Ive only poped in and out, not read evey post in this thread... I hope I have been a help here... and in case your wonder I am STILL waiting for the information on the water filter in our fridge :( GOnna have to call them soon.

You have offered much scientific stuff about water filters and also technical support. :)

I have to admit I had a hard time with the water stuff cause I know nothing about water filters and just drink the bottled stuff. :(

However your scientificness re: ice cream making has been extremely useful to me and for that I am grateful. My tummy is full right now from my latest batch of apple/mango ice cream. :D

Also on a different thread last night I read a new person telling another that she would appreciate better language (not suggestive or??) Because her children read the forum sometimes, maybe we want to watch that too??

Okay, now I am really confused. To the best of my knowledge, this thread has been kept totally clean, both in the "suggestive" and "language" categories...... I am really getting fed up with someone taking offense to even the slightest suggestion of humour. Okay fine, if that's the way they want it, then as of this day, I will no longer mention the word "Altoids" again. Perhaps just the mention of that word sends their mind spinning uncontrollably????? Whatever....... <_< I sure as heck would like to know who mentioned this "little complaint" though, as right now I have a headache the size of Manhattan and would love to search for it, but don't have the patience right now.... Perhaps I should have waited to post at all, since I obviously got royally ticked off that that little comment, heaven forbid Rachelville is not smack dab in the middle of the Bible Belt <_<

Also, Rachel, I respect your comments as to where you intended this thread to go and where you hope to get it going again. I probably won't be in here much though, as I have already come to the realization that it doesn't matter a rat's behind what I eat, don't eat, drink, don't drink, etc. etc. etc., because no matter what I try leads to dissapointment anyway..... I actually feel like a hypocrite posting things like "Oh, try this, it is so helpful", when it is all a lie for me anyway. How can I be the epitome of the "proper celiac"? I follow the rules, try everything suggested, and still no change. I am starting to think that the less I say, the better, as I am certainly not a good example of "how better you are supposed to get" when you play by the rules...... The only way I should be able to give advice is with a disclaimer "Try this, it's really helpful (although it didn't do anything for me)"...........

Sorry for the rant, really bad day, very emotional with tears welling up right now. Gotta go. Oh, if this "person" still feels offended by the Rachelville Citizen of the Year Award, hand it over to Lynne, she will truly appreciate it and cherish it.......

Recently, there was another thread about smoking and Celiac.

I posted there that during the years that I smoked (16-24), I don't remember having any stomach issues at all. That was a carefree time for me--eating at restaurants and whatever I wanted. I had energy and could work all day and go out till the bars closed! I had stomach issues as a child, and also after age 29. The reason I quit was I became pregnant, and had terrible nausea. I've also heard that Celiac can wane during the teen years--so it could be that, who knows?

Another use for caffeine is that they use it in cellulite creams. They supposidly stimulate the skin.

I drink 3 mugs full of coffee every morning. But, I don't have any coffee after late morning. If I did have coffee later then that, then I have a hard time going to sleep.

I know I have been helped here in R-Ville and I Thank you all for your support. There have been a TONNE of posts here in the last week or so, but I thought that was normal.

Susan -- It would be a shame to lose your insight. Please stay.

All -- I find humour to be healing, and I think that has been the best blessing here. I LOVE the community wee have developed, and I think we are all, in some way better not only physically, but emotionally as well (sorry...getting sappy). I know I am.

Rachel -- Thank you for speaking up. But I don't think you've ever held anything back. (As far as I can remember from almost 400 pages ago.)

I know I will be here for the conversation, education and frienship.

Cher Cecile -- As far as coffee, it is a diuretic as are all caffinated drinks, and IMHO may help speed up the flushing of the impurities (in this case gluten) out of our systems.

I find coffee very hard on my stomach but helpful for headaches and since I don't take any painkillers coffee is my preferred headache remedy. :(

This was ME!!!! Someone referred to their insurance company with the word mother and the form of the "f" word that generally goes with it!! I was shocked the screens let it through. I said it nicely assuming it was a mistake, and it was. She had cut and pasted from her blog ... then she changed it. No big deal!! And you all know I've participated in semi-risque discussions, but this .... so, Karen, it has nothing to do with altoids or walking with dingos, etc., it was purely the mf word!! I laughed my butt off at the original Altoids thread!

