Em mentioned rice stuffing - am curious about this also

So easy! NO dingoes needed, nor standard poodles, although they were there just in case.........wine is optional whilst preparing -- it never hurts when I'm the one cookin':

3 cups cooked long-grain brown rice

1/2 cup cooked millet

1/4 cup butter

2 tbsp. beef or chicken gluten-free bovril

1/3 cup cranberries

1/3 cup chopped pine nuts

1/3 cup chopped pecans

1 big apple, chopped

Garlic, poultry seasoning and thyme to taste

pinch sugar

Mix all together in a casserole dish. Put in oven beside turkey for the last 45 min. of cooking.

Really good!

okay guys, here is Richard's recipe......um, he says it takes a "couple of hours" which means about half a day for me. :huh: Just look how hard it is, and notice the breaks for drinking and walking the dogs.... :lol:

"Ok, the recipe might look intimidating, but it is actally just a few easy steps.

1) make the quinoa (you add in some aromatics for flavor)

2) chop up a bunch of stuff

3) throw it all together & mix

4) bake it

I do all of the chopping ahead of time so all i need to do is dump and stir. I tell you what, I'll re-write the recipe and try to dingo-proof it.

Now don't be intimidated by it's lenght, I tried to spell everything out and make it as straighforward and easy as possible.

Quinoa Stuffing with Smoked Surry Sausage

Step 1: Get from store, or have on hand…

1 LARGE onion

2 cloves garlic

2 - 3 carrots

2 - 3 stalks celery

2 Granny Smith Apples

2 ½ sticks of butter

1 ½ c. uncooked quinoa

4 c. (32 oz.) turkey or chicken stock

1 Jenny-O or similar smoked turkey sausage (found in the kielbasa section)

¼ c. dried cranberries

About 2/3 loaf of Ener-G Tapioca bread.

¼ c. fresh thyme (or about 1 tsp. dried – more or less depending on how you like it)

1 bottle of your favorite wine (for YOU, not the recipe)

1 medium pot (2 qt.)

1 large pot (4 qt.)

9”x13” or similar sized baking dish

1 egg timer

2 inquisitive dingo-like creatures

Step 2: Chopping & preparation

Place the bread in a neat stack on your cutting board and slice through the whole thing, making cubes about ¾” square. Spread this out on a cookie sheet and leave out overnight (away from the dingos) or put it in the oven with low heat (as low as your oven goes) for about ½ hr to 45 mins. It just needs to get dried out and to harden up a bit – not much of a challenge for this bread!

Dice (cut into little cubes) the veggies, apples and sausage.

Your goal should be a “dice” that results in a “chunky” look – not too fine. The sausage is best quartered and then chunked (straighten it out on the cutting board and cut it lengthwise, and then lengthwise again) Set these aside.

Measure out 1 ½ c. quinoa and rinse. Just put it in a sieve and run it under cold water for 5 mins. Let it stand for a couple mins. for the H20 to drain.

Take the dingos for a walk. Have a glass of wine. RELAX.

Step 3: Let’s cook!

In a medium pot (2 quart) melt 2 TBsp butter over medium heat.

Add a generous handful of onions.

Stir until transluscent.

Add quinoa and toast for about a minute (stir it around)

Add about ½ c. turkey stock and simmer (low boil) until the quinoa absorbs the liquid. Keep adding turkey stock until the quinoa grain opens. (stirring occasionally) You can tell the quinoa has “popped” when you see a little white “tail” on each grain, and the grain itself will look the size/texture of couscous. Once cooked check the seasoning and adjust if necessary.

Preheat oven to 375 F

Pour second glass of wine. RELAX and enjoy.

In a large pot (4 qt) melt 3 TBsp butter over medium heat. “Sweat” (warm through – onions will be transluscent) veggies and sausage (NOT THE APPLES).

Season with a pinch of salt.

Add remaining butter and melt.

Add cranberries, apples, cooked quinoa, bread cubes, and thyme.

Add turkey stock a bit at a time and stir until moist, but not mushy. You probably won’t need all the stock to achieve this. (Save any excess to adjust moisture when re-heating.) Transfer everything to the baking dish and bake uncovered for about 45 minutes. Check on it occasionally (I set the timer to 35 minutes) to make sure it isn’t getting too brown on top.

Remove and serve or set aside to cool and reheat at 350F for about 20 minutes the day of your meal. You might want to add a little of the remaining stock if you will be reheating.

Walk the dingos and revel in your success!" :huh:

I used it with my son with Downs....became quite phluent, - infact my youngest used to sign before he spoke.

I had never heard of it until now.......had to google it. Looks like it's mostly a British thing, although I saw it mentioned that it can be adapted to other regional signs.

What little I viewed, some signs were similar to ASL.

We will be meeting the Oracle and Jacquie at the store, then going to a wonderful restaurant (on Sheppard, POeter?) that serves great gluten-free fare. POeter, I won't have access to a lovely hotel with free drinks as I did with Patti and Mark in Philly, but I would like to steal you guys away that evening to join us at the big WIA Hallowe'en Bash - - my brother's band is playing, drinks are cheap, and the water taxis run until 2 am!

