Andrea, my carob cake was interesting, the texture and moisture were good but the combination of carob and maple syrup was a little odd, might have been the coconut milk too. :lol: I think it might be better as more of a spice cake, are there any spices that you think go particularly well with carob?

rinne, my Mary Poppins, cake sounds so good- yum!! I saw a post down in the recipe section today about a crockpot chocolate fudge cake :o I was tempted to make it...

but NO!

I've been on a roll with no chocolate and sugar so I was good.

Well, apparently it is common for collagenous colitis to be nocturnal, and BOY OH BOY, mine sure is!

I go for my endo on August 16th, we're hoping to see some nice little villi standing at attention, but I have my doubts......

He's always real good about that on the weekends. :P Doesn't like me only eating two meals so he makes sure I get three on the weekend. Had good news this morning. Took Rhiannon to the orthopedic surgeon for her follow-up. Her collarbone is completely healed so all systems are go for her getting back to soccer.

Also got some more good news yesterday. Remember how I told you guys that when I moved out here 1 1/2 years ago, I put Mom's name on the list for the Seniors Housing here so I can get her out of Scarborough. Well, I called the office in charge of the seniors waiting list and spoke to a really nice lady. I asked her are there any more options to put Mom on so I could get her out here sooner as I am really worried about her being by herself in Scarborough (getting much too violent), and also that I am basically responsible for her shopping, doctor's appts, etc. etc..... Anyway, we got discussing how the government really needs to put more money into taking care of the seniors as the demographics of our population show that what is currently a 5 year wait list will be a 15 year wait list a few years from now with all the baby boomers..... Hello, McFly, it's not rocket science here, it's basic common sense....... Mom lived with me, Terry and the kids for 5 years while she was on the waiting list for seniors apt. in Scarborough, and now she has to wait all over again! Anyway, this lady totally agreed with me and said it was a shame how seniors today are on the back-burner in the government's eyes..... I told her that I understood that there is nothing further we can do and thanked her for her time and assistance......

Well, yesterday, this same lady called me and said that a one bedroom apt is coming available September 1st right here in Bowmanville! In fact, it is in one of the buildings that I put Mom's name on the list for! We go see it tomorrow at 1:00 p.m....... I sooooooooo hope this works out, because it would be awesome having my mom so close to me again! I have no idea what miracles this kind angel of a lady performed, but I thank my lucky stars for it! It just re-inforces my belief that you catch many more flies with honey than with vinegar......... Being nice is always the better way to go......

I will be so relieved when Mom is out here, that way, for those days that I have had a really bad night previously, Mom will be on hand to help out when needed......

Julie, I sought out carob in desperation once I decided to do a chocolate fast :lol: I knew I would have to have some substitutes on hand for the withdrawal. The carob is so naturally sweet I only used a little maple syrup, no sugar for me either.

I really wonder what the synergistic effects are of highly processed food cooked in a micro-wave. I had one years ago, I think my mother-in-law bought it for us - she loves to buy appliances, but I rarely used it because I didn't like what it did to the flavour and texture of food and then we just gave it away. Do you know there are restaurants where literally no cooking is done, only packages opened that are then micro-waved?

I wish more would ask who's interests are being served by our having to go so fast that convenience has become everything, when did we lose the joy of simple food and the time to enjoy it?

There is a really interesting book by a woman named Linda McQuaig called "All You Can Eat", to quote from the cover, "Despite dizzying economic growth, we seem to have gotten things fundamentally backwards: we're allowing society to serve the interests of the economy, rather than insisting the economy serve the interests of society". It appears to me that our appetites are being programmed to serve the corporations that would sell us the highly processed foods and a lifestyle of consumption requires more work which means less time which means fast food..... I'll get off my soapbox now. :ph34r::lol:

I don't work outside the home, my sweetie makes enough that we can live simply on his salary and we decided we'd rather have less stuff and more leisure. It has been a blessing that we made that choice because for the past year I couldn't have worked. I'm beginning to feel better now but I won't be working for anybody else. When I think about doing a cafe I know I would have to limit what I could do but I wouldn't have to do it alone, I've got all these great nieces and nephews to hire. :)

Nikki, I think boils are caused by a staph infection.