Good job, Carla, that kind of language DOES need to be addressed.

Coffee....coffee does NOTHING for my bowels! I remember the longest stretch of constipation of my life, 1983, NINE entire days and no poop (in Italy, not eating enough produce, not drinnking enough water and on a VERY constipating medication)....I thought I might die. and drinking huge amounts of coffee every day....nothing. Many friends tell me this helps PUSH things along.....not here....but, constipation isn't really my problem from gluten....quite the opposite.

One day soon I am going to astound all of you with a great post, the scientifness of said post, unprecedented in these parts...... ;)

Thanks Rachel...I agree with everything you posted...that's one of the reasons I took a few days off from posting last week...it was just too much to keep up with combined with some of the stuff going on at work. Susan, you can't leave!! I don't want anyone to leave. :wub:

I have to admit that sometimes my eyes gloss over at some of the scientificness posts, but I'm glad they're here because at some point I'm going to want to read them...it's just so hard to find them sometimes. I just sometimes need cliff notes, lol.

Carla...do you think the problem was the sugar in the fruit or the mold?

I have suspected for a long time that I might have a problem with sugar, but not sure if it's sugar sugar or fruit sugar or both. I definitely have a problem with mold though--probably should always do an anticandida/antiyeast diet.

Wasn't as itchy today so that's a good sign...my prescriptions can't be filled until Monday--they have to order the creams because they "aren't used much and they don't keep them in stock", lol.

I have no idea where that quote came from as there is no name attached to it. I dont think that language has been a problem here at all....it also had nothing to do with my previous post. This thread has been CLEAN and its something that I'm proud of....its also been free of drama, arguements, and basically everything even remotely negative. I'm sad that everyone is getting upset now. :(

No Rachelville is not in the middle of the Bible Belt :blink: ...(I had to laugh at that). In fact I would like to keep religion out of Rachelville as it is something that always stirs up controversy and we are all from different backgrounds, beliefs, etc. Noone should be preaching religion here....its not even recommended for topic in the Gab Room and this thread is about food intolerance.

I understand your frusterations about following the diet and not getting better because that is what we are all dealing with. I dont think there is such thing as a "Proper Celiac"....some people play by the rules and it works with them....other people may have to follow a different set of rules to feel better. Clearly most of us here, on this particular thread, have followed the rules of "gluten-free" and we have found it not the complete answer...only a start...and a big piece of a larger puzzle. This is the puzzle we are trying to piece together on this thread. I do not feel like a hypocrite for posting what does or doesnt work for me. There is always someone who is going to benefit from something you have to share. I have posted things that I have discovered that did end up helping other people in their recovery....even if it didnt turn out to be my answer at least someone benefited from it. We are all here for the same reason and hopefully if we can keep helping each other we will get more answers. I can say that I have achieved the most success in regaining my health during the past 4 months just from the knowledge I've aquired on this thread. Its alot easier to give up when you're alone but when you have a group of caring people cheering you on and giving you that drive to keep at it and not give up.....it makes everything seem so much more abtainable.

I havent given up and I hope you dont either. Theres a reason why you are still sick. Maybe something here can help you...if not at least you will have support from people who know how you feel and you can share your frusterations and not feel as if you need to be a role model for all Celiacs. If that were the requirement for posting then I'd be the first one thrown out because I have many many issues other than just avoiding gluten. I dont think it makes me a failure in any way shape or form though. I just have more challanges to face and I choose to face them and find the answers to feeling better again.