Welcome back Laura!!

We had Jacquie's parents and sister over for Thanksgiving dinner tonight. They left about 20 minutes ago.

SO much food. Turkey, stuffing, cranberry sauce, mashed potatoes, mixed vegetables, garlic toast, wax beans, and pumpkin pie for dessert. Watch for a post about the pie in the recipe forum from WardGirl. She's upstairs on her computer now. I'm making a quick post before unloading round #1 from the dishwasher and reloading. That doesn't count the run earlier with the breakfast dishes and stuff from baking the pie.

The weather was terrific, so we had dinner on the back deck. It was just awesome.

Yep, it's really adaptable. . . . . . .she's added chocolate chip, maple syrup, blueberries. . . . I forgot to mention also that they can be done in the microwave - - about 6 minutes on medium for 12 tarts. Even FASTER!!!! :):)

My sister brought dessert to dinner, and I must tell you, it was unbelievable, more so because of its simplicity. It's gluten AND sugar phree (which I need). She broke three eggs into her cuisinart, then dumped in three bricks of cream cheese and sprinkled in a bit of sweetener (Splenda, probably) amd orange rind. She smashed it up until it was well mixed, put it into a sprayed muffin tin (I think she said it made 18), topped it with sliced strawberries in juice, and threw it in the 350 F oven for 12 minutes. OMG.... .. ..amazing.

Not low-cal, fer sure. . . ...

She's put cocoa in the mix for chocolate ones, pumpkin or apple sauce for fruity ones. I'm thinkin' peanut butter cheesecake tarts would be DROOOOOOLY. . ..

Had to return to these cheese cake-like tarts :lol: .....

Emily, if thou are dreming of creamy things :lol: , I came up with this dessert recipe with NO sugar, so it might be something that will work for you, it definitely aint calorie free however :P

You need 1 mango, heavy whipping cream, strawberries, or any other fruit you like (i.e. banana, pineapple, raspberries)

I whip the cream in one bowl and set aside. Then peel and cut up the mango and puree it (in a blender, food processor, or with one of those hand held mixers) and set that aside. Then slice the strawberries. If you want to add banana and pineapple, slice them too.

Then I get a tall parfait glass and layer everything. I start with a couple spoonfulls of whipped cream and spread it out on the bottom of the glass, then carefully spoon in a layer of pureed mango on top of that, then I drop in a layer of sliced strawberries (add the banana and pinapple after this if using) then repeat starting with another layer of cream. I keep layering until I get all the way to the top of the glass.

I think the mango is the key but you can vary any of the other fruits. I tell ya, mango tastes like candy it is so sweet, you'll never miss the sugar!

Landen is ok--no surgery tomorrow- he still has an ear infection, the dr's think he is becoming antibiotic resistant. So they sought the help of an infectious disease dr and he is getting his some cipro drops. They need to get those tubes in his ears, a few months back his ear drum ruptured....and if it happens again he could go deaf..... :(:(:(

I am just so disgusted right now....Listen to this!!! Tell me there are not some sick people on this planet.

This weekend Jen is moving to the new house, my mom is taking Landen for the weekend. Jen and I will drop him off Friday evening and then my mom and Tammy are making the 2hr trip to bring him back on Sunday. My mom had offered to help with the baby and we took her up on it. He would be in the way.

Today my mom calls me at work and says you need to call Jen and ask her if she minds if there is another baby in the house while Landen is here. I said well why? My mom gets excited and says "I got a baby girl"

So my mom got a new foster kid. Which is nice since she has been sans kids for a few days.

She is a 7 month old girl named Brooklynn- strawberry blonde hair and dark blue eyes....simply adorable as my mom said.

Now here is the disgusting part-- how she found her way to my moms....

The mom took her to the mall and ran into a friend she has not seen in years....ok years folks! The mother says here want a baby. The friend says yes. They exchange the kid. Later that day the woman calls the mother and says I need formula for the baby. The mother comes to the womans house and gives her formula. She then takes the womans dog and says here you keep the baby and I will keep the dog...... Later that evening the woman finds out this mom was not joking.....

Baby Brooklynn arrives at my moms at 3:00 am this morning......

WTF???? anyone else see something wrong with this picture??? All the childless couples in the world and here this lady is giving her kid up....

Had to leave me rant....off to work again!

All these creamy desserts look so good--can't do dairy at all, but if I could I'd be tryin' them all :P Even that set-aside bowl of whipped cream sounds good :lol: Just gimme a spoon :P

Or make a fruit and cake truffle (minus the dairy), layer some of your left over spice cake with sauteed apples (in brown sugar, butter, and cinnamon) or bananas and toasted almond or pecans.....

Well, Paddeigh and I were BOTH up during the night.......alas I was awakened repeatedly by Weezee and her Poo Crimes.....several URGENT trips outside during the night.........gads. <_< we were at my brother's briefly yesterday, she and cousin Mo were quite interested in sumfin in the back yard, Weez came in licking her chops.......gawd knows what she ate but - she was in pain............must watch her upcoming poops for gravel/miniature skulls/ wrappers..........whatever else...... :blink:

oh this sounds DELISH........must remember this when mangoes are two for a dollar here.............

