I Made Up A Good Porkchop Recipe!

My hubby and I are both trying to lose weight. He loves fried food, but I'm trying to bake as much as possible. I had these thin-cut porchops in the deep freezer...the kind that are cut super-thin and come about seven or eight in a pack. Anyway, I wanted them to taste (and have the consistancy) of fried chops.

So, here is what I did; And they were great! :)

Ingredients:

1. Pack of thin sliced pork chops (I think all of mine were boneless).

2. One jumbo egg (or two small eggs)

3. One tablespoon butter or margerine

4. Approx. 3/4-one cup of gluten-free flour (I used white rice flour)

5. Spices: I used garlic powder, onion powder, oregano, salt, pepper

6. grated kraft parmassean cheese

To bake:

1. Preheat oven to 350.

2. Lay out chops on aluminum foil on metal cookie sheet

3. Stir egg, margarine, flour, and spices in bowl (it should make a semi-thick paste/adjust flour until right)

4. Spread mixture (only on top) of chops and sprinkle with more pepper and parmassean cheese

5. Bake for 30-45 minutes or until dark brown and crispy

These turned out crispy on the bottom and crispy on top; just like they were fried! You can choose your own spices for your family's taste. Hope someone enjoys! :) -Julie

Sound good, but you can also fry in a pan with corn oil and get the same results. Baking is good for weight loss.

Good for you, experimenting can be fun.

I'm trying to experiment with cooking healthy (or healthier) meals. I'm not usually crazy about porkchops, but the spiced crust on these was different and good. :) I'm trying to show my hubby that everything doesn't need to be fried to taste good. He likes baked french fries too B) (I'm so glad because that is a major source of fat/calories when fried). :ph34r: He is always ordering the "Biggie" or "Mega" sized fries when he's eating away from home at lunch...so I'm happy he likes my baked fries. One small victory! :D

That sounds great Julie.

Another idea for those of you living in a hot area ... we are in BC, and it's been hot here! :o

A package of pork chops ... depending how many are eating. And the cheaper thicker cuts are good.

A quart jar of tomatoes ... A couple of cans will do

Potatoes, how many you need to feed everyone .. peeled, and cut into large chunks

Carrots ... if they are right out of the garden don't peel (same goes for potatoes), cut in half length wise, then half cross ways.

Mushrooms .. enough for all

Onions

Brown pork chops in the pan with oil, ( I use grape seed oil) You don't need to cook the pork chops through, just brown.

Saute the mushrooms and onions in the pork chop pan with the drippings still there.

Now ... take a roast pan (either with a lid or tin foil to cover) pan to be the size needed for all the food :lol:

In the bottom of the pan put your potatoes and carrots (you can also add other vegies, but none like broccoli that go mushy)

On top of the vegies put your pork chops

Then top with mushrooms and onions

Pour the tomatoes over everything

Put the lid on the roast pan

Now here comes the "it's too hot to cook part"

Light your BBQ ... put the roast pan in the BBQ and turn it down to it's very lowest setting.

Check it once in awhile, but generally it cooks quite nicely on it's own. Keep in mind that BBQs cook faster than an oven. Just ajust your time to the amount you have in the roaster.

There you go ,, keeps the heat outside and you have a lovely meal all in one pot. Great for company too :P

Best of all, the pork chops end up "melt in your mouth" tender

Oops, I forgot ... salt, garlic and pepper

I have the three all in a grinder and put it on the chops as they are browned, again on the mushrooms and onions.

We don't eat chops that often either, but it's a nice (and fairly easy) change.

I'm always up for new gluten-free recipes!

Judy's rice

2 C Goya Jasmine rice..long grain

3 C gluten-free beef broth

1 stick butter

1 onion

1 C mushrooms

Saute' the mushrooms and onions in the melted butter in the saute' pan.

Put in rice and brown it

Add the broth. Bring to a boil stirring constantly

Put on simmer and says it takes 15 min with lid on (only took 13 min)

5 min to set up

Add fresh ground pepper to taste.

or I have a bean pot and will do this same recipe and put in bean pot and put in oven for 40-60 min and it's ready and can sit in pot while doing other stove cooking.

i'm looking for the ham on BBQ reecipe that i found and loved been years since we did it.

i can't find it so will have to type in. will try to post later. should post to vincent as he know's i can't cook haven't talked to him on line for soo long..haven't been cooking since i've been laid up.
