Well said, Rinne!

You know, I think that rice flour should have the properties of wheat flour in Rachelville (by the way, I have trouble spelling Rachel like that, my sister spells her name weird)

Anyhoo, that's another job for the glittery purple bats. It's because of their pollenation of the rice that rice flour has gluten properties so that I can make croissants and puff pastry and phyllo dough :P

As part of my last 21 days of gluten eating, I had a GIGANTIC greek meal, and nearly spinached myself because of it! :blink: It was good, and I got this dessert that's usually made with pistachios...

It was made with pecans <_< So now my mouth is itchy, I just took some benadryl. The oral allergy stuff is more annoying than anything, although dr's have told me it can get worse with each exposure. Oh well :rolleyes: It was at least quite tasty, and my last greek pastry for a lifetime :(

At least I can make all that good ole' suthrn food gluten-free, and that's way more important :D

Holy Cow ChelsE.....I dont know how you do it! Everytime I read one of your posts having to do with the challenge...I just cringe. You are very BRAVE....I could never ever do a challenge....not even for one day just to satisfy my curiousity. I'm just too damn scared of gluten now. :blink:

I envy all that you're able to eat right now but from what I remember when I was sick and still eating pizza and all the gluteney foods....it just didnt taste good anymore. I think because I was so sick...I remember having major cravings but then when I ate what I was craving I felt gross and sick with a bad taste in my mouth. I was always dizzy and spaced out....I think it would be even WORSE now after being off gluten for a long time. Nope...no way could I do what you're doing. I hope they do a really good job on your next Endo and I hope they give you some answers.

:) Lisa -Congratulations on getting the corn done. :) I guess from one of my posts the "corn scraping memories" the idea was that I didn't like corn! :D lol. I love it when it is already "put up" and am not facing what you were facing-was it you? Six dozen?!! I remember my dad bringing in 4 clothes baskets full of corn to do and saying he wished there were more. Easy for him-he just picked it!!

Susan -you hate sewing!!? You don't like the hum of the machine, the thrill of cutting patterns, the lovely art of pinning and ironing?! Whaaaa?? Seriously, though I like to sew in moderation. Like a pillow or a pot holder ! Ironing, I hate. :ph34r: Yes, that is a strong emotion, I'm sorry, but there it is :D. My mil used to iron boxer shorts, pillow cases, everything. I think it was a way to handle stress from living with my fil. Imagine it is someone's face on that shirt when you are angry and it might feel good to iron :P

Gimme sugar--I honestly say that, although I don't have much of a drawl. Sugar is kisses in my family too. Also, kiss, kiss, love, love when we say bye. Sounds corny and it is :) !!

Can spinach be used as an adjective? As in, " That spinach-y attitude?" Can you use it like a Jersey type put-down? As in, "Oh, Yeah, Well, spinach to you too and the whole rest of your family!" ?

Hey, I was so inspired by the Southern food talk that I made a dinner to remind me of Grandma's cooking-took some green beans, potatoes, onions, and big ole' hunk of ham left over from a spiral sliced one and put it in the pressure cooker. I couldn't resist the green tomatoes outside and -god help me, I will pay dearly for this tomorrow- made fried green tomatoes. (It is so strange that I have always been able to eat ham and bacon, but not pork chops, pork ribs, or pork roast. I don't know why that is. Any ideas?)

Anyway, made the cucumbers Cissie talked about earlier and been missin' Grandma all evening.

It is ungodly hot here today. I think the heat index was 110. My thermometer said 104 at 3:00. It was around 85 at 9 am this morning. Sorry post is so long.

I thought it was a replacement for the sh-- word since that's what it looked like in the bed. It would take some research to go through this book though to find it!

Chelse, I don't know how you do it either, when I ate it for 7 days it didn't even taste good and it made me so much sicker. You are brave indeed.

And about the bellydancing, I agree with Tavi. I think she was the one who suggested you tell your hubby the dancing isn't for you, it's for him ;)

And I think "Gimme some sugar" should be our town motto, anyone? Also remember we don't have brain fog in Rachelville, we have brain freeze due to the abundance of ice cream and ice cram eating (Mango, Patti, and I -and everyone else dairy free- can have fabulous sorbet) and an over all feeling of happiness and joy because of it.