So sorry about the Weeze and her painful poo crimes :( I hope nuthin sinister shows up in her poops :blink:

Well, it is that time of year, candy corn to sugar plums dancing in our heads!!!! And yes, you are right it's Trifle (not truffle)....... don't know where me brain was on that one :lol:

I have often make an upside down apple spice cake. I use Namaste Spice Cake mix, but you could do your own CYS spice cake recipe, and make up the batter as directed. For the apples I used 4 or 5 apples, cored peeled and sliced, and then sauteed until soft with cinnamon, brown sugar, butter, and a little water (this creates a nice carmel type sauce with the apples).

Then I spread out the sauteed apple mixture in the bottom of a larger buttered baking pan (I think the larger size is 11 x 15?), then pour your cake batter on top and bake as directed.

If you want to do a trifle, just cut up your cake in cubes, maybe seperate the sauteed apples form the sauce and layer cake and apples and then drizzle with the sauce and the almond milk custard you mentioned??

SOUNDS YUMMY!!!!

      Welcome to the forum, @Cathijean90! I went 13 years from the first laboratory evidence of celiac disease onset before I was diagnosed. But there were symptoms of celiac disease many years before that like a lot of gas. The first laboratory evidence was a rejected Red Cross blood donation because of elevated liver enzymes. They assume you have hepatitis if your liver enzymes are elevated. But I was checked for all varieties of hepatitis and that wasn't it. Liver enzymes continued to slowly creep up for another 13 years and my PCP tested me for a lot of stuff and it was all negative. He ran out of ideas. By that time, iron stores were dropping as was albumin and total protein. Finally, I took it upon myself to schedule an appointment with a GI doc and the first thing he did was test me for celiac disease. I was positive of course. After three months of gluten free eating the liver enzymes were back in normal range. That was back in about 1992. Your story and mine are more typical than not. I think the average time to diagnosis from the onset of symptoms and initial investigation into causes for symptom is about 10 years. Things are improving as there is more general awareness in the medical community about celiac disease than there used to be years ago. The risk of small bowel lymphoma in the celiac population is 4x that of the general population. That's the bad news is.  The good news is, it's still pretty rare as a whole. Yes, absolutely! You can expect substantial healing even after all these years if you begin to observe a strict gluten free diet. Take heart! But I have one question. What exactly did the paperwork from 15 years ago say about your having celiac disease? Was it a test result? Was it an official diagnosis? Can you share the specifics please? If you have any celiac blood antibody test results could you post them, along with the reference ranges for each test? Did you have an endoscopy/biopsy to confirm the blood test results?

      I’ve just learned that I had been diagnosed with celiac and didn’t even know. I found it on paperwork from 15 years ago. No idea how this was missed by every doctor I’ve seen after the fact. I’m sitting here in tears because I have really awful symptoms that have been pushed off for years onto other medical conditions. My teeth are now ruined from vomiting, I have horrible rashes on my hands, I’ve lost a lot of weight, I’m always in pain, I haven’t had a period in about 8-9 months. I’m so scared. I have children and I saw it can cause cancer, infertility, heart and liver problems😭 I’ve been in my room crying for the last 20minutes praying. This going untreated for so long has me feeling like I’m ruined and it’s going to take me away from my babies. I found this site googling and I don’t know really what has me posting this besides wanting to hear from others that went a long time with symptoms but still didn’t know to quit gluten. I’m quitting today, I won’t touch gluten ever again and I’m making an appointment somewhere to get checked for everything that could be damaged. Is this an automatic sentence for cancer and heart/liver damage after all these symptoms and years? Is there still a good chance that quitting gluten and being proactive from here on out that I’ll be okay? That I could still heal myself and possibly have more children? Has anyone had it left untreated for this amount of time and not had cancer, heart, fertility issues or liver problems that couldn’t be fixed? I’m sure I sound insane but my anxiety is through the roof. I don’t wanna die 😭 I don’t want something taking me from my babies. I’d gladly take anyone’s advice or hear your story of how long you had it before being diagnosed and if you’re still okay?

      Genetic testing cannot be used to diagnose celiac disease but it can be used to rule it out and also to establish the potential to develop celiac disease. About 40% of the general population has the genetic potential to develop celiac disease but only about 1% actually develop it. To develop celiac disease when you have the genetic potential also requires some kind of trigger to turn the latent genes "on", as it were. The trigger can be a lot of things and is the big mystery component of the celiac disease puzzle at this point in time with regard to the state of our knowledge.  Your IGA serum score would seem to indicate you are not IGA deficient and your tTG-IGA score looks to be in the normal range but in the future please include the reference ranges for negative vs. positive because different labs used different reference ranges. There is no industry standard.

      Since nearly 40% of the population have the genes for celiac disease, but only ~1% end up getting it, a genetic test will only tell you that it is possible that you could one day get celiac disease, it would not be able to tell whether you currently have it or not.

      so much to it.  the genetic testing will help if i don’t have it right? If theres no gene found then I definitely don’t have celiac?  I guess genetic testing, plus ruling out h.pylori, plus gluten challenge will be a good way to confirm yes or no for celiac.
