Those of you within an hour of Princeton should check out DeLiteful Foods on Quakerbridge Road off of Route 1 - I have never seen so much gluten-free food in one place in the two years I've been looking. Lots of snacks, crackers, cookies, etc, and two whole freezers full of gluten-free baked goods and frozen dinners! They were getting a delivery from the Grainless Baker and it was like when the clouds part and the sun comes out and all the little birds start flying in unison and singing cheery songs - piles of gluten-free bread! I didn't see much pasta, but I see items I haven't seen in any other store around, even Whole Foods. In the freezer were pie crusts all ready to fill, cakes galore, breads, muffins, bagels, and rolls of all descriptions. Fish sticks, corn dogs, chicken strips that looked like KFC, ravioli, lasagna, brownies, cookies, pizzas - it was amazing. Prices were no worse than I've seen and better than some places. While I was there the Grainless Baker guy brought out a cake they had made and decorated for a celiac bride - they can order this kind of thing. Check them out. I think they had a website when they first opened, but I don't see it anymore. They also carry other stuff for various diets, but the gluten-free selection is particularly impressive. Did you happen to notice if they have rainbow cookies?

I used to get them from this place in Long Island but they're not there anymore, and although I don't live that close to here I'd be willing to take a drive an stock up if they had them.

I didn't notice rainbow cookies, and I'm not even sure what they are, but if you call the owner is very helpful and she'll know.

Wow.. thanks for that info. I will have to check it out next time I am out that way. We just moved from that area a year ago, but my b/f works in that area all the time!

For other people in central Jersey shore area, I just found out about a food store, in Spring Lake I think it is, its call Epicure. They make their own ravioli and pasta. I heard the prices are about what you would expect them to be. I am going to try going there after payday this week. I will find out more about where it is and let anyone who is interested know about it.

      I was checking aip diet and discovered that aspirin is prohibited. I definitely can understand why that is but my cardio dr says to stay on it. So aip is done before I even get started.

      You are more than welcome.  I think there are quite a lot of different types out there, my own nutritionist was a v. highly qualified scientist as well, but at least you can see what qualifications they are which seem to be quite well stated.  I wish you all well on your son's coeliac journey.       Thanks for the info @knitty kitty! I really appreciate when people recommend things for me to try, it helps a lot! I will run this stuff by my doctor at my next appointment next week. It is also good to know I am not alone with the continued reactions though. It has been pretty difficult for me and has taken a bit of a toll on my mental health. Trying so hard and dedicating so much time to resolve this issue just to feel like I am running around in circles. But i'm glad to get some insight from people who have experienced the same thing. My family and friends just keep saying i'm crazy andthat i'm a hypochondriac. But the only thing that has gotten me this far in my journey and this close to figuring it out is not listening to them and believing in myself.

      Thank you for responding.  Yes I am.  Infact, sometimes I think it's getting worse. How do you deal with it? I do the best I can but it has taken away my independence.
