What is purpose of Apple cider vinegar 

a lot of recipes seem to call for it

It depends.  What are you making? 

I add it to regular milk to curdle it.  It is a substitute for buttermilk.  Think biscuits.  I add it to bone broth.  It helps leach out all the minerals, etc.  I also add it to my apple pie crust to make it flakey.

Apple cider vinegar is an ingredient in mixing liquid which makes chicken/Duck skin crispy. Apple cider vinegar will react with alcohol, fats, butter, and turn into a good sauce. It also used in a dessert to keep a light flavor.
