As far as I know, miso paste is gluten-free and should be added to the Safe List.  And, shouldn't soy sauce be on the Forbidden list?

Miso can be gluten-free, but it depends on the ingredients and how it's made. Miso is a fermented paste made primarily from soybeans, salt, and koji (a mold used for fermentation). Some varieties also include grains such as rice, barley, or wheat. Rice-based miso is typically gluten-free. Barley or wheat-based miso contains gluten and is not safe for those with celiac disease or gluten sensitivity. Even if miso doesn’t list gluten-containing grains, cross-contamination is possible during processing. Look for a certified gluten-free label to ensure safety. Check the ingredient list and packaging for terms like: "Barley" or "wheat" (contains gluten) or "Certified gluten-free" (safe for celiacs). Brands like Miso Master Organic offer certified gluten-free miso varieties, making it easier to find a safe option. If you’re unsure, opt for miso labeled as gluten-free and confirm with the manufacturer if needed. Always double-check ingredients to avoid any accidental gluten exposure.

We have it on our forbidden list because in many cases it can be difficult to know for sure whether it's gluten-free.

      Thanks for all the info! I'll see how my appointment next week goes. I think I'm going to push for having a blood test done again since I've been consistently eating gluten and go from there.

      At the very least this seems like it could be non-celiac gluten sensitivity.  Approximately 10x more people have non-celiac gluten sensitivity than have celiac disease, but there isn’t yet a test for NCGS. If your symptoms go away on a gluten-free diet it would likely signal NCGS. If you want a formal diagnosis the next step would likely be an endoscopy, but again, this would reveal whether or not you have celiac disease, but you still could have NCGS.

      Your recent test results show an interesting pattern that may warrant further investigation. While your deamidated gliadin Abs, IgA result is within the normal range (0.9, labeled as "not detected"), your deamidated gliadin Abs, IgG is significantly elevated at 26.6, which is above the normal threshold of <15.0. This discrepancy could suggest a few possibilities. Since you've been gluten-free for years, the elevated IgG levels might indicate occasional or inadvertent gluten exposure, as IgG antibodies can remain elevated longer than IgA. Alternatively, it could point to a lingering immune response from prior gluten consumption, even if you’ve been strictly gluten-free. However, it’s also important to consider that elevated IgG alone, without corresponding IgA elevation or other markers like tissue transglutaminase (tTG) antibodies, may not definitively indicate active celiac disease. I would recommend discussing these results with your healthcare provider, who may suggest further testing or a review of your diet to ensure complete gluten avoidance and rule out other potential causes for the elevated IgG levels. If you eat outside your home, especially at restaurants--even those with gluten-free items or menus--it's probable that you are getting some contamination.

      Yes, I'm constantly bloated to the point it feels like my stomach will pop and have inconsistent bowel habits. I'm either constipated or have diarrhea, never really just normal. I sometimes have mucus in my poop. I get nauseous after I eat. My stomach never really feels good. I'm exhausted all the time and have started being anxious. I'm assuming maybe celiac or just a gluten sensitivity or IBS. I don't feel like the first GI I went to really wanted to do much. My primary care doctor did the celiac test and then it just went nowhere. I go to a different GI next week.

      I'm sorry to hear you got glutened, and for many people who have been gluten-free for a long time it seems that they do get more sensitive and have worse reactions. Everyone is different in this regard, however.  This article, and the comments below it, may be helpful:
