i'm not sure if i really want to stay off gluten until i am all better. I am still having a really hard time with no bread. that is really the only problem that i have with the no gluten thing.

Buy Annalise Roberts' Gluten-Free Baking Classics. All her recipes are amazing--cakes, cookies, and BREADS!!!! She uses a mix of millet flour, sorghum, potato starch, cornstarch, and tapioca starch. The recipes are really easy (no kneading!!!), and you can double them.

The subway sandwich bread recipe is unbelievable--it tastes kind of like a really good rustic European bread--nice crispy crust, and soft chewy inside. It's better than many wheat-based breads I've made!

There are some really good recipes on her website, too: www.foodph.org. I think her chocoate chip cookie recipe is on there.

You can do it! (Besides, you have to stay off gluten forever, not just til you're all better, right?)

Hi everyone, I'm BAAAAACCCCKKKKK! :lol: Got in at 2:00 this morning, and got to bed around 3:00 a.m. so I'm just hanging out...only got about 3 hours of sleep, but apparently they were good ones cuz I don't feel that bad today. I have been kicked off for awhile and just got a password from Scott that works!! Got on for 1 or 2 days a week ago but soon gone. I am lots better but will take some time to get more energy and more pills and DR. visits. Went shopping Wed and Friday, wore me out but sure was fun. :D evie

Andrea, I don't remember when we stopped doing shots. I know Sadie is the only one who doesn't have any. Morgan and Luke got all their younger shots, but not the boosters in sixth grade, or whenever you're supposed to get those. I don't remember Chloe specifically.

All interesting thinking though. Has anyone had mercury amalgans removed and did you feel better ? My Dr wants me to do that - but am petrified of the dentist :o

Several people here have...I'm going through it now. I've had two of four quadrants done and will have the other two done in January (my dentist divides the mouth into four quadrants and does all the amalgam in the quadrant, so last time I had two crowns and two fillings done and the time before that had one crown and one filling done). I haven't noticed any benefit yet of course, but also haven't felt any negative affects either...make sure your dentist uses safety protocol when removing. Mine uses a "dam" to protect your mouth (and prevent you from swallowing) the amalgam "shavings" and uses a really powerful vacuum plus cool air while he is removing them. I won't lie and say it's been pleasant though. <_< I also don't like dentists much, lol. Still I think the benefit in the end will be worth it. Welcome by the way. :P

I've been ck'n on you hear but not posting.

we had company fly in for 9 days 2 of which i spent in bed. they were the best medicine for me and hubby took them out for fun while i was in bed.

my internist couldn't see me as he'd left the late in the day i called them but they got me in to see this lady dr the next day early am.

my internist is seeing me monday morning so hope he will be resecptive.

he's up on main stream lymes..but not sure about alternative med...he really likes my chiro tho so that's a plus.

you keep up the good fight too honey.

i just get weary but don't we all.

OMGOSH :blink: I've been reading for hours, lol. I've prepared and eaten lunch and prepared and eaten dinner and prepared and eaten my evening snack, lol. I've indexed pages with links so I can go bookmark them when I get to work on Monday.

My vacation was wonderful and I took a very modest (if I do say so myself) amount of pictures of the cruise and Disneyworld. The cruise was wonderful...everyone was very helpful in making sure I could eat without getting sick. One of the cooks from the buffet, even noticed that I was looking at all the selections but not taking anything, so he asked me what I was looking for...when I started asking about ingredients, he said he would go back and prepare something especially for me. He did that a few times throughout the 10 days. Even some of the "lesser" cooks noticed and looked out for me when I ate at other places. The panama canal was really fun and interesting...we watched the working from several different places on the ship, but perhaps the most interesting was on a lower deck where when we looked out the windows just saw the walls, then as the lock filled with water, it was like being in an elevator until we eventually saw sky. On our balcony we could see it all, but didn't get that elevator affect as much, lol.

The weather was VERY hot and humid and it rained several days. Rachel, you would have loved the heat, lol.

Disneyworld wsa fantastic too. We stayed at one of the Disneyworld property hotels. This place didn't have a sit down restaurant, but had a food court with mostly "fast" food type selections. I was very worried about eating there, but on arrival at our hotel, we decided to check it out. I figured I'd just have a hamburger patty. But I saw on the menuboard a notice saying to ask for help with special diets, so did that. One of the cooks was there, but they called out the chef, who went over all of my restrictions and verified that the hamburger and the french fries were gluten free. They prepared a hamburger patty and french fries which they prepared in the back to make sure it wasn't cooked on anything that had had gluten on it.

The next morning I went up and asked for help, so they called out the chef (a different person). I told her my restrictions and asked if there was anything they could do for me...OMGOSH!!!! She said for breakfast they could make me gluten-free/dairy-free pancakes. And not only that but she told me they could also make waffles, they had gluten-free hamburger buns and for dinner they could do gluten-free pasta, dessert gluten free brownies, etc. So the next morning I went in and asked for help, a different chef came out, but they had me on file cuz the first chef wrote it all down. They made me the BEST pancakes!!!! I haven't had pancakes in years, and they just tasted SOOOOO good. She verified that the bacon was gluten-free and even gave me two little jars of pure maple syrup to make sure it was gluten-free!