Yeah,I've heard that too.My little 'boil man' got a staph infection in his chest wound after heart surgery :( Ugh-that wasn't a good time.

The docs said it's a bacteria that most of us have on our skin.

Don't see how you can prevent more boils if this is the case? :unsure:

I've never tried applying it topically but I suspect you would stink. :lol: I've read that garlic is a blood purifier - a natural anti-biotic and anti-viral so it would make sense that it would work on infections. I have taken the garlic oil capsules at the first sign of a boil, probably about 6 capsules a day until it faded away without coming to a head, I've done this at least a half dozen times. I have no scars except from the first boil I had which was a carbuncle, so it was actually about 10 boils in one. I don't know what dose would work for a child.

If emu's are anything like ostriches, they bite. But the babies are probably harmless. :P:lol:

I had thought an emu was nice until we went to the wildlife safari in Winston OR. An emu was coming up to the car and Mitch told me to roll up the window. He was as tall as the car (little metro). I'm surprised he didn't bust the window or put a dent in the car he was pecking so hard. :angry: I'll never think they are such cute big birds any more.

My step-aunt and uncle raised exotic animals. They had ostriches, but had them fenced in because they are nasty. The emus ran around the property and were quite friendly and playful. One came up and pinched me on the behind in a playful way. Maybe the ones on the Safari weren't friendly because they were more wild, while these were raised by humans in the same way my pet birds were. All birds are wild, it's just some choose to be friends with humans because the human takes good care of them.

I already added Tiffany since she filled out her own application. I knew that Chelsea took Tiffany's kitten. Such a cutey he/she is. I miss my kitties. :(

I'm glad things have been quieter, need to do something aside from sit here all day.

      I've not heard of any issues with Primal Kitchen, but it certainly would be worth not using the brand for a while to see if this helps. Many people with celiac disease, especially those who are in the 0-2 year range of their recovery, have additional food intolerance issues which could be temporary. To figure this out you may need to keep a food diary and do an elimination diet over a few months. Some common food intolerance issues are dairy/casein, eggs, corn, oats, and soy. The good news is that after your gut heals (for most people who are 100% gluten-free this will take several months to two years) you may be able to slowly add some these items back into your diet after the damaged villi heal. This article may be helpful:

      We are off next week on our 9th RCCL cruise since our diagnoses.  I send an email to special_needs@rccl.com before every cruise letting them know that I am both dairy and gluten free and my husband is gluten free.   Unfortunately, with the new menus they introduced in 2023, they removed the gluten-free designation from each item on the menu.  Instead of having a dedicated person take gluten-free orders, it now falls to your regular wait staff.  Some have been great and some not so good.  We had a great cruise in May and hit it off with our head waiter.  She went the extra mile and ordered gluten free desserts that were not on the menu.  My problem arises from other food allergies.  I am allergic to dairy, beef, and several types of fish.  On those days my husband is a happy camper with a steak or salmon, veggies and a baked potato.  I end up not getting enough protein, so I bring protein bars.  I also bring snacks for the room. As long as the food is commercially prepared and unopened, you can bring it. Often the only dessert choices that are gluten free contain dairy, so I am out of luck.  But, if you are just gluten free, they have plenty of choices.  See the head chef in the Windjammer buffet and he will give you a tour of the gluten-free choices.  They usually have 2 gluten free desserts out at lunch and they are labeled gluten free. We have found that it works best to have assigned dining rather than anytime.  That way the waiters learn from the get go what our needs are, and we don't have to explain ourselves every night.  We also get a private table for 2.  I frankly got sick and tired of tablemates telling me a little bit of gluten would not hurt me.