Again....I havent seen foul language on this thread. I dont think we need to watch our language because I havent seen anyone cross the lines. Believe me if there were problems with language it would have been reported by now. As far as altoids...personally I have no problem with these kinds of jokes but whenever the subject comes up....things tend to go awry. Since I want the focus to be on health issues the altoid stuff probably doesnt help to keep the thread on topic and it just creates a stir. We dont have to walk on eggshells here though....some fun is allowed. :D

But, you've been traipsing along, reading with us, and you're lovely and you've got the meringues and tea....I remember our discussion about kudzu in another thread (but, we can take that discussion to my dingbat thread about my face peeling off)...you've got a lovely spirit and could add grace and wisdom to us, I am sure. REmember, Rachel said no one is kicked out. :) We just need to stay on track better.

BORDER COLLIES! Thats what I was thinking about!! I was telling somebody (cant remember who now) (maybe The Dave??) about these herding dogs that are really smart! I had a roommate with a border collie a long time ago....it was the smartest dog I'd ever seen. I couldnt for the life of remember the name of the breed....just like right now I cant remember, for the life of me, WHO I was having this discussion with. :blink:

Maybe if I stop eating all together I will start remembering things. <_<

I do appreciate your forgiving natures. Truly, I am often a paragon of scientificness-- my dad's a chemistry professor, so I grew up steeped in the stuff. I've even illustrated for Scientific American!

Definately the mold. If I take the time to make homemade juice or smoothies (and in that case I drink a lot more than comes in those little bottles!!), I have no problem at all. Peanut butter causes the same problem. This is, however, an item I can rotate in ... twice a week and I'm okay. My problem was I was drinking it every day.

I'm eating Ener-G bread now. Is this not the happiest and yet saddest thing both at the same time?? :lol:

Those of you who havent eaten bread in a long time will understand the "happy" part...anyone who has tasted Ener-G bread will know why I'm sad about it. :P

Its really too soon to tell if the bread will do me in...of course in typical "Rachel" fashion...I have eaten the whole loaf in less than 48 hours. :ph34r:

There are lots of good gluten free breads but I'm stuck with this one cuz its basically made out of almost nothing.

The Dave and I were talking about french toast last night. Breakfast food used to be my favorite and I loved the restaurants that would have breakfast available 24 hours. Awesome!! Anyways he dosnt know how to make french toast and asked if I'd make it for him sometime...gluten free of course. I told him I'd make his out of real bread and I'll make the gluten-free stuff for myself. No WAY am I gonna make someones first gluten-free meal out of Ener-G bread. :blink: Holy Cow...they would be traumatized by the words "gluten-free" for life! :lol:

I'll make his out of the big texas toast bread....perfect for french toast (what a lucky guy). I'll make mine out of the cardboard stuff that is "labeled" as bread but looks like styrofoam and tastes like anything but bread. :(

Rachel, have you tried baking your own bread? I haven't enjoyed the purchased breads I've tried but homemade ones seem better in general. I know you make ice cream...

Rachel, have you read the labels on Kinninnick (sp) bread. I buy that one as there is no corn or dairy in it. It has for the last ingred. listed as soy lecthithin (sp) But, since I only have 2 to 4 slices a week and some weeks none, I am not going to worry about that last ingred. Nothing else I eat has any soy in it. Some people have mentioned other breads that are suppose to be better then the K bread, but when I read the labels they is always one or two of my allergens in it. I also make french toast out of it for my husband and granddaughter. And I use the K bread for grilled sandwiches for guests. I don't know if it is doable for you, but thought I would mention it.

I've tried Kinnickinnick before and will have to look at the ingredients to see whats all in it. I think its got stuff I cant have though. I'm not so concerned about foods that contain dairy or corn anymore. I'm learning its more to do with the the chemicals in the ingredients themselves. I would worry more about seeing something like "sweetened with grape juice" or "corn starch" or "lemon juice" or "tapioca starch" or "baking powder" or "egg whites"and so on.

I can eat corn on the cob all day long...even some corn tortillas. I obviously eat my share of ice cream. I cant have corn starch though. Corn starch has sulfites I believe...also some MSG. The more processed the corn is the worse it becomes for me but I'm not intolerant to corn. I cant have most dairy products due to either histamimes, sulfites or msg. These seem to be the 3 biggest things for me to avoid.

Lemon juice is loaded with sulfites and so is grape juice and other fruit juices. Tapioca is high in glutamates (MSG). I'm finding I cant tolerate the foods once they become processed and have even small amounts of MSG and Sulfites.

