Firstly, let me say how sorry I am that this happened to you.  It’s so frustrating to take the precautions to care for yourself and yet still get glutened.  Did you determine what they actually served you?  The regular Peroni? When I’ve been inadvertently glutened I’ve taken steps to try to go right to healing my gut.  I double-up my normal intake of probiotics and I take L-glutamine a few times a day and take digestive enzymes.  Drink lots of water and bone broth throughout the day and eat light easy-to-digest foods for a few days.  Eat a little bit of fermented foods and maybe stew some apples for the pectin and digestive support.  Also do stomach massage and try to be relaxed and calm in my activities. On a different note, doesn’t Peroni Gluten Free still have barley malt?  I believe they add an enzyme to help remove it but don’t know if it’s certified gluten free.  As a celiac don’t think I would drink that myself.  Additionally, I always take digestive enzymes when I eat or drink out or am unsure that I could have a cross contamination issue.  I do help you feel better soon!!!

I am sorry that you had a gluten exposure.  Stay hydrated and rest.  Hopefully, your autoimmune reaction resolves quickly.
