this was a recipe I had from before, but have altered it to match the gluten-free needs and it is absolutely awesome!!!!!

RED VELVET CAKE

2 1/2 C gluten-free flour mix ( Bob's Red Mill)

1 1/2 C sugar

1 C buttermilk

1 1/2 C Oil

2 eggs

1 t vanilla

1 t cocoa

1 t vinegar

2 ( 1 oz) bottles of red food coloring

1 t baking soda

Mix eggs, sugar, soda, cocoa, vinegar, and beat well. Add oil and flour alternatley until all has been added. Blend in buttermilk, add vanilla, and food coloroing. Pour into 2 round greased cake pans. Bake at 350 for 35 min.

Let cool. Place one of the cakes on a serving platter. Top with icing ( below) then add the second cake to make a 2nd layer. Top with icing.

ICING:

1 16 oz box of powdered sugar

1 8 oz pkg of cream cheese

1 C nuts ( optional)

1 stick of butter or oleo

1 t vanilla

Soften cream cheese and butter, add sugar, vanilla, nuts and mix. Spread over layered cake.

YOU WILL DIE, THIS IS SO INCREDIBLY GOOD.!!! :lol:

Sorry, couldn't resist!

Looks interesting, but I'd have to figure out how to make it dairy free, and happy with cooking simply stuff so far.

Sure the cooks here will be thankful! =)

      The critic acid and sodium citrate is corn unfortunately and they don’t have to label corn because it’s not part of the top 9 allergen and not mandatory 😭

      Yaya, from the JAMA study you refer to: "Taking 60,000 international units (IU) a day of vitamin D for several months has been shown to cause toxicity." No one on this forum is recommending  taking anywhere near that amount. We're talking about 5-10,000IU daily.