Julie-Gimme some sugar is a great motto!!! Would that be good on a t-shirt, though?! I think an "all over feeling of happiness and joy" should be the name of a new sorbet flavor. Sounds delicious. Rachel and Victor should come up with new flavors and we could all have a name the flavor contest-sort of like Haagen Daas did with their contest on foodnetwork. :) Well, time to turn in--Have a restful night All! :)

Thank you for your kind words. I think I may have said this before, I always wanted to be a writer, when I was a child the worlds writers created gave me a place to escape to. I've just never known what it is that I wanted to say or who I wanted to say it to. What I find here in Rachelville is a place that calls forth my voice and my imagination. I have actually thought more about writing in the last little while but that is as far as I have gone with it.

I see a series of t-shirts, "Oh, Spinach", "Spinach Happens","No Spinach".....anyone?

All this talk of southern food is delicious, and talk is about all I can handle these days :( although I have begun to appreciate just smelling food. :lol: I sat next to the barbecued chicken tonight at a party and did not have a bite, I just inhaled.

The bee stings are fine. They stopped hurting yesterday, or maybe even Sunday night. The kids weren't complaining about them.

I s'pose y'all aren't talkin 'bout when you see your grandbabies and you tell 'em "now come over here and gimme some suga??" Also -- y'all can't be southern unless you've had chicken-fried steak with milk gravy and sopped it up with skillet cornbread!!!!!!!!

All these southernisms are reminding me of my childhood!! My aunt had a boyfriend who lived out of town -- she made tapes to send to him all the time. She made a tape of me when I was in kindergarden . . . OH MY. I was the biggest HICK you have ever heard in your life! If you guys think I have an accent now (BY THE WAY -- LISA DOESN'T THINK I HAVE AN ACCENT -- JUST SO YOU KNOW . . . . ) you should have heard it back then . . . I don't know that there has been a child who could have had a more slow southern accent than me!! She made copies for my kids, and they are now using it as blackmail!! Holy spinach, it is embarrassing!!

This talk about southern food has to end, folks. I can't take it much more. I want home fried chicken -- the REAL kind -- and homemade potato rolls (I use to use my grandmother's recipe) -- and home-made sage dressing (again, my grandmother's recipe) -- and my mother's incredible apple pie -- complete with BEAUTIFUL lattice-work on the top. She makes the best, flakiest pie crust you have ever eaten in your LIFE. Seriously. I used to get my favorite meal -- fried chicken, green beans, corn, mashed potatoes, and on and on and on for my birthday each year. Now -- I have to change to a different menu. The green beans, corn and mashed potatoes just aren't the same without the fried chicken!

Although, my DH did bring home blueberries and cream again tonight . . . he is a sweetie!! He took Wed., Thurs., & Fri. off just to help me with wedding stuff . . . which is really good because I got a notice that the shoes I ordered will now not be here until August 7 -- two days AFTER the wedding . . . so guess what I'm doing tomorrow??? Good news is that my batteries are in for my wheelchair . . . so I'm going to be He** on wheels again!! Look out Loohavull!!!!

here in the Land of Fruits and Nuts, maybe because produce is plentiful year-round, we never did those things. I think it's sad.....because those traditions, tedious as they are (Robbin - don't vomit at the sight of an ear of corn!), allow you to reap thebenefits and rewards during the long cold winters. I am jealous....my mom made jams and jellies and has canned some peaches, but that's about it. I am jealous of you guys that had farm chores and the aforementioned food chores - it builds character and teaches important lessons early in life. DAng, a whole day of ear-shucking and all of it.....very taxing but YOU will be eating your delicious creamed corn in the winter, and I will not! :angry:

Works for me...I am LOVING my mango sorbet!!! I don't eat in the mass quantities that Rachel does but I have it everyday, lol. :lol:

Well, we have tropical storm Chris on it's way, it's heading tward Puerto Rico now and will be going to the Virgin Isands in about 3 days, at this time it's expected to be a hurricane... good googly moogly here we go again.... :blink:

Right now it's 60 mph and is gaining strength.

