Today, up and down the British Isles, cooks everywhere will be baking a very particular cake to celebrate the Queen's Platinum Jubilee (a reign of 70 years).  The famous cake is the Victoria Sandwich.  I thought I'd share this gluten free version of it with my non-British friends on the forum.   I also attach the history behind it.

If you want to give it a try, a tip: I never use butter for the sponge, it is much easier to blend if you use a good quality margarine.  That said, it tastes very good with butter! You use what we call double cream or whipping cream for the centre (I think you call it heavy cream in the US, but it is the sort that gets thicker when you whip it.)   But if you want to cut the calories a bit, and only a bit (!), you can skip the cream.

It tends to get quite crumbly after about three days but that is seldom a problem in my house, it usually disappears very fast!

Happy Platinum Jubilee, Your Majesty!

As I mentioned, gluten intolerance encompasses more than just those with celiac disease, and in the past was used more like the term "gluten sensitivity" is used today.

By the way, have you been diagnosed with celiac disease, and if so, are you on a 100% gluten-free diet?

I haven’t had any noticeable reactions to salt so I will continue using it. I think I just freaked out when I realized this but it doesn’t cause me any discomfort- so thanks!

Ok, thanks. I'm so glad to hear you are in the hands of a dermatologist. I hope he/she has given you 1) a diagnosis; and 2) a plan of care with a couple of options so that you have buy-in and comfort with it. I have some ideas, but not having seen the abscesses or you in person, it doesn't really make sense for me to kind of ... speculate further. But your question was regarding gluten, and you've gotten a couple of other follow up questions and answers that are good, including the idea to keep a food diary. Let us know if we can help further or answer any other questions. I'm sorry you're going through this, it sounds very painful.

@plumbago They appear as boils. They are big, like the size of a nickel--quarter, and they hurt when I touch them. I have gone to the same derm for them over and over and she thinks my body is colonized by a bacteria, but even after using hibiclens all over my body they come back.
