Ate gluten on a road trip

I have T1 diabetes (for 25 yrs) and have been in control.   I'm 71.  Took a 4 day road trip across Nevada and ate three sandwiches (one per day) with regular bread, not gluten free.  Food choices were very limited.  It's been 5 days since the last sandwich and my blood sugar levels have been out of control - way out of control.  Celiac diagnosed over a year ago and have been gluten-free since (with this one exception).  Been dosing more insulin, but it almost doesn't matter.  Anyone have a similar experience or an idea how long until I can get back in control?   Upset Intestines.  Thanks.  Flaco

I'm sorry to hear about your blood sugar issues. Do you have similar issues blood sugar issues if you eat a gluten-free bread with a similar carbohydrate ratio? I am just curious if the extra problems with your blood sugar could be related to gluten itself.

Eating the same carbs on gluten-free bread does not typically cause this type of BS reaction.  The high BS may also been exacerbated by the long drive, without much physical activity.  My numbers are better today, 7 days after being gluten-free.

      @CeliacPsycho246, You might try cutting out dairy.  Some of us react to Casein, the protein in dairy, the same as to gluten.