Not a good start to the day :(

Hubby's been up most of the night having been 'glutened' by an ice lolly of all things <_<

He always says if he's going to be glutened he'd rather eat pizza.

He's still suffering with stomach/back ache today.

2 out of 3 kids have gone down with a bug (high temp,headaches,vomiting)

Oh joy!Another heinious task clearing that up!

My cat,obviously noting I was a tad stressed decided to bring me a lovely present-a dead bird no less.

More joyous clearing up.

Definitely got my Marigolds on today (rubber gloves) :angry:

Sticking to the 'cultural differences' theme,here's another misunderstanding....

My hubby's brother lives in Australia -his wife is Australian.

She's always sending us little goody bags of typically Ozzy stuff.

I read her letter before opening the parcel,in the letter she said ''I hope you like the thongs''

Now in the UK a thong is an item of ladies underwear (think G-string)

I thought it was a bit odd she was sending me knickers (a bit personal maybe!)

I opened the parcel-and out fell a pair of flip flops!! :lol: (sandals)

We had a good laugh about that :lol::lol:

Back to the grind-hope you're all fine and dandy today.

Of course you deserve nice words...we all do stuff we know we shouldn't. Sometimes we do it to test the waters and sometimes we just do it because we want to. I've done it with the stupid Krispy Creme cream filled donut a few 100 pages back. You do not deserve spinach! :lol::lol: (By-the-way, does DH know the meaning of SPINACH, lol, I'm thinking you could have called him that and he wouldn't have known exactly what you were saying...oops, I mean, it's a good thing you didn't call him that.) :lol:

I AM sorry you're sick! Take it easy and rest up.

Good morning me fello rachelites, I have a question. :blink: I did something really stupid yesterday, I don't even know why. I cheated and knew what I was doing but did it anyway, thinking the worst I would have was pain, the D but that's not the worst. I started throwing up and that was never one of my symptoms. It has just been awful :( It was a stupid donut, can't imagine what posessed me, they were at work just as they have been many times before, but I just didn't resist.

Could this be a symptom of the celiac? I have no fever, I am just really sick. Still feel really sick to my stomach, but could it be it's a new symptom because for almost 3 years not a drop of wheat has passed my lips, and maybe once in a while gluten in the form of something I didn't know was gluten might of, but this was probably a full on assault of the worst kind :unsure::unsure:

Is thre anything I can do? I am going to a concert tonight and really need for this to pass :o

Wow Tavi! I'm so sorry. I used to feel nauseated a lot...I always thought it was because of my constant sinus infections and the drip associated with it, but now I'm not so sure. I did feel nauseated after the Krispy Creme incident, but actually never threw up. I think I had some cross contamination issue a few weeks ago after eating at a place that I eat at every week...I am usually okay, but felt nauseated after that one time. I don't know what you could do that would work quickly...I usually don't throw up, so I never have anything around for it.

It doesn't taste good to me anymore either, but since I have this "YOU'LL NEVER BE ABLE TO EAT THIS AGAIN" feeling looming overhead, I'm eating it all anyway. I think I need to eat 50 flour tortillas a day for the next 3 weeks, those spinach me the worst.

Insult to injury - I always wake up feeling sick after eating out. Blech. Thanks for the kind words :)

Still working on DH about the lessons...I'll get them eventually! Also, I never intentionally eat pecans, walnuts, and the like for that reason. I think this was the first time I deliberately ate nuts in a couple of years, and now I remember why :rolleyes:

Mmmm...chicken fried steak with cream gravy and mashed taters..mmmm! I'll have to make that soon...

