forgot one thing - Julie - made a toasted tortilla last night....I don't think I did it right - pretty tasty but needs improvement - - guess it really is an ART FORM requiring great skill? :lol:

rinne- I am pretty sure it's a 60s tune, not sure who sings it but I know it has recently been used for some commercial. I kinda hate when they take great songs and use them in commercials, like for a dishwashing detergent or something, it makes me associate the song then with that product. I guess that is the idea behind advertising <_<

Tavi- I did a google search on just Tavi and there were thousands, then I did Tavi + Celiac and you came up. I did a search on Julie + Celiac and I came up. So I see what you mean, kind of freaky. Of course someone would have to think of putting the name and the condition together. I wish there were some kind of protective/privacy thing on this board.

Helps if you have a toaster oven I think...and definitely takes some trial and error with timing. :P

"Toasting" is dear Donna's department, she might have some tricks of the trade to share. I do the steaming, which I have just about mastered, have yet to try toasting.

Yep--Steelers Wheel did "Stuck in the Middle With You". It was a big song when I was in high school. They did have a follow-up song called "Star"--which I actually liked better.

I really wonder what the synergistic effects are of highly processed food cooked in a micro-wave. I had one years ago, I think my mother-in-law bought it for us - she loves to buy appliances, but I rarely used it because I didn't like what it did to the flavour and texture of food and then we just gave it away. Do you know there are restaurants where literally no cooking is done, only packages opened that are then micro-waved?

I wish more would ask who's interests are being served by our having to go so fast that convenience has become everything, when did we lose the joy of simple food and the time to enjoy it?

There is a really interesting book by a woman named Linda McQuaig called "All You Can Eat", to quote from the cover, "Despite dizzying economic growth, we seem to have gotten things fundamentally backwards: we're allowing society to serve the interests of the economy, rather than insisting the economy serve the interests of society". It appears to me that our appetites are being programmed to serve the corporations that would sell us the highly processed foods and a lifestyle of consumption requires more work which means less time which means fast food..... I'll get off my soapbox now. :ph34r::lol:

I don't work outside the home, my sweetie makes enough that we can live simply on his salary and we decided we'd rather have less stuff and more leisure. It has been a blessing that we made that choice because for the past year I couldn't have worked. I'm beginning to feel better now but I won't be working for anybody else. When I think about doing a cafe I know I would have to limit what I could do but I wouldn't have to do it alone, I've got all these great nieces and nephews to hire. :)

I had a feeling about microwaves in restaurants, I imagine they rely on them a lot.

I know that for me, my diet continues to get purer and purer and when I eat the processed and packaged foods once in a while, or get something from a restaurant (which is so rare), it doesn't even taste good to me anymore. I can tell a difference right away. I think our food supply has really changed, if you can even call it food anymore....

A cafe is a lot of work, one of my family members owns and runs one. Long long off hours, lots of turn over with the help, but at the same time she is rewarded by the experience- cooking for people, the personal relationships she has with the townfolk.

There is quite the story behind how Chevy got the rights to "Like a Rock" the Bob Seger song. They actually made the commercial and sent it to him because he said no. Then he liked it and said okay. He didn't want some lame association with his song.

:lol: I toast the first side on the DARK setting then turn the tortilla over, spray it with Olive oil and add salt then toast it on the MEDIUM setting... It is a little crispy on the edges but a little chewy on the inside and doesn't have the raw tortilla taste...I'm also using a corn tortilla that I found at whole foods, which looks almost as white as a flour tortilla.

Nikki -- I hear in the UK now they can't even take electornices (MP3 players etc) on the aircraft now. They are thinking about instituting the same policy here in Canada as well. What are we supposed to do on international flights now? Can't even bring our own drinks etc anymore.

