I have been ordering from alot of places to try to find the best in the gluten free food zone.......I love the Pamela's pancake & waffle mix and I think it is one of the better ones out there but............... I ordered in December from Mona's mixes as I heard so much about her mixes... Well my non-celiac husband and son voted that Mona's has Pamela's beat hands down. These are the lightess, fluffiest pancakes I've ever eaten , even before my celiac days..... I never was a pancake person before or after being DX' but I have eaten pancakes 3 times since December...... If you haven't tried Mona's give them a try.

I don't know her but she has me sold on her pancake mix, I can't wait to try her cake mix in Feb. for a birthday party......

I just tried the sugar-free pancake and waffle mix from Namaste. The pancakes were AMAZING! I couldn't believe how good they were. We doctored them up a little with a little sugar and some extra vanilla. I am very picky and still trying to get used to the gluten-free diet and I LOVED THEM! I froze the leftovers and will use them for breakfasts at work.

As a matter of fact, I have had good luck all weekend with some new gluten-free foods. Last night the family had rigatoni and meatballs. We used the gluten-free white bread in the meatballs, and I used a new gluten-free pasta that I bought (the rest of the family had regular pasta). Both the gluten-free pasta and meatballs were really good!

Since food is so important to me, I am really excited about my good fortune this weekend with some new experiments.

I loved Pamela's too... What is the website for Mona's? Wish someone would make a gluten-free/cf pancake mix :)

In all seriousness, I think pancakes are the easiest gluten-free/CF thing to make from scratch. I follow the recipe in Betty Crocker, just substituting my gluten-free flour mix cup for cup and use rice milk. I make them egg-free too, but they aren't quite as good that way. My kids don't even know they're gluten-free and I have made them for my daughter's friends at a slumber party and the only comment from the 13 and 14 year old girls was, "I love your pancakes Mrs. Wolf!" I can't imagine any mix being quicker, easier or tastier. I add cinnamon as my "secret ingredient". I make waffles with the same recipe except for tripling the oil so they won't stick. My mom wondered on Christmas morning why the waffles on my plate looked just like hers. She asked why I wasn't making special ones for me. When I told her they were ALL gluten-free she was amazed. I would never spend money on a mix when they're so easy from scratch.

      @Rogol72, dermatitis herpetiformis occurs in a minority of celiac patients and if the OP hasn't developed it yet I doubt it will show up in the future. I think it unwise to use a scare tactic that probably won't materialize in the OP's experience. It has a good chance of backfiring and having the opposite effect.

      Hi @trents, You're correct. The OP mentioned fatigue and vitamin deficiencies as the only symptoms at the time of diagnosis. Since the family are not taking him/her seriously and find them to be too fussy, I suggested showing them pictures of dermatitis herpetiformis as one of the consequences of not taking the gluten-free diet seriously ... would make life easier for him/her, and the family might begin to take his/her strict gluten-free diet more seriously. A picture says a thousand words and the shock factor of dermatitis herpetiformis blisters might have the desired effect. The OP did say ... "How do you deal with people close to you who just refuse to understand? Are there any resources anyone could recommend for families that are short and easy to read?".  @sillyyak52, It might also help mentioning to your family that Coeliac Disease is genetic and runs in families. Any one of them could develop it in the future if they have the HLA DQ 2.5 gene. It was my own fault but it happens.

      Oh yes.  I would never recommend taking it for an extended period of time.  When 70% of my body was covered in blistering itchy sores, an amazing doctor prescribed it diagnostically because I was unwilling to do a gluten challenge after already going strictly gluten-free in desperation after 10 years of suffering and being poo pooed by dermatologist after dermatologist. The fact that it stopped the itch and mostly cleared the rash after about 2 months was diagnostic for him.  I stopped it and have remained strictly gluten-free with very few flares since that time (over 10 years ago).  So the fact that it cleared the rash was diagnostic for me.
