      So just because a product is made in the same facility does not mean that it is contaminated, it's possible, and likely, that if it is labeled gluten-free, then it is in fact gluten-free. Why are you assuming that there is contamination? What is the product?

      It is fine to keep her gluten-free at this point, and she can do a gluten challenge if you decide to get a formal diagnosis and do the endoscopy. You did not mention the reference range for her test result, as they differ depending on the lab, but the fact that she had a positive test AND feel better when avoiding gluten, make it very likely that she has celiac disease. This article might be helpful.