These are the substances that seem to trigger a histamine response for me. Then I also have to watch out for the foods that are naturally high in histamines or that cause a release of histamine. Egg whites is one of the ones that causes a bad histamine reaction for me. Its hard to find "anything" processed that doesnt have something bad for me in it.

I bought a bread maker....was all excited about it awhile back but my diet is so restricted right now I cant really make a decent bread. I havent used the breadmaker yet...its still in the box...waiting for me to get better. :)

Anyone remember me having problems with lettuce last week? Lettuce of all things....supposed to be healthy right? Anyways again, in typical "Rachel" fashion....I bought more of it. :o

Guess what...same thing happened...I reacted and felt like my head was about to explode. :(

I *thought* it was the Auxigro but now I'm thinking its sulfites. I re-read my "things that contain sulfites" list and packaged salads or convenience salads contain sulfites. I guess I missed this one before...or maybe I forgot...anyways its causing a histamine response so I'm done with the packaged salads. I stopped eating them awhile back because I was feeling bad all the time but I was trying to add them back in. Oh well....I never ate salads before I got sick so I can do without them now...and frankly I'd rather eat ice cream. :D

Ice cream = weight gain.....I cant get that from a salad. There is a method to my madness. :P

Have you tried corn flour or corn meal, & if so do they bother you? (If you can eat corn tortillas it sounds like they might work-- authentic ones are made of masa, which is corn flour.) I've been contemplating trying to come up with a sandwich bread made with corn flour-- I love cornbread but it's a bit crumbly for sandwiches.

Can you do xanthan gum? I know it's a problem for some. Are you off yeast?

If you like lettuce, have you thought about growing your own? You'd be sure of its unadulterated state that way. I'm beginning to sound like the Whole Earth Catalogue, here... but you're too young to know that one!

Leah...I seem to be fine with masa. I dont think it bothers me. Its mainly the sulfites I think. My corn tortillas have lime in them. Not sure if its fresh lime or lime juice??? Too much fresh lime would cause a histamine reaction because its citrus and lime juice would have mucho sulfites which would also cause a histamine reaction. I can eat them as long as I dont overdo it and overload myself....at that point I'll start reacting to even the tiniest amount of any chemical in any food.

I never tried corn flour for baking anything because I cant use starches, yeast, sugar, honey, eggs, xanthan, etc...its kind of pointless.

I cant say for sure all of these bother me. I'm not 100% sure about xanthan, potato starch or yeast. I'm just avoiding them until I figure enough stuff out on a limited diet and then I'll try other things. If I try baking right now I'll be adding too many things in to know what works and what doesnt. I've went on baking binges several times and I always end up paying for it.

Rachel, I got the loaf of bread out of the freezer and tapioca starch is listed, plus whole eggs. Sorry. I cannot have anything with any corn in it as that is how I got so sick before the pneumonia. I can have a little soy and a little casein on rare occasions without much wheezing, but the corn does me in immediately. Maybe there is a recipe for a corn type of bread that you can make in the bread maker.

The first loaf of bread I bought was the ener g bread. My husband said that it tasted just like cardboard. I then started doctoring up mixes for the bread machine until I found the K bread. It just is so much easier for me since I don't eat that much bread.

      Great tips, Deb. Thanks.  What a pity that they no longer mark items as gluten-free. And it is even more of a shame that you must bring protein bars instead of the crew helping you with your needs. Are you planning on sailing Royal again?

      I've not heard of any issues with Primal Kitchen, but it certainly would be worth not using the brand for a while to see if this helps. Many people with celiac disease, especially those who are in the 0-2 year range of their recovery, have additional food intolerance issues which could be temporary. To figure this out you may need to keep a food diary and do an elimination diet over a few months. Some common food intolerance issues are dairy/casein, eggs, corn, oats, and soy. The good news is that after your gut heals (for most people who are 100% gluten-free this will take several months to two years) you may be able to slowly add some these items back into your diet after the damaged villi heal. This article may be helpful:
