A few years ago I was diagnosed with celiac and have found that i can't eat oats but I really miss having a good muesli bar as a snack during the day. Does anyone have any good recipes?

I’m not sure if this fits the bill:

Look for paleo based granola that use nuts, seeds over grains, plenty of recipes for this and some companies make them premade but expensive.

Another suggestion for a snack if you like to cook/bake:

I don't buy store bought bars, but I make homemade granola. I use almonds, pecans, walnuts,(pulsed in food processor) coconut oil, coconut flakes, and either honey or maple syrup. A dash of vanilla extract and cinnamon / baked in oven until slightly browned. My son likes when I  layer a fresh fruit plate , drizzle nut butter on top of fruit, and then put the homemade granola on top.

I was undiagnosed for quite a few years. I now have neuropathy in my hands and feet. Be watchful of something like this and definitely see a neurologist if having symptoms like numbness in your extremities.
