Gluten-Free Baps (Scottish Rolls)

This recipe started out as being from Scotland, and if you ask a Scot today they will tell you that they invented them.  But then, Cornwall and Yorkshire say it was invented by them. So it is a British Isles Recipe and easy to make

  • 1 tsp/ of sugar
  • 1 tbsp of gelatin  (The dry gelatin that comes in packets
  • 1 tsp. dried yeast  (ensure it is not expired)
  • 2 egg whites  Once you have become versant with this recipe try adding an additional tsp. of dried egg white.  It is not in the original recipe, but it causes the BAPS to rise, to be a fuller bread.
  • 1 tsp. of salt
  • 1/2 tsp. citric acid   (we can buy it at the Pharmacy, or a specific baking store where they have different flavorings and baking pans, and specialty items for baking
  •  250 grams  (8 0z) of superfine Gluten Free Flour. I have been using Bob's One to One gluten-free Flour and it turns out well with it.  Also. be careful with your measurements. in
  • Britain and Northern Ireland they follow the grams measurements  so watch you do not put 250- grams of gluten-free flour thinking it means a CUP. You will be overflowing with flour.
  • 1 tbsp. of olive oil

Grease an extra large muffin tin with some dairy free margarine. Place the sugar and gelatin in 1 Cup of cold water and let stand for 1 minute to soften, or until the liquid is clear. Add the yeast and stand for 10 minutes.

Whisk the eggs, salt, and citric acid in a separate bowl with an electric mixer until stiff. Tip the flour into the yeast mixture. \beat in the oil and egg whites until stiff.

for about 1 minute with electric mixer.  Cover and let stand again for 10 minutes. Preheat the oven to 360F/ 180 C

Remove from the oven and wrap in a clean kitchen towel to cool, then place in a plastic bag until ready to serve.

BAPS are simple bread rolls made with yeast. The outside is wonderfully crisp whilst the inside is soft, airy, and just waiting for a slab of butter

      Can you link the 2019 JAMA study? When you say "massive doses of D" how large are you talking about?

      Yes, Yaya, it is possible to develop vitamin D toxicity with overdosing since it is a fat soluble vitamin but the dosage needed to get to that point is much larger than was thought years ago. Years ago, doctors were very cautious about D supplementation but more recently the medical community has relaxed their caution as it proved to be overdone. Individual practitioners are not always up to date on everything and sometimes are operating on dated information.

      Kitty, Be careful with massive transfusions of D, it's dangerous per my cardiologist.  Your note made me confirm and he's right.  I found this article called:  Too much vitamin D may harm bones, not help - Harvard Health The study was released on Dec 1, 2019 · and appeared in the Aug. 27 issue of JAMA which found that, compared with people who took moderate amounts of vitamin D, adults who took large amounts daily not only didn't see additional gains in bone density, but in some cases ended up worse off.  I especially must be careful because, like many Celiacs, I have low bone density.  I have been taking Prolia shots for about 5 years.   Also there is such a thing as vitamin D toxicity per my cardiologist.  That's why he carefully monitors my #s and wants me to raise levels slowly.   Take care.

      Oh, @Yaya! Five years???  How awful for you to suffer so long! My Vitamin D came up in a matter of months.  High dose Vitamin D has been used in the past to correct rickets and is a safe method to correct Vitamin D deficiency.   I took 1000 IU several times a day, every day for several weeks.  I ate them like m&m's when I was severely deficient.  My brain craved them.  I felt so much better afterwards.  On maintenance dose now.  Yes, the craving went away as my level reached 80-95.   Ask your cardiologist about supplementing with.Benfotiamine.
