My diet is sadly lacking in the carbohydrate department. I used to eat different types of bread but the gluten-free stuff available here is dire. Pasta, rice and potatoes make me feel bloated and uncomfortable even in small amounts and I

Fruits and veggies are carbs. Starchy ones like corn and peas especially. Have you tried corn tortillas?

I eat loads of fruit & veg but thought as they were in a food group of their own apart from carbs that they didn´t really count towards your carb intake. (Dumb huh?)

I´ve seen the corn tortillas but wasn´t quite sure if they were safe from cross contamination - I´ll give them a try though.

You don't need to eat a lot of starches and sugars. Fruits and veggies should give you everything you need.

If you are looking for grain-related carbs, then remember that oats, barley, wheat and rye, and kamut and spelt, only touch the grain surface.

amaranth, quinoa, rice, buckwheat, corn, potatoes, teff, and so forth are all grains, too.

Hi Debbie, I am on a healing diet of no grains, beans, corn, dairy except sour cream, cream cheese, yogurt, all regular not low or nonfat, and no nightshades. Oh yea, no soy. No sugar ( that one I mess up alot) - just had some semi-sweet : <_< I eat everything pretty much else. steaks, chicken, seafood, ground chuck, eggs, veggies. I eat salads alot and nuts. I usually eat at least 5 veggies a day and 2 or 3 fruits. I don't eat grapes now. they just don't taste right anymore. I try to vary the foods as much as possible. Used to eat kidney beans, potatoes and tomatoes alot but now I don't care for them much. As things appear to heal I will gradually add these I have avoided back in. I did have rice tonight because I went to PFChangs ( a local eatery) but that is the only times I eat rice. :)

      I would love some opinions. My Tis.Transglut.Ab IgA results were 29.9, with the normal range being 0-14.9.  My PCP said I have celiac disease, based on these results. I asked for a referral to GI, but they can't get me in for 6-9 months! I think I will start gluten-free now, and begin eating gluten again for at least 1 month prior to the biopsy. I know the GI biopsy is the gold standard, but is it reasonable for my PCP to diagnose celiac with just the blood results? I do not have classic celiac symptoms, but have struggled with some mystery peripheral neuropathy and joint pain for years now. Looking at symptoms, I have suspicion for family history of undiagnosed celiac (mom with lactose intolerance, aunts with sjogren's and non-hodgkin lymphoma). I am 39. I don't think I will be someone who can easily and quickly tell the difference in my body from not eating gluten (or getting glutened once gluten-free), so I feel that gluten-free trials will be tricky. If it's relevant, I surely consume smaller amounts of gluten and occasional bread, but my diet is vegan and fairly free of gluten (maybe why bloodwork numbers weren't higher?)

      Please do not consume this if you have celiac disease. One of the ingredients is barley.

      If gluten is the problem or the only problem I should say, your stools should have normalized by now. But many in the gluten intolerant/gluten sensitive population are also dairy intolerant. Try eliminating dairy from your diet and see if the issues improve.

      Thank you for your feedback.  I was not eating gluten free at time the lab was taken.  Have been gluten free now for a week. How long might it take for symptoms to go away. Only issue I have is loose stool. thanks again,,
