ICeliac Soda Bread (I named it :D )

4 cups brown rice flour

1/2 cup or 1 cup sugar (depending on how sweet you want it)

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1/3 cup of unsalted butter, melted

1 1/3 cups buttermilk

1 large egg, slightly beaten

1 cup of raisins (optional)

Brilliant! I've already printed it out! can't wait to try it. I notice it doesn't have xanthum gum--it doesn't need it? Also, I'm running low on brown rice flour--do you think 1/2 brown rice flour and 1/2 white rice flour would work? I've missed making soda bread so much, and it never occurred to me to try rice flour.

I never really determined 100% that I'm gluten intolerant. I just have my Enterolab results showing positive IgA and Ttg....plus 2 intolerance genes. The GI doctors say I have it based on symptoms and weight loss alone + improvement with diet changes. I dont like to assume anything when it comes to my health so I need some kind of proof w/out putting myself through a challenge. There is still some controversy about Enterolab so sometimes that weighs on my mind as well. The crackers thing would be enuff to set aside any lingering doubts though. Plus if gluten causes what happened to me this morning and that one other time...I'm more scared of it than ever. :o

Why don't you think the enterolab tests are on the up and up. From everything I've read, they are good. I had my family tested with no info on their sheets except for being tested because of my allergies. We all (except my hubby) tested positive for positive IgA. We all have at least 1 celiac gene. I never had any obvious problems but I'm sure I would have had I stayed on gluten for who knows how much longer. Also my baby's eczema cleared up which is testament to me that he had a problem.

HOLY CRAP!!!!!!!!!!! The sheriffs department just called and said it was a RED ALERT!!!! MANDATORY EVACUATION .... TO GO!!!! Intesity and storm surge will hit at 2am and the hurricane will hit at 9am!!!!!!!!

I am freaking!!!!!!!!!!!!!!! And NO our parents are not going, but with 40,000 people trying to get out of here we wouldn't make it out anyway.

Oh Floridian! Praying really hard right now! Okay, prayer said. Did the sheriff's department give you any suggestions on what to do since getting out would be nearly impossible?

It was the Bay Bridge that got damaged...a section of it collapsed. In Oakland the Cypress Structure completely collapsed onto the bottom level...I think thats where most deaths occurred. I still remember seeing the pictures. It was really bad.

Well guys..I didnt make it to work this morning. I cant believe it. I woke up, felt normal while I was in bed but when I got up to shower I was sooo nauseaus, dizzy, unfocused and I couldt keep my balance. I couldnt get ready at all. It was really bad I was over the toilet thinking I was going to throw up. I'm someone whop never throws up though so it didnt happen. My heart was beating irregular too.

This happened once before. It was when on my 4th day of Metronidazole and woke up feeling exactly like I did today. Jersey will remember cuz she called to see if the meds were gluten-free. Both that day and today after going back to sleep I'm alot better. Still a little dizzy and wobbley but nothing like earlier...I called my work and I'm gonna go in now. Better late than never.

Jersey, one thing I never mentioned. The last time this happened the day before I had went to a baby shower. I was there early and saw my friend prepare all the food. She cut bread, fruit, put out crackers, etc. Later on I got really hungry and nothing was safe to eat but I went for the watermelon cuz I figured it might be ok. I knew it was cut on the same board as bread and handled with the same hands that cut the bread but I didnt want to be paranoid. Also, I was thinking the bacteria infection could be my problem and not so much gluten since I dont have a celiac gene. I guess I wasnt thinking cc could hurt me. Anyways I felt really sick that night and got really depressed...crying and all that. Next morning I couldnt go to work cuz I was so nauseaus and dizzy.

Yesterday while I was eating my crackers I felt a blister appear on my tongue. I didnt want to believe it was from the crackers and I didnt stop eating them. I dont ever feel funny eating the crackers so I thought maybe the blister had already been there and I just only noticed it while eating the crackers. Anyways I've eaten so many crackers and didnt get this messed up but I wonder if some packages could be more contaminated. This was a new package.

