Need Help With Carbs

My diet is sadly lacking in the carbohydrate department. I used to eat different types of bread but the gluten-free stuff available here is dire. Pasta, rice and potatoes make me feel bloated and uncomfortable even in small amounts and I

Fruits and veggies are carbs. Starchy ones like corn and peas especially. Have you tried corn tortillas?

I eat loads of fruit & veg but thought as they were in a food group of their own apart from carbs that they didn´t really count towards your carb intake. (Dumb huh?)

I´ve seen the corn tortillas but wasn´t quite sure if they were safe from cross contamination - I´ll give them a try though.

You don't need to eat a lot of starches and sugars. Fruits and veggies should give you everything you need.

If you are looking for grain-related carbs, then remember that oats, barley, wheat and rye, and kamut and spelt, only touch the grain surface.

amaranth, quinoa, rice, buckwheat, corn, potatoes, teff, and so forth are all grains, too.

Hi Debbie, I am on a healing diet of no grains, beans, corn, dairy except sour cream, cream cheese, yogurt, all regular not low or nonfat, and no nightshades. Oh yea, no soy. No sugar ( that one I mess up alot) - just had some semi-sweet : <_< I eat everything pretty much else. steaks, chicken, seafood, ground chuck, eggs, veggies. I eat salads alot and nuts. I usually eat at least 5 veggies a day and 2 or 3 fruits. I don't eat grapes now. they just don't taste right anymore. I try to vary the foods as much as possible. Used to eat kidney beans, potatoes and tomatoes alot but now I don't care for them much. As things appear to heal I will gradually add these I have avoided back in. I did have rice tonight because I went to PFChangs ( a local eatery) but that is the only times I eat rice. :)

      Hello, I was very stick,  with flu like symptoms, but my virus panel came back negative and we couldn’t figure out what’s going on. The doctor then added a celiac panel.  Has anyone ever had such a dramatic change?  What are the odds this is true celiac I am going to have an endoscopy, but it’s expensive and I just feel like why can’t the labs be enough?

      Eating out in general is full of risks, but this article may help:

      This kind of question is always difficult to give a definitive answer to because of so many variables. One such variable is the sensitivity of the individual celiac to small amounts of gluten cross contamination. An amount that causes a reaction in one celiac many not in another, or at least not be discernable which, of course, does not exactly equate to being "safe".

      I see that Cracker Barrel restaurants have a gluten free menu (not all locations, but one confirmed that they do). I was wondering if it is safe for my 5 year old son with celiac disease?