Why can't you have fried chicken? I made my great grandmother's fried chicken on the 4th of July and used brown rice flour, potato starch, and corn starch. Couldn't tell the difference! We use the buttermilk and dredge method, I don't know if your family does it different. Seriously, it turned out EXACTLY THE SAME. That flour blend makes great gravy, too :)

Sounds like your body rejecting the hell out of that donut. I hope you feel better before the concert :)

Robbin -- I hope you feel better soon. It is never fun being sick, especially when we haveno idea why. As far as newbies reading this....how patient would they have to be to read a thread that is 277 pages longs and at this point has very little to do with the actual title. :lol:

Tavi -- I have been known to get VERY sick to my stomach from a "glutening" I hope it passes quickly and you being to feel better. Don't feel bad about cheating (side note...my wife says when she goes to work and has a big gooey cinnamon bun, she is "cheating" on me :rolleyes: ) we all have weak moments in our lives. The awesome thing is that in Rachelville, we are all very non-judgemental and will still support you to the fullest. :)^_^

Robbin-hope you feel better soon!!

We used to call flip-flops thongs when I was a kid. Now thongs are underwear. I was at the YMCA and this lady was talking about how her daughter had been in the coed sauna out by the pool and had caught her thong in the door. It wasn't until days later that I realized she was talking about her daughter's shoe and not her underwear! I was wondering for days how you'd catch your underwear in a door of a coed sauna! :lol:

Good morning me fello rachelites, I have a question. :blink: I did something really stupid yesterday, I don't even know why. I cheated and knew what I was doing but did it anyway, thinking the worst I would have was pain, the D but that's not the worst. I started throwing up and that was never one of my symptoms. It has just been awful :( It was a stupid donut, can't imagine what posessed me, they were at work just as they have been many times before, but I just didn't resist.

Could this be a symptom of the celiac? I have no fever, I am just really sick. Still feel really sick to my stomach, but could it be it's a new symptom because for almost 3 years not a drop of wheat has passed my lips, and maybe once in a while gluten in the form of something I didn't know was gluten might of, but this was probably a full on assault of the worst kind :unsure::unsure:

Is thre anything I can do? I am going to a concert tonight and really need for this to pass :o

Sorry you're feeling bad, maybe with throwing it up, you won't have as much of it in your system to digest and do damage. Let's think positive, you have a concert to go to tonight! Who are you seeing?

Robbin and Tavi, so sorry you are feeling bad. I drink club soda, it makes me burp, and burping helps me feel better. Ginger tea, fresh ginger sliced thin and simmered for 5 or 10 minutes also helps. I thought I read Vitamin C helped too but I haven't tried that.

      Hi Deanne! Thanks for support but mu other EGD show normal VA (but some of the samples were not readable) but overall normal egd so after 1 year there is normal villi. I am glad that You solved our problem. Kind regards, matt

      Hi Matt, like you I lost almost 3stone over 2yrs, my symptoms were exactly as you describe .    I was eventually referred  to a consultant who has been treating me for reflective coeliac.  I’ve been taking(  Budenofalk 3mg )steroids for the past 9 mths  and the course is coming to an end shortly. I’ve gained 2 stone and feel so much better in myself. Im due an endoscopy at the end of the course of steroids so unable to say if my villi’s have returned or my digestive system has repaired. But like you I was besides myself with worry.  Apparently the condition is quite unknown and the consultant at the hospital I attend has been in contact  with  Sheffield hospital who specialises in this condition.       How are you doing, @sadiec123?  Did you get through the holidays alright?    Have you been checked for nutritional deficiencies?  Many newly diagnosed Celiacs  are low in Vitamin D and many of the B vitamins like thiamine.  Thiamin insufficiency can cause weight loss and loss of appetite (anorexia) as well as affect mood.   Benfotiamine has been shown to promote intestinal healing and improve mood.

      I agree, @Sarah Marie, it's best to keep eating gluten and get on the doctor's cancellation list.  Some people have extreme symptoms when reintroducing gluten after a brief abstinence.  Be sure she consumes six slices of bread or gluten-y equivalent a day in the two weeks prior to the endoscopy.  There are different amounts of gluten in different products.  Chewy pizza crust and artisan breads have more gluten than cookies and cakes. Keep us posted on your progress!