I'm thinking this may be what happenes to me if I get glutened. :unsure:

If thats the case...I'm doing pretty good on the diet cuz its only happened twice now in 1 year.

If this is a gluten reaction then its delayed and I really get no indication while I'm eating the food except for that blister that happened to appear. Lots of times I get immediate reactions...both oral and also pressure in my head...I think these are from sulfites or msg. If I eat coconut or something like a Lara bar....my tongue will feel funny immediately.

I'm gonna take a break from the crackers obviously. I felt like I had a huge hangover this morning...the room was just spinning everywhere. It was crazy. I couldnt stand up cuz of the dizziness.

My stomach is very loud right now, I have gas, been to the bathroom a couple times already and my mouth is super dry. Does it seem more like I got glutened?

Also Jersey, does it seem like that time I was on Metronidazole I actually could have glutened myself at the shower?

Another thought. Could it have been from smelling the hairspray with Wheat in it? Can it be inhaled through your nose? :unsure:

I am sos orrry to hear you had such a terrible reaction. It sounds very similar to the reactions I get from things. I was having mouth blisters to and when I finally started getting more serious about my food diary I was able to pinpoint what was causing them. I hated it becaus eI've had to cut out one of the few things I thought I might be okay iwth. Which are the crackers you had a problem with because there is one brand of rice crackers ( well at this point I can't have any of them) but when I could that gave me mouth blisters. I wonder if its the same one.

That is a major symptom of mine, difficulty swallowing, reflux, esophagial (sp?) spasms, and it has gotten worse with time. When I have eaten something I react to my entire digestive tract from the mouth all the way to the other end is inflamed, tissue extremely irritated, and all of these above mentioned symptoms come on really strong. I never have diarrhea, I get constipated and massive face and belly, and all over body swelling. Along with a myriad of other symptoms of course- but definitely a major piece of it is digestive fallout.

This has been really bad for me the past 2 weeks after all that gluten I ate in the last month. I'm still trying to pull myself out of that whole. The thing is I can get all these symptoms on gluten-free food as well, so for me I think there is something else to it and that gluten just happens to be the doozie of them all.

I have not been diagnosed officially with celiac either, nor have I had any of the other standard accepted tests done, but I have been researching a lot these last couple weeks and I think in my mind it is very obvious that I had celiac a long long time ago and was presenting symptoms. I think why I got so full blown sick 14 years ago is because my body had been slowly breaking down over a period of years and then it just hit me like a ton of bricks.

I'm going with it's going to get weaker, the power of positive thinking I'm sending your way Floridian, and all your family and neighbor Floridianites :lol::lol: Or is it subliminal thinking?? Please be safe!

You obviosly have alot of the same problems I have , wow. Before they diagnosed me withany food allergies I was diagnosed with reflux and esophegeal spasms. I aalways felt like my throat was closing and had so much difficulty swallowing. Doctors thought I was bonkers. They ended up giving me 2 esophogeral dialations to try to stretch my esophogeus but they did nothing and the throat closing was as bad as ever. Now /i only get it when I eat the wrong things. But this is often since I still seem unable to find out what the "right " things for me are.

Didn't some people leave earlier today? Couldn't you take the smaller highways to I75? Isn't there anyway out of there? How long have you lived there? Do you know some side roads that would get you into safety without so much traffic? Are you near state route 491? Could you take 491 to 200 to I75? or 491 to 41 to 484 to I75? or 491 to 41 and staying on that one for awhile before crossing over, like 121 to Gainsville. I would think most people would be heading east, couldn't you head north for awhile and then east?

I know...so many questions.

I just read on weather.com that they are predicting the hurricane will hit ground in Taylor County. Doesn't that put some of the danger off of you? It's the storm surge that I would expect to be the most problamatic if the hurricane makes landfal where predicted.

