My name is Rachael Monk and I am a year 11 GCSE Food Technology student at Thomas Mills High School in Framlingham. As part of our coursework we have to design and develop a product suitable for somebody with a special dietary requirement. From previous research, I have decided to make a product for somebody with coeliacs disease. This shall be a dessert aimed at the teenage market and shall hopefully be an extension and improvement to products already available at the moment. I would be very grateful if you could please fill in and return this questionnaire to me, as it will be very useful to allow me to gauge an idea as to the type, size and cost of product that people would prefer.

1) 3 favorite desserts: hmmm.....brownies, choc. pudding.......most things chocolately, it appears. :D Oh, before limiting dairy, I used to periodically eat an entire tub of icing (the cream cheese kind of Duncan Heinz...sp?).....mmmm :P

2) Hmm...I don't really have something I dislike, but I guess I don't really understand the big deal about cake. I'm not a big fan of ice cream, but vanilla ice cream is good on hot brownies :D

3) I live with 3 people (a brother and parents)

4) Regularly eat with.....breakfast is often alone, lunch usually with 1-2 other people (during the summer, but when school is in session it's with 10 other kids at a table and 80 others in a lunchroom), and dinner with 2 or 3.

5) Home cooked because I don't trust restaurants, but also because I've never been a fan of restaurants.....I like my mom's cooking :)

6) I live in NYC and I don't know the exact conversions.......anyway, it would all depend on the quality of the product. One point to make, though: you can charge a lot more for gluten-free foods and it'll be "reasonable" to the consumer, simply because nearly all gluten-free foods not made by mainstream brands (such as Lays) are expensive. So you can raise your price -- maybe even double it from what you'd charge for the regular, gluten-containing food.

6. reasonable price for a dessert depends what it is, but I would say anywhere from $3-$5

(answering for my gluten-free son, who's already asleep..)

1. favorite desserts: (anything that isn't sticky, or messy)round shortbread, anything with m&ms, ice cream

2. least favorite: bar cookies, oreos (before gluten-free), cheesecake

3. live with : 3 others

4. eat with: usually 2 others or 20 other 5th graders

5. prefer: fast food, or convenience food

6. price: with gluten-free food, a great taste is priceless. We pay a fortune for digestive crackers at nearly $1.25 for two cookies.....

mmm...someone brought up cheesecake as a least favorite: that's probably my favorite dessert :D -- it's just I haven't had it since diagnosis. :(

Here are my 2cents....

1) fav desserts- anything chocolate: flourless chocolate cake, chocolate sorbet, chocolate cookies

2) least favorites: cheesecake, creme brulee, white/yellow cake (boring!)

3) live with one other person (husband)

4)usually eat with my husband only; I take my lunch into work and usually eat at my desk, but sometimes with friends; also the occcasional dinner party.

5) I cook homemade gluten-free-meals everynight unless we go out (no take out, fast food, etc..). When we do go out it is either to an upscale restaurant or for sushi (take my own soy sauce).

6) mmmmm how much would I pay? For an incredible gluten-free chocolate dessert in a restaurant perhaps as much as $10, but for a single serving of something in a package maybe a few $$ only.

1. New York Cheesecake, chunky choc. chip cookies, and pineapple upside down cake.

3. I live by myself for the next week until I move in with two roomates.

4. Ocassionaly I'll have friends over, but most often I eat alone.

6. 2-7 dollars depending on the portion. Most gluten-free deserts are so expensive that I usually end up making them myself.

based on the current exachange rate, I'd say definitely under 2 pounds (under 3.5 dollars) for something you'd buy at the store and take home - even at that price I'd be unlikely to buy it often at all.

Sometimes by myself other times with tons of people 10 or so if at the cafeteria

I would pay quite a bit for a delicious gluten-free dessert....but generally I'd say 3-4 bucks!

Strawberry Shortcake, Dreyers Ice Cream (Rocky Road and Strawberry are my favorite), the boxed mix cheese cake like Royal brand (I know it isn't like the real stuff, but it brings back childhood memories and I never had "real" cheesecake until I was a teenager and it is too rich). I haven't had the last two things since being gluten/dairy free. I have a fourth, not really a dessert, but a candy. Red licorice. Like Red Vines! I miss it terribly. WHy do they have to put wheat in licorice???

yellow cake, really rich chocolate desserts, jello desserts

3) How many other people do you live with?

4 others, husband and three kids.

Breakfast is eaten usually with 1 or two others and lunch and dinner with 3-4 people.

5) What meals do you prefer?

I usually cook all our meals, but used to enjoy eating out once or twice a week. Now I get sick almost every time I eat out!

6) How much do you feel is a reasonable price to pay (per portion) for a dessert?

Per portion, I would not really want to spend more than $2-$3, but it would depend on the dessert and if I had to cook it or if it came ready to eat. I'd certainly pay a bit more for convenience...

      After waisted time of new care team, yet again EXHAUSTED saw new gi today in Modesto, though all my ailments im not getting any kind of concern of me being celiac and sentive to just about everything since menopause. Dr daid why don't I go see you guys because my blood shows zero for celiac. I told him im glutenfree since 1994 by colonoscopy with biopsy positive celiac sprue by GI.Its RIDICULOUS when im bringing in material from this site of knowledge as well as the autoimmune institute,and  there's zero interest on their part.Medical IS causing me depression.Im view as a disability chaser, IM STILL RECOVERING from being a bus driver that im still healing and having more issues, now I may have multiple sclerosis or meningioma. Ive reached out, wrote letters, NOT feeling well. This is inhumane.

      I was taking medicine for sibo but it was not agreeing with my stomach at all.Was on gabapentin but it amps me up.I was taking in morning because it wasn't allowing me to sleep.This has always been an issue with medicine and me.Even going to dentist, the good shot that numbs you once, I can't take because it makes my heart beat fast and I  get the shakes.I have to take the crappy stuff and get injected always more than 4 times always.Its infuriating

      I showed one doctor I went to once because completely clueless of celiac disease and yes that one was connected to a well known hospital and she said oh thats just a bunch of people that think they are celiac coming together. I said um no they have doctors and knowledge behind what is being written. So bay area is Downplaying this site! SADLY

      If you successfully digest gluten with enzyme supplements so it won’t give you side effects, your challenge won’t be worthwhile because the digested fragments of gluten also won’t stimulate antibody production or cause intestinal damage.
