must eat low sugar and low salt diet. What can I eat besides fruit for a dessert? Any info appreciated.

Is there any cookie or cake, boughten, that is gluten-free, and low sugar and low salt at the same time?  I realize this might

be impossible!!!!

I've not heard of any, but you could likely bake your own that would fit the bill...

Keto items do not have sugar. Not sure about salt.

I take dates and stuff them with natural peanut butter.  Then drizzle melted sugar free chocolate over and freeze.

I'm new to the celiac group as a mom of a daughter just diagnosed.

Not that I have found yet. On cookies and cakes.

But if pizza is a go to Digiorno gluten free pizza is the best out there. walmart 8.96 only Pepperoni so far.

Let's say family of 3 fought over one last night. Bought 2 today.

I cook and bake so all my recipes will be heading gluten free soon.

I will be downloading recipes as I make, and are successful and yummy.

You should look into keto desserts. Find recipes for them or somebody that makes keto treats. They don’t have sugar in them and sometimes they are good.

      Thank you both for your insights. I think I’ll have to repeat testing in a few months and have a longer period of gluten consumption.

      The "IgA 47-310 normal range" = is the total IGA test I mentioned in an earlier test. It goes by a number of names. He is not IGA deficient.

      Doctors don't usually test the levels of all the B vitamins.  B12 is frequently the only one checked.   Ask for an Erythrocyte transketolase test to check Thiamine Vitamin B 1  levels.  The eight B vitamins all work together, so they should all be supplemented.  Additional thiamine in the form Benfotiamine can be taken.

      No.  The damage done to the lining of the intestines is caused by the autoimmune response of Celiac disease.   People who have been off of gluten for an extended period may take longer to mount an autoimmune response.  Twelve days of gluten after two years off probably wasn't enough time and not sufficient gluten.