For dinner that day I had a real hamburger on a gluten-free bun, lol. AND FRENCH FRIES!!!

I made it through the entire vacation with no serious food-related issues. I did gluten myself once on the ship, but fortunately it wasn't a huge amount...there was a mustard coating on some roast beef which I should have verified had no gluten--but didn't...fortunately I didn't eat much. The next day they had a similar dish, and noticed that they said "with bread crumbs" (I think they were labeling for me). I only had a tummy ache for a day though so not so bad. They got so that when they saw me come through the line they would automatically tell me which dishes had butter or gluten, so I wouldn't take it...by the end of the cruise, they had more selection made with oil instead of butter and at least one selection without gluten!!!

Rachel -- going way back, I'm sure you'll make it one day to Disneyland and I'm sure you'll be able to eat there!

LOL! I joined Mensa, but didn't renew my membership because it seemed that way to me, too. :lol: Now that the Lyme has become active again, I think my IQ has dropped about 50 points!!!

Your test could still come out negative. It's the sickest people who get the false negatives. Check out www.lymephotos.com. They talk about salt/vitamin c. I had been doing this when I took my Lyme test .... who knows, maybe it's what got my immune system going enough for the test to be positive. I think it makes me herx, but I feel so bad all the time I can't really tell if it's a herx or I'm just sick. It was the salt and C making me "sicker" that got me to get tested for Lyme in the first place.

Oh, and the picture on the bottom left ... that is EXACTLY what the floater in my eye looks like. I not only feel bad, but get to look at those blasted bacteria all the time!!!

I feel the same about Mensa, but admit it - it was fun to be able to join! I looked at the pictures the other day - enough to make you want to scrub your insides with steelwool. I have been doing a haphazard salt/C for a while - but the C gives me terrible canker sores. I have the grossest floaters all of the time lately.

I think I am in constant Herx because of the steroids and antibiotics. Steroids push my immune system down while the antibiotics, salt/C, sugar-free, gluten-free, corn-free is helping me to fight. I had to be on major doses because they thought my sinuses were full of fungus - I am going off them but it has to be a slow taper, or I think it will break my adrenal glands more.

Something happened today! Only on 30mg predinisone instead of 60mg. No gluten for a while. No sugar for a while. No corn recently. No MSG recently. Less Dairy. Hot Baths. Had a good Night Sweat during the morning- which I think means my body is cooking the bacteria. I thought I was going to die yesterday - today I think my immune system is winning!!!! Man, I am balanced on a fine line. Will be off steroids in about 5 days. Maybe no need to go to Mayo after all but I will pursue the Lyme test further if it is negative.

Oh, I have lost many teeth - maybe from celiac disease, but I am having my amalgams removed soon too!

I think this whole OMG post can be life-altering in that several dedicated people seem to be figuring out un-figurable stuff just by the back-breaking trial and error.

The gluten-free subway sandwich bread really IS a multigrain bread. It just so happens that none of those grains are wheat! (Millet and corn both classify as grains, don't they?) I'm not kidding, even my gluten-eating family scarfs it down every time I make it!

I can't remember--did you have any bloodwork that indicated a problem with gluten?

Since my test was positive, I can only assume that my immune system is in good shape ... so I think I'll try the natural stuff first, and if I can't overcome it, then I'll have antibiotics for a while. I hate to hurt my "healthy" immune system with antibiotics if it doesn't need the help.

I wouldn't assume that! I fully believe you need antibiotics in the beginning or you will never get well. Just my bias. I've seen alot over the past 6 yrs.

Here is a big question for you all, which I am sure you've covered before, but I haven't heard the answer...

If you have lyme disease, and you have a major episode(s) from late stage neuro-LD which causes you to have all sorts of complications including becoming gluten-intolerant, if you can rid your body of Lyme, Mercury, Candida, Allergans, will everything else resolve? Like celiac disease?

Anyone know anyone with any experience with this?

Hello to everybody else! I am SO behind......need to catch up. :huh: Life is good here, though. Work's good, life is fine, and the poops are solid. ;) You know something, I now realize that I was getting frequently glutened over the summer.....was just so sloppy - I've been SO careful and the poops are the proof - - totally solid and normal. Just thought I'd share. :rolleyes:

      Hi Scott, I thought I'd be like "most people" and could go back to having dairy once my villi had healed.  But after dealing with neurological problems that cropped up long after my gut had healed it turned out that this just wasn't true.  I have no idea if celiac influences pancreatic enzyme production or if it's the other way around--for some of us-- but there is a very real relationship that isn't being discussed with patients.  The article just reiterates information that can mislead you if your real problem is pancreatic not villi related.

      Welcome to the forum, @Amyinwyoming! Answers to your question that you might receive may not be helpful to you as an individual since sensitivity levels vary significantly within the gluten sensitive/gluten intolerant/celiac community. The other complicating factor is that low levels of gluten in a product may not cause obvious symptoms but may still generate low level inflammation in the small bowel. When in doubt, it is best to pass on the product. I'm not a particularly sensitive celiac so I might allow myself to eat something at a guest's house that was made from a food product with the kind of disclaimer label you describe but I typically shy away from buying them or consuming them when I have a choice.
