My Japanese boyfriend believes those sauces are thickened with flour, but he is not 100% sure.

Most stuff has soy sauce either in it or is cooked in a wok which isn't washed after cooking it so this tends to miss out the theortically XXX is gluten-free.

Its a shame because a lot could be gluten-free easily but in my experience the cheaper places just don't take the trouble. If you go to a decent Chinese resto it will be regional, its a huge country and dishes will be specifically from that region with perhaps a passing hint to others.

The other thing to watch out for is that many of the sauces themselves (such as say Oyster) can have soy sauce in them .. so it might not be obvious.

:D My local Chinesse restaurant says that the white sauce is gluten-free. They take great care when I order, they wash the wok and the utensils used to make my food. I've thankfully never had a problem.

@CeliacPsycho246, You might try cutting out dairy.  Some of us react to Casein, the protein in dairy, the same as to gluten.

Yep, the edit window times out very quickly. It's okay. I got a good laugh out of it.

I hope you meant "pen pal" instead of "paypal".
