or is going for you. Thanks so much.