Hope all of you who are planning to travel are safe, and there are not TOO many delays. :blink:

I have an idea with the name/google problem. First of all, I doubt a family member or friend would even think of searching for our names or their name with celiac ... but in case they do, if you say something here meant for our eyes only, then you can always go back and delete it after a couple days. It's not like any of us go back and read through the old posts! Another board member and I deleted just about a whole thread for this reason. I think Susan at one point stumbled on to it, but the party was all cleaned up by the time she got there :)

went white water rafting once and that was the theme song for our video. Very apropos as we lost the guide off the back of the boat in a class V rapid. No one even noticed until my shy sister-in-law looked back and said, "uhm, you guys. I think we lost the guide." :ph34r:

In all my research I've come across so much info. having to do with aspartame. Aspartame was the very first thing in food I knew I was reacting to...way before I heard of gluten. It was only in my gum but it was causing severe symptoms that calmed down once I stopped chewing gum. I looked it up online not knowing a thing about it. What I read was scary. :ph34r:

I also read alot from people who had suffered tremendously because of the aspartame in all the diet products they were consuming. The stuff is toxic...period.

Beverly, since you've been through the wringer with symptoms similar to mine...from the nightsweats to everything else...I would definately lose the diet coke...at least for a week or two. I feel like you will notice some improvement for sure. If you dont I would be very surprised. Have you ever stopped drinking it this whole time? If not it could be something to look into. If you do decide to eliminate it....dont switch to another diet drink. You would be better off drinking regular Coke.....seriously. Avoid the diet products and see what happens.

Donna, you could try elimininating it too. If you do have problems with histamine....food additives like MSG and Aspartame will cause a reaction. They dont actually contain histamine but because they are essentially a toxic substance the immune system will respond with a release of histamine. Thats why they are not allowed on a histamine restricted diet. They cause pseudo-allergic reactions.

Dont know if this will help either of you with any of your symptoms but I've read posts from other people on various boards who said they had alot of problems that disappeared after they avoided Aspartame. I believe it because of the severity of my own reactions just from the chewing gum.

oh....I'm feeling very scientificness today so I may have more stuff to report later today if I get the time. ;)

Diet drinks are the worse and regular soda type drinks aren't much better.

You can do it.

      Great tips, Deb. Thanks.  What a pity that they no longer mark items as gluten-free. And it is even more of a shame that you must bring protein bars instead of the crew helping you with your needs. Are you planning on sailing Royal again?

      I've not heard of any issues with Primal Kitchen, but it certainly would be worth not using the brand for a while to see if this helps. Many people with celiac disease, especially those who are in the 0-2 year range of their recovery, have additional food intolerance issues which could be temporary. To figure this out you may need to keep a food diary and do an elimination diet over a few months. Some common food intolerance issues are dairy/casein, eggs, corn, oats, and soy. The good news is that after your gut heals (for most people who are 100% gluten-free this will take several months to two years) you may be able to slowly add some these items back into your diet after the damaged villi heal. This article may be helpful:

      We are off next week on our 9th RCCL cruise since our diagnoses.  I send an email to special_needs@rccl.com before every cruise letting them know that I am both dairy and gluten free and my husband is gluten free.   Unfortunately, with the new menus they introduced in 2023, they removed the gluten-free designation from each item on the menu.  Instead of having a dedicated person take gluten-free orders, it now falls to your regular wait staff.  Some have been great and some not so good.  We had a great cruise in May and hit it off with our head waiter.  She went the extra mile and ordered gluten free desserts that were not on the menu.  My problem arises from other food allergies.  I am allergic to dairy, beef, and several types of fish.  On those days my husband is a happy camper with a steak or salmon, veggies and a baked potato.  I end up not getting enough protein, so I bring protein bars.  I also bring snacks for the room. As long as the food is commercially prepared and unopened, you can bring it. Often the only dessert choices that are gluten free contain dairy, so I am out of luck.  But, if you are just gluten free, they have plenty of choices.  See the head chef in the Windjammer buffet and he will give you a tour of the gluten-free choices.  They usually have 2 gluten free desserts out at lunch and they are labeled gluten free. We have found that it works best to have assigned dining rather than anytime.  That way the waiters learn from the get go what our needs are, and we don't have to explain ourselves every night.  We also get a private table for 2.  I frankly got sick and tired of tablemates telling me a little bit of gluten would not hurt me.