Did you ever watch Mister Ed? We like the old time shows. Mister Ed, Andy Griffith, Lassie and Little House among a few others. Lassie to the rescue! She'd go through anything. Wouldn't you like to have a Lassie? My littlest one, Seth, loves the theme song to Mister Ed. He squeals and laughs with it. How 'bout Barney Fife directing traffic. :o You for sure wouldn't get very far then! Oh yah, how about Flipper to the rescue! I watched that when I was younger. You can grab onto him and he'll swim you through all the waterways further inland to safety. :P If it wasn't high winds Mister Ed could teach you to surf. :blink:

I'm playing with the baby in between typing. He's a bundle of laughs. :lol:

Did you get your parents and in-laws? What do you guys do to get safe when the storm hits? Do you have a special place you go to...like one of those storm rooms? Sorry so many questions...I dont know about hurricanes cuz I've always lived here in CA.

Oh...I would sooo love to be rescued by Flipper! I love dolphins...I've always been fascinated with them and always wanted to swim with them. My ex boyfriend was wanting to take me to Florida to a place where I could swim with the dolphins...I guess he was planning it out but I broke up with him so now no dolphins. :(

I'm signing out for the night. I just wanted to say I hope you guys have a safe night tonight and I hope to hear a positive update when I sign in tomorrow. I am continually praying that it will change course or lose strength as it gets closer and closer to you all. I have a lot of the same questions as Rachel, do you have a plan, where do you go, etc.? I would be scared out of my mind, mother nature really does scare the crap out of me. I just get tornadoes here and the high winds have me shaking at the knees, I can't imagine throwing the ocean into the mix. I would like to say to you, like in the fine film Forrest Gump, whatever happens just RUN! RUN Floridian, RUN!!! :lol::lol: ..... But I know that isn't very realistic.

Its not that I dont think they are on the up and up...I think Dr. Fine is an amazing man. I've always spoke highly of Enterolab on this forum and I've read everything I could find on the stool tests with nothing to say that they are not valid. Some doctors support the tests and others dont. I think there is still alot to learn though. The majority of people who get tested through Enterolab come back positive. What does that mean? One of my doctors believes that there truelly are that many people reacting to gluten...at least 60% of the population. I have so many problems....its not like I went gluten-free and I recovered because I didnt. It just leaves me wondering if gluten intolerance is really to blame...is something else going on....do I even react to gluten? These are all the questions that go through my head. Dr. Fine has never published his studies for peer review. Until he does this (I believe he's working on it) we have no way to know for sure how valid the tests are....unless of course you benefit greatly from the diet alone. I did not benefit from just removing gluten. I had to remove ALL processed food. It could be that gluten caused a great deal of damage as my doctor tells me but its just one of the many puzzle pieces I'm still trying to figure out. I will not go back on gluten but I'd like to know for certain how much of a role gluten played in my illness.

I'm just one of those annoying people who needs to know EVERYTHING. I'm not satisfied with having unanswered questions...I'm like this in every aspect in life. :rolleyes:

I do get reflux when glutened, and the difficulty swallowing comes back--I had that really bad before I was diagnosed. The dry mouth is also a big one for me.

Well it seems like we all get the swallowing problems from gluten....and the reflux too. Darn food intolerances! It still boggles my mind....like how did this happen?? Tonight I was checking out groceries and I'm like "I used to be able to eat that and that...and that." Now I cant eat anything....what the heck? How does that happen :blink:

Rachel.... I think your cyst has ALOT to do with it! And I have strange problems with certain foods too, but I do believe you're on the right path and when you figure it out, you will be my hero!

I love your posts....soooo uplifting...even with all you're going through. I was thinking about the cysts again today. I cant wait to get them off. If they are still there next time they check I'll know for sure somethings not right about it. The pain is not as bad the past couple days but its still there. I usually feel it alot when I get in and out of my car for some reason. I wish my appt. with the obgyn was sooner than 4 weeks away though.

