Good luck with your first gluten-free, df, sugar free Thanksgiving. You can still do a LOT even with those restrictions, trust me on that, speaking from personal experience.

Susie, we're gonna have Pumpkin Pie Cake . . . pumpking pie on the bottom (no crust) and a struessaly type topping made wif a cake mix (NOT made into cake/cakebatter). I had it last week at school (not gluten free) and thought it should be able to convert nicely wif a Pamela's cake mix instead of a regular cake mix.

This sounds very interesting, let us know how it turns out!

Thanksgiving bigger than Christmas??? Not sure about that . . . but I know I enjoy it more. Usually (not this year) get to see a lot of family without the pressure of getting all the "right" gifts.

I have to agree, not necessarily bigger than Christmas but maybe just as big??? I LOVE Thanksgiving, me favorite holiday cooking wise too, LOVE the food!!!! Christmas there is so much more pressure and extra work with the decorating and the gifts, like Janet said.

The girls will be gone to their beau's parents, but I get them for Christmas. I think I'll stuff the turkey with popcorn and sit back and watch.

My sis in law is doing thanksgiving. I might bring my own gravy, since they all prefer the flour thickened type, but she swears she's doing gluten free cornbread stuffing. They're pretty good about reading labels and not poisoning me. Last year I got pumpkin custard in my own personal custard cup. :rolleyes:

But they're doing it Friday (less stress, have Thursday to prepare) so I'm going to try the overnight, low temp turkey that someone else posted somewhere. I figure if it's good, I'll bring some on Friday, and if it's just OK, I can still freeze the meat for later meals.

I know for a PHACT there were these pebbled concrete garbage can holders all about, at a good height for handy butt-leanin' - ya know, not really sitting but close.

In my balance-impaired state, I leaned on several!

Guess I tried to lean on one ONE too many times. Heehee I can picture perfectly seeing what I thought was the base of one with downturned eye. So I leaned back.

Alas . ...lmao . ...'tweren't a garbage can holder at all!!!! In a flash I'm fully ass-in, legs & arms out, of a recently used, otherwise empty keg tub, soaking in ice & icewater, w/ blood flowing from a forearm cut by the impact on a NOT sharp at all tub edge!!!!!

And I laughed. And bled. And stayed. Ahhhhh college :D:)

Orrrrrrrrrrrr .. . .backstage at a Stones show, I axed Keef for a tums . .. . .who knew????? :wacko:

Thanksgiving prep is in full swing for me. My house smells so GOOD!!! I made the cranberry compote and baked the corn bread for the dressing last night and just baked the gingerbread cakes for the trifle.

Since 1st dating Teresa, their mom, in ~91 I've usually gone to HER mom's SJ home. But they all moved to NV a few yrs ago & betw the housebound yrs & Phx .....waaaaaaaa ....I have nowhere!!!

..also our 'stuffing' tends to be fairly simple (DEFINITELY simple compared to Richard's Dingo Keen-Wah concoction!)

We tend to have Sage and Onion (just breadcrumbs, sage, onion, bound together with an egg) or sausagemeat stuffing :P

King Richard's Dingo Quinoa stuffing/dressing was quite laboUr intensive, a lot of our stuffings/dressings are simple like what you describe (a form of bread cubed, onion, celery, some seasonings like sage, and chicken broth...maybe an egg, sometimes diced apples and sausage, etc.) but some you can go all out on like with wild rice and such.

      Thanks, @trents. That was what I was thinking of as well, but I'm a huge worrier and keep doubting if it was right thing to do so it seemed better to ask more experienced people. My diet won't be 100% gluten free unfortunately, but I'm thinking of using it as an opportunity to keep a food log and try to see what makes things worse.

      Her Dr gave her meds for the ulcers and recommend the genetic blood test to rule out celiac. Got those results and the hla-dq2 is positive the hla-dq8 is negative. So I’m not sure what this all means. Waiting to hear from the Dr again. She has been eating gluten and did say she got bad stomach pain again the other day but it hasn’t happened in a few weeks so I’m not sure if it’s from gluten or the ulcers.
