gluten-free Lite Blueberry Cheesecake (!)

i made this cheesecake a while ago and it was soooo good. i'm making it this weekend when i go home and realized i don't think i ever posted it on here. so if you like cheesecake, this is delish and it's a "lighter" version i guess. doesn't taste like it tho!!

Blueberry Cheesecake

1 1/2 C. ground almonds (i used a mixture of ground almonds & pecans (very tasty!) that i just ground in a blender/food processor)

1/4 C. lite margarine

3 Tbsp. sugar

Crust: Combine above ingredients. Press firmly into pan and bake for 10 minutes @ 375. Let cool.

16 oz. fat free cream cheese, SOFTENED

1/2 C sugar

1/2 tsp vanilla

2 whole egg whites

2/3 C blueberry pie filling

Filling: Combine cream cheese, sugar, vanilla & egg whites. Spread over crust. Spoon filling on top; cut through both layers to create the swirl effect. Bake 40 minutes in preheated 375 oven. Serve with remaining pie filling.

Nutrition Analysis (per serving)

180 calories

7g protiein

3g fat

This was excellent--just be sure that you spray the pan cause i had trouble with that last time. it calls for a 9'' pie plate, but there wasn't enough room so i think i'm jsut going to use a normal cheesecake (springform) pan this time.

Katrina,

I was about to create a post asking for a cheesecake recipe. Do you think I could make the cheesecake part with the same ingredients-minus the blueberries- and it would taste good? I already have the crust (my crappy Pamala's brownies from earlier in the week). :rolleyes: I just need a yummy filling. My hubby isn't crazy about blueberries, but I bet it would taste good too with cherry filling. What do you think?

i'm not sure how it would be with no fruit filling at all...but i'm sure it would still be great with other fillings. i was actually going to try strawberry this time. also, i've read other recipes (i'm a cheesecake fanatic) that swirl in other kinds of pie filling as well as pumpkin pie...which i don't know how well that one would work...

      @CeliacPsycho246, You might try cutting out dairy.  Some of us react to Casein, the protein in dairy, the same as to gluten.