I'm gonna go to bed so hopefully when I wake up it'll all be good news. Thats what I'm praying for. The storm to be over and for you guys to be untouched....safe and dry. Oh...yeah and no power loss! We need your uplifting and humorous posts on here! :)

There is nothing wrong with that. If you had that bad of a malabsorption problem I would think that gluten or soy was behind that. Does casein start out eating your intestines or is it just the other two?

Lost power last night, not sure for how long, me and Tony went to bed and slept a few hours. It's 5:30am and we're inbetween squalls so it's not too bad right now. Ground zero now is Cedar Key which is right up US 19, not far from us, all hurricane warnings are still in effect, water is rising, outside it's pretty soggy but no flooding. Haven't seen US 19 on our local stations yet so don't know if it's under water as of right now.

I can't believe how calm you sound and god still have good humor. I have so much respect for you!!! I am in New York and all the weather reports seem to be conflicting. When this is passed- and I know it will- I amsending you a care package with some homemade crackers and bagels- Don't worry no guar, xanthium gum of any kind!!! Hang in there and keep that great spirit intact!!!

this is exactly how I am - I can't believe I used to ewat everything and now everything bothers me. Sometimes it just seems impossible- and that is usually when I eat soemthing I shoulden't. It is so crazy though!!!!

Poor Andrea..... she stayed up all night with me until I lost power just talking, I felt like it was my only communication to the outside world... :huh: thanks again Andrea!!!

Eye is making landfall as I type, we have a pretty intense squall moving throught right now, so far, we lost a small tree. Waiting for word from the County on the damage here but probably won't hear until it's safe for the crews to go out. 21,000 people are without power, we're lucky our power came back on but all I can think about is how many of those 21,000 have dietary needs or need insulin or have major health problems. Friends of ours, the bottom floor of their home is under water, as soon as it's safe, Tony will go out and check on neighbors and friends and family if we can't get a hold of them by phone.

Yikes...where did the tree go??? :unsure: Hope that isn't sailing around, lol. You are good neighbors!

Which are the crackers you had a problem with because there is one brand of rice crackers ( well at this point I can't have any of them) but when I could that gave me mouth blisters. I wonder if its the same one.

The crackers are Edward & Sons Brown Rice Snaps.

This is what it says on the package.

For our customers with sensitivity to wheat or gluten, no wheat is used as an ingredient in this product. However this brown rice snaps variety is produced in a facility that may manufacture other products which do contain wheat.

Are these the same ones you were thinking of? Do you think the chances of cc are high with this product?

awww your poor daughter, probably grouchy cuz I kept her Momma up all night!

I wasn't up any later than she normally keeps me up. She woke up when I was getting ready to go to bed so I stayed up longer. She doesn't like to go to sleep without someone being up.

She's being grouchy mostly because the baby smiles and laughs more with my oldest son than with her. I told her I don't control how the baby responds. She doesn't appear to believe me. :huh:

She's cheered up now. She and my oldest son are outside playing.

I bought cows milk for the kids to drink and my daughter told me Micah is drinking the Rice Dream. I had been buying that since it just had the barley enzyme but since we found out we are intolerant my husband has been working on finishing it. Micah is the one that has mild malabsorption. :(

Uh oh, baby fingers are near the pretty green light that will turn off the computer. :blink:

      Thanks. I ve joined coeliac uk but found them particularly unhelpful - they told me to eat gluten for 6 weeks then have an  endoscopy! I m actually a retired hospital dietician so pretty well know what I m doing…… Louise

      You are very welcome.😊  Do keep posting if we can help any further, and also if you aren't a member already I would recommend joining Coeliac UK if only for one year - they produce a very good gluten-free food and drink guide, a printed copy and also an app you can use on a smartphone which I am told is very helpful when one shops. I think the one thing I would say is be extra vigilant when eating out.  Never feel afraid to question the service staff.  I think most of my glutenings have happened away from the home.
